நோய்கள் தீர்க்கும் காய்கள், கனிகள்!

''இன்னிக்கு... பாவக்கா பொரியலா?... வாழைத்தண்டுக் கூட்டா...? அய்யே... எனக்கு சாப்பாடே வேண்டாம்...'' என்று முகம் சுளிப்பது இன்றைய தலைமுறைக்கு வழக்கமாகிவிட்டது. இனிப்பு, கசப்பு, துவர்ப்பு, புளிப்பு, என வித்தியாசமான சுவைகளையும், சத்துக்களையும் அள்ளித்தருகிற அனைத்துக் காய்கறிகளையும் குழந்தையிலேயே பழக்க மறந்துவிட்டதன் விளைவுதான், இந்த சுளிப்பு.
வாய்க்கு ருசியான பதார்த்தம் என்றாலே, குழந்தைகளுக்கு உருளைக்கிழங்கு மட்டும்தான் ஞாபகத்தில் இருக்கும். அந்த அளவுக்கு, 'செய்வது சுலபம்’ என்பதால், குக்கரில் சாதத்துடன் உருளைக்கிழங்கை வேகவைத்து, காரம் போட்டுச் செய்து கொடுத்துவிடுகின்றனர். இப்படி, தினமும் ஒரே காய்கறியை மட்டும் உணவில் சேர்ப்பதால், உடலுக்குத் தேவையான சத்துக்கள் கிடைக்காது.

காய்கறிகள்
பீன்ஸ்
சத்துக்கள்:  வைட்டமின் சி, ஃபோலிக் அமிலம் மற்றும் நார்ச் சத்து அதிகம் உள்ளன. பொட்டாசியம், துத்தநாகம் ஓரளவும், மிகக்குறைந்த அளவு கலோரியும் இருக்கின்றன.
பலன்கள்: ரத்தவிருத்திக்கு நல்லது. கர்ப்பிணிகள் பொரியலாகச் செய்து சாப்பிடலாம். மிதமாக அரைவேக்காட்டில் வேகவைத்தால் போதும். மலச்சிக்கல் பிரச்னை தீரும். ரத்தக் கொதிப்பு, நீரிழிவு நோயாளிகளுக்கு நல்லது. சிறுநீரகக்கல் அடைப்பு இருப்பவர்கள் சேர்க்க வேண்டாம்.

பீர்க்கங்காய்
சத்துக்கள்: நீர்ச் சத்தும், தாது உப்புகளும் உள்ளன. கலோரி அளவும் குறைவு. மிதமான அளவு புரதம், நார்ச் சத்து உள்ளன.    
பலன்கள்: உடலுக்கு நல்ல குளிர்ச்சியைத் தரும். வெயில் காலத்துக்கு ஏற்றது. மலச்சிக்கல் வராது.  சிறுநீரகக் கோளாறு இருப்பவர்கள், சர்க்கரை நோயாளிகளுக்கு மிகவும் நல்லது. இந்தக் காயை லேசாக வேகவைத்து, வறுத்த உளுத்தம்பருப்பு, காய்ந்த மிளகாய், சிறிது புளி, உப்பு சேர்த்துத் தொக்காகச் செய்து சாப்பிடலாம்.    

கேரட்
சத்துக்கள்:  பீட்டாகரோட்டின், நார்ச் சத்து, பாஸ்பரஸ் அதிகம் உள்ளன. பொட்டாசியம், ஃபோலிக் அமிலம், கொலின், கால்சியம், கார்போஹைட்ரேட், வைட்டமின் சி சத்துக்கள் ஓரளவும், இரும்புச் சத்து மிகக் குறைந்த அளவும் இருக்கின்றன.
பலன்கள்: கண், தோல், எலும்பு உறுதிக்கும், ரத்தவிருத்திக்கும் நல்லது. கர்ப்பிணிகள், தாய்மார்கள், குழந்தைகள் என அனைவரும் சாப்பிடலாம். சர்க்கரை நோயாளிகள் அளவோடு எடுத்துக்கொள்ள வேண்டும். துருவி, வெதுவெதுப்பான நீரில் போட்டு எடுத்தும் சாப்பிடலாம். கண் பார்வைக்கு மிகவும் நல்லது. உடல் பருமனாகாமல் காக்கும். கேரட் சாறுடன் பத்து மிளகு சேர்த்துச் சாப்பிட்டுவர, உடல் கழிவுகள் வெளியேறும்.

வெள்ளரிக்காய்
சத்துக்கள்: நீர்ச் சத்து நிறைந்தது. மிகக் குறைந்த அளவு கலோரி, ஓரளவு பாஸ்பரஸ், ஃபோலிக் அமிலம் இருக்கின்றன. சிறிதளவு கொழுப்பு, தாது உப்புக்கள், நார்ச் சத்து உள்ளன.  
பலன்கள்:  தாகத்தைத் தணிக்கும். சருமப் பிரச்னை நீங்கும். குளுமை தரும்.
பிஞ்சு வெள்ளரிக்காய் வெயில் காலத்தில் கிடைக்கக்கூடியது. அப்படியே சாப்பிடலாம். தடிமனான வெள்ளரியை சாலட், கூட்டு செய்து சாப்பிடலாம். சிறுநீர் பிரியாமல் அவதிப்படுபவர்கள், சர்க்கரை நோயாளிகள் வெள்ளரிக்காய், வெள்ளரி விதை சாப்பிட உடனடி நிவாரணம் கிடைக்கும்.

வெண்டைக்காய்
சத்துக்கள்: அதிக அளவு ஃபோலிக் அமிலம், வைட்டமின் சி சத்துக்களும், ஓரளவு புரதமும், குறைந்த அளவு பீட்டாகரோட்டின் மாவுச் சத்தும், பொட்டாசியமும் இருக்கின்றன.
பலன்கள்:  உடல் மற்றும் மூளை செயல்பாட்டுக்கும், ரத்த விருத்திக்கும் மிகவும் நல்லது. எல்லோருக்கும் ஏற்றது. அரைவேக்காட்டில் வேகவைத்துச் சாப்பிடலாம்.

பாகற்காய்
சத்துக்கள்: 'பாலிபெப்டு டைட்’ எனும் இன்சுலின் சுரப்பை அதிகப்படுத்தும் வேதிப் பொருள் நிறைந்துள்ளது. நார்ச் சத்து நிறைந்தது. குறைந்த அளவு பாஸ்பரஸ், புரதம், இரும்பு, கலோரி கால்சியம் உள்ளன.  
பலன்கள்: உடலில் நோய் எதிர்ப்பு சக்தி அதிகரிக்கும். தொற்று நோய்கள் வராது.  சர்க்கரை நோயாளிகளுக்கு மிகவும் நல்லது. வயிற்றுப்பூச்சித் தொல்லை நீங்கும். எல்லோருக்கும் ஏற்றது. தேங்காய் சேர்த்துக் கூட்டாகச் செய்து சாப்பிடலாம்.
வேறு அலோபதி மருந்துகள் சாப்பிடும்போது, இதனைச் சாப்பிடக்கூடாது. மருந்தின் தன்மையை முறியடித்துவிடும். மலச்சிக்கல் வராது. அடிக்கடி சாப்பிடுவதைத் தவிர்க்க வேண்டும்.

வாழைத்தண்டு
சத்துக்கள்: நார்ச் சத்து, நீர்ச் சத்து அதிகம் இருக்கின்றன. ஓரளவு வைட்டமின் சி மற்றும் பாஸ்பரஸும், குறைந்த அளவு கலோரியும் உள்ளன.
பலன்கள்: அதிக எடை உள்ளவர்கள், தினமும் எடுத்துக்கொள்ளலாம். நீர்ச் சத்து அதிகம் இருப்பதால், சிறுநீரை நன்றாக வெளியேற்றும். சாப்பிட்டவுடன், நிறையத் தண்ணீர் குடிக்க வேண்டும்.  

புடலங்காய்
சத்துக்கள்: நீர்ச் சத்து நிறைந்தது. குறைந்த அளவு கலோரி, ஓரளவு இரும்புச் சத்து, நார்ச் சத்து, ஃபோலிக் ஆசிட் உள்ளன.
பலன்கள்: சர்க்கரை நோயாளி, இதய நோயாளி, ரத்த அழுத்தப் பிரச்னை இருப்பவர்களுக்கு மிகவும் நல்லது. மூலநோய் பிரச்னை இருப்பவர்கள், பாசிப்பருப்பு சேர்த்துக் கூட்டுசெய்து சாப்பிடலாம். சிறுநீரகக்கல் இருப்பவர்கள் சாப்பிட வேண்டாம். மலச்சிக்கலைத் தவிர்க்கும்.

கத்திரிக்காய்
சத்துக்கள்: ஃபோலிக் அமிலம், கொலின், நார்ச் சத்து மற்றும் தாது உப்புக்கள் மிக அதிக அளவும் கலோரி, பாஸ்பரஸ், இரும்பு மிகக்குறைந்த அளவும் உள்ளன.  
பலன்கள்: உடல் இயக்கம் சீராகும். வாய்ப்புண் சரியாகும். நரம்புகளுக்கு வலுவூட்டும். சளி, இருமலைக் குறைக்கும்.
குழம்பில் போட்டும், பொரியல் செய்தும் சாப்பிடலாம். ஆஸ்துமா நோயாளிகள் கத்திரிக்காயை மிளகு, சீரகம், பூண்டு சேர்த்துச் சமைத்துச் சாப்பிட, உடல் சூட்டைத் தக்கவைக்கும். சிலருக்கு அலர்ஜியைத் தரலாம். சரும நோயாளிகள், புண், ரணம் உள்ளவர்கள் சாப்பிடக் கூடாது. அரிப்பைத் தூண்டும்.

பூசணிக்காய்
சத்துக்கள்: வைட்டமின் ஏ, பி, சி, ஈ, புரதம், தாது உப்புக்கள் உள்ளன. கலோரி குறைந்த அளவு இருக்கிறது.  
பலன்கள்: மூலச்சூடு நோய் உள்ளவர்களுக்கு மிகமிக நல்லது. நரம்புகளுக்கு வலுவூட்டும். வாய்ப்புண், வயிற்றுப்புண்களை ஆற்றும். உடல் எடையைக் கூட்டும். வெண்பூசணியே நல்லது. உடல் மெலிந்தவர்கள் பூசணி சாலட், தேங்காய் சேர்த்துப் பொரியல் செய்து சாப்பிட உடல் தேறும். உடல் பருமன் உள்ளவர்களும் சாப்பிடலாம்.  

பரங்கிக்காய்
சத்துக்கள்: ஓரளவு பீட்டா கரோட்டின், பொட்டாசியம், மக்னீசியம், ஃபோலிக் அமிலம் இருக்கின்றன. கால்சியம், இரும்பு குறைவு. நீர்ச் சத்து, நார்ச் சத்துக்கள் ஓரளவு இருக்கின்றன.
பலன்கள்: எல்லோரும் சாப்பிடலாம். சிறிதளவு தித்திப்பு இருப்பதால், சர்க்கரை நோயாளிகள் குறைந்த அளவில் சேர்த்துக்கொள்ள வேண்டும்.  

அவரைக்காய்
சத்துக்கள்: நிறைய நார்ச் சத்தும், ஓரளவு சுண்ணாம்புச் சத்தும், புரதமும், குறைந்த அளவு பொட்டாஷியம் மற்றும் கலோரியும் இருக்கின்றன.  
பலன்கள்: மலச்சிக்கலைப் போக்கும். சர்க்கரை நோய், செரிமானப் பிரச்னை உள்ளவர்கள் கூட்டு செய்து சாதத்துடன் பிசைந்து சாப்பிடலாம். வளரும் குழந்தைகளுக்குத் தொடர்ந்து கொடுத்து வர, உடல் வளர்ச்சிக்குத் துணைபுரியும். இரவில் சாப்பிடுவதைத் தவிர்க்க வேண்டும்.

  
பீட்ரூட்
சத்துக்கள்: குளுகோஸ், கார்போஹைட்ரேட், ஃபோலிக் ஆசிட், ரிபோஃப்ளேவின், தையமின், நியாசின், நார்ச் சத்தும் இதில் உள்ளன.  
பலன்கள்: நல்ல எனர்ஜியைக் கொடுக்கும்.  தொடர்ந்து 45 நாட்கள் மிளகு சேர்த்து பீட்ரூட் சூப் சாப்பிட்டு வர, ரத்தசோகை விலகும். கர்ப்பிணிகளுக்கு மிகவும் நல்லது. வளரும் குழந்தைகள் அடிக்கடி சாப்பிடக் கொடுக்கலாம். சர்க்கரை நோயாளிகள் சாப்பிடக்கூடாது.

முட்டைக்கோஸ்
சத்துக்கள்: வைட்டமின் சி அதிகம் உள்ளன. சோடியம், இரும்பு, பாஸ்பரஸ், கால்சியம், வைட்டமின் ஏ, இ சத்துக்கள் உள்ளன.  
பலன்கள்: சர்க்கரை நோயாளிகளுக்கு மிகவும் நல்லது. ஆண்மைசக்தியை ஊக்குவிக்கும். மலச்சிக்கலைப் போக்கும். இளமையைத் தக்கவைக்கும். கண்ணுக்கு மிகவும் நல்லது.  கேன்சர் வராமல் காக்கும்.

நெல்லிக்காய்
சத்துக்கள்: வைட்டமின் சி, செல்லுலோஸ், கார்போஹைட்ரேட், இரும்பு, கால்சியம், பாஸ்பரஸ், நிகோடினிக் ஆசிட் இதில் உள்ளன.  
பலன்கள்: ரத்த அழுத்தப் பிரச்னை உள்ளவர்களுக்கும் சர்க்கரை நோயாளிகளுக்கும் மிகவும் நல்லது. வாய் கசப்பைப் போக்கும். இதயம், நுரையீரலை வலுவூட்டும். இளமையைத் தக்கவைக்கும். முடிவளர்ச்சிக்கும், தோல் பளபளப்புக்கும், கண் பார்வை கூர்மைக்கும் நெல்லிக்காய் அருமருந்து. தினமும் ஒரு நெல்லிக்காயை, தேனில் ஊறவைத்துச் சாப்பிடுவதால் ஒட்டுமொத்த உடல் ஆரோக்கியத்துக்கும் நல்லது.

மாம்பழம்

பலன்கள்: மலச்சிக்கலைப் போக்கும். கண்களுக்கு மிகவும் நல்லது. ரத்தம் அதிகரித்து, உடலுக்கு நல்ல பலத்தைக்கொடுக்கும். நோய் எதிர்ப்பு சக்தியை அளிக்கும். சர்க்கரை நோயாளிகள், உணவுக்கு இடைப்பட்ட நேரத்தில் நாள் ஒன்றுக்கு 2 துண்டுகள் மட்டுமே சாப்பிடலாம்.

பலன்கள்: மலச்சிக்கலைப் போக்கி, உடலுக்கு நல்ல தெம்பைக்கொடுக்கும். மாவுச் சத்து உடலுக்குத் தேவை என்பவர்கள், தினமும் மூன்று சுளைகள் சாப்பிடலாம். சர்க்கரை நோயாளிகள் தவிர்க்க வேண்டும்.

வாழைப்பழம்
சத்துக்கள்: சர்க்கரை, மாவுச் சத்து அதிகமாகவும், பீட்டா கரோட்டின், வைட்டமின் சி, இரும்பு, கால்சியம், புரதம், நார்ச் சத்து மிகவும் குறைவாகவும் உள்ளன.
பலன்கள்: இதய நோயாளிகளுக்கு மிகவும் நல்லது. அதிக எடை இருப்பவர்கள் தவிர்க்கவும். எடை குறைவாக இருப்பவர்கள், ஒரு வேளைக்கு ஒரு பழம் என்று தினமும் இரண்டு வேளை சாப்பிடலாம். நல்ல ஜீரண சக்தியைக் கொடுக்கும். மலச்சிக்கல், மூலநோயை விரட்டும். கண்பார்வை குறைய ஆரம்பித்தால், தினசரி செவ்வாழைப்பழம் வேளைக்கு ஒன்று வீதம் 21 நாட்களுக்குக் கொடுத்துவந்தால் பார்வை தெளிவடைய ஆரம்பிக்கும்.

ஆரஞ்சுப்பழம்
சத்துக்கள்: வைட்டமின்- ஏ, சுண்ணாம்புச் சத்து அதிகமாகவும், வைட்டமின் சி, பி, பி2 ஓரளவும் உள்ளன.
பலன்கள்: நாள்பட்ட நோயால் பாதித்துத் தேறியவர்களுக்கு இது நல்ல டானிக்.
இரவில் தூக்கம் இல்லாமல் தவிப்பவர்கள், அரை டம்ளர் ஆரஞ்சுப் பழச் சாறுடன் சிறிது தேன் சேர்த்துச் சாப்பிடலாம். நன்றாகத் தூக்கம் வரும்.

கிருணிப்பழம்
சத்துக்கள்: நீர்ச் சத்து நிறைந்த பழம். சோடியம், பொட்டாசியம் அதிக அளவு இருக்கின்றன. வைட்டமின் பி காம்ப்ளெக்ஸ், வைட்டமின் சி ஓரளவு இருக்கின்றன.  
பலன்கள்: வயிற்றுப் புண்ணுக்கு நல்லது. சோர்வை நீக்கி சக்தியைக் கொடுக்கும்.  உடலுக்கு நல்ல குளிர்ச்சியைத் தரும். சிறுநீரகப் பிரச்னை உள்ளவர்கள் தவிர்க்க வேண்டும்.

சாத்துக்குடி
சத்துக்கள்: வைட்டமின் சி, பொட்டாசியம் அதிகம் இருக்கின்றன. ஓரளவு சர்க்கரை, மாவுச் சத்து இருக்கின்றன. குறைந்த அளவில் இரும்பு, புரதம், பாஸ்பரஸ், கால்சியம் இருக்கின்றன.  
பலன்கள்: நோயாளிகள் மீண்டுவருவதற்கும், விளையாட்டு வீரர்கள் தசை வலுவடைவதற்கும் மிகவும் நல்லது. சிறுநீரகப் பாதிப்பு இருப்பவர்கள் தவிர்க்க வேண்டும்.

மாதுளை
சத்துக்கள்: நார்ச் சத்து, நீர்ச் சத்து, மாவுச் சத்து இதில் மிகவும் அதிகம். ஓரளவு  வைட்டமின் சி, ஆக்சாலிக் ஆசிட், பொட்டாசியம், மக்னீசியம், கந்தகம் இருக்கின்றன.    
பலன்கள்: உடலில் உள்ள நச்சுக்களை வெளியேற்றும். இதய நோயாளிகளுக்கு மிகவும் நல்லது. நா வறட்சியைப் போக்கி, சோர்வை நீக்கும். கர்ப்பிணிகள் சாப்பிடலாம். வறட்டு இருமல் போகும். பித்தம் தொடர்பான பிரச்னை நீங்கும். மலச்சிக்கலால் அவதிப்படுபவர்கள் தொடர்ந்து மூன்று நாட்கள் சாப்பிட்டால், குணம் பெறலாம். சிறுநீரக நோயாளிகள் தவிர்ப்பது நல்லது.

திராட்சை
சத்துக்கள்: கால்சியம், பாஸ்பரஸ், இரும்புச் சத்து, சர்க்கரை இதில் மிக அதிகமாக உள்ளன. ஓரளவு நார்ச் சத்தும், வைட்டமின் பி1, பொட்டாஷியம், வைட்டமின் சி குறைந்த அளவே இருக்கின்றன.  
பலன்கள்: உடலுக்கு ஆற்றலை அளிக்கக்கூடியது. மாத்திரை, மருந்துகளை உட்கொள்பவர்கள், இதைத் தவிர்க்க வேண்டும். ஏனெனில் அமிலத்தன்மை அதிகம் இருக்கிறது. அசிடிட்டி, வாயுப் பிரச்னை, நெஞ்செரிச்சல், அல்சர் இருப்பவர்கள் சாப்பிடக் கூடாது. திராட்சையை, கொட்டையுடன் சாப்பிட நார்ச் சத்து உடலில் சேரும். நன்றாகப் பசி எடுக்காமல் வயிறு மந்தநிலையில் காணப்படுபவர்கள், கருப்புத் திராட்சை ஜூஸில் சிறிது சர்க்கரை சேர்த்து அருந்திவந்தால், நன்றாகப் பசி எடுக்கும், மந்தநிலை போகும்.

 
அன்னாசிப்பழம்
சத்துக்கள்:  நார்ச் சத்தும் சர்க்கரையின் அளவும் அதிகம் இருக்கின்றன. கால்சியம், பாஸ்பரஸ், பொட்டாஷியம் மிகக் குறைந்த அளவும் இரும்பு, வைட்டமின் சி மிதமான அளவும் இருக்கின்றன.
பலன்கள்: உடலுக்கு சக்தியை உடனடியாகக் கொடுக்கும். மலச்சிக்கல் வராது. ஜீரண சக்தி அதிகரிக்கும். சிறுநீரகப் பிரச்னை உள்ளவர்கள் மிதமான அளவு எடுத்துக்கொள்ளலாம். உயிர்ச் சத்து அதிக அளவில் இருப்பதால், உடலில் ரத்தத்தை விருத்திசெய்து, உடலுக்குப் பலத்தைத் தரும். பெண்களுக்கு வெள்ளைப்படுதல் இருந்தால், குணமாகும். சர்க்கரை நோயாளிகள் தவிர்ப்பது நல்லது.

கொய்யாப்பழம்
சத்துக்கள்: நார்ச் சத்து, வைட்டமின் சி அதிகம் உள்ளன. புரதம், பாஸ்பரஸ், இரும்பு, கால்சியம் மிகக் குறைந்த அளவும் ஓரளவு பொட்டாஷியம், சோடியம், மக்னீசியம் மற்றும் சர்க்கரையும் இருக்கின்றன.  
பலன்கள்: பாலூட்டும் தாய்மார்கள் அதிகம் எடுத்துக்கொள்ளலாம். சர்க்கரை நோயாளிகள் மிகக்குறைந்த அளவில் துண்டுகளாக நறுக்கிச் சாப்பிடுவது நல்லது. நெல்லிக்காய் சாப்பிட முடியாதவர்கள் இதைச் செங்காயாகச் சாப்பிடலாம். வளரும் குழந்தைகளுக்கு எலும்புகளை உறுதியாக்கி, பலத்தைக் கொடுக்கும். மலச்சிக்கல் பிரச்னை தீரும். சொறி, சிரங்கு, ரத்தசோகை இருப்பவர்கள் கொய்யாப்பழம் சாப்பிட்டு வர, சீக்கிரத்திலேயே குணமாகும். 


பப்பாளி
சத்துக்கள்:  சர்க்கரை பீட்டா கரோட்டின், வைட்டமின் சி மற்றும் நார்ச் சத்து அதிகம் இருக்கின்றன.

சத்துக்கள்: மாவுச் சத்து, பொட்டாசியம், மக்னீசியம் மிக அதிகம். ஓரளவு இரும்பு, பீட்டா கரோட்டினும் மிகக் குறைந்த அளவு கால்சியம், வைட்டமின் சி, பாஸ்பரஸ், யூரிக் ஆசிட் சத்துக்கள் இதில் இருக்கின்றன.
பலன்கள்: ரத்த ஓட்டத்துக்கு மிகவும் நல்லது. சிறுநீரகப் பாதிப்பு உள்ளவர்கள் ஓரளவு தவிர்ப்பது நல்லது. சர்க்கரை நோயாளிகள் முற்றிலும் தவிர்க்க வேண்டும்.

புதினா
சத்துக்கள்: பீட்டாகரோட்டின், ரிபோஃப்ளேவின், ஃபோலிக் அமிலம், சுண்ணாம்புச் சத்து, கால்சியம், இரும்பு, வைட்டமின் ஏ, வைட்டமின் சி, தையமின் இதில் நிறைந்துள்ளன. ஓரளவு மக்னீசியம், தாமிரம், துத்தநாகம், மாங்கனீஷ், குரோமியம் இருக்கின்றன.

வெந்தயக்கீரை

எப்படிச் சாப்பிட வேண்டும்?
காய்கறிகள்
தோலை கொஞ்சமாக சீவ வேண்டும்.
காய்கறிகளைப் பொடியாக நறுக்கிவிட்டு, பிறகு கழுவுவது கூடாது.  இதனால், அதில் உள்ள பி.காம்ப்ளக்ஸ் வைட்டமின் சத்துக்கள் வெளியேறிவிடும். நறுக்குவதற்கு முன்பு நன்றாகக் கழுவிவிட வேண்டும்.  
 தண்ணீரைக் கொதிக்கவைத்து, அதில் காய்கறிகளைப் போட்டு அடுப்பை 'சிம்’மில் வைத்து மூடிபோட்டு சில நொடிகள் வேகவிட்டு, பிறகு அணைத்துவிட வேண்டும். மூடியைப்போட்டுவைத்திருந்தால், அந்தச் சூட்டிலேயே வெந்துவிடும்.  மூடாமல் வேகவிடும்போது சத்துக்கள் ஆவியாக வெளியேறிவிடும்.
 வேகவைத்தால், சிறிது நிறம் மாறத்தான் செய்யும்.  காய்கறிகளில் நிறம் மாறக் கூடாது என்று ஆப்பச் சோடா கலப்பது, வயிற்றைப் பாதிக்கும்.
பச்சைக் காய்கறிகளை குக்கரில்வைத்து வேகவைப்பது தவறு. கிழங்கு வகைகளை மட்டும் குக்கரில்வைத்து வேகவைக்கலாம்.  
 தினமும் 2 அல்லது 3 வகைக் காய்கறிகளை, சாதம் அளவுக்குச் சேர்த்துக்கொள்ள வேண்டும். சாலடாகவும் சாப்பிடலாம். அதாவது ஒருவருக்கு நாள் ஒன்றுக்கு 300 முதல் 400 கிராம் அளவுக்கு காய்கறிகள் தேவை.    
'கேரட்டைப் பச்சையாகச் சாப்பிடக் கூடாது.  அதில் கண்ணுக்குத் தெரியாத பூச்சி, புழுக்கள் இருக்கிறது.  அப்படி சாப்பிட்டால், வைட்டமின் பி12 குறைபாடு வரும். இதனால், நரம்புத்தளர்ச்சி, ரத்தசோகை வரும்’ என்று தற்போதைய உணவு ஆராய்ச்சியில் நிருபிக்கப்பட்டுள்ளது. பச்சையாக சாப்பிடுவதைத் தவிர்க்கவும்.  

பழங்கள்:
 சிவப்பு ஆப்பிள், மாதுளை, தக்காளி, வெங்காயம், தர்ப்பூசணி, செர்ரி, ஸ்ட்ராபெர்ரி, பீட்ரூட் போன்றவை, சிவப்பு நிறக் காய்கறிப் பழங்கள். வாழை, பலா, மாம்பழம் போன்றவை, மஞ்சள் நிறப் பழங்கள், பேரிக்காய், கொய்யாப்பழம், சாத்துக்குடி இவை, பச்சை நிறப் பழங்கள். சப்போட்டா, விளாம்பழம், திராட்சை, நாவல்பழம் போன்றவை இதர நிறப் பழங்கள். இப்படி நிறங்களுக்கு ஏற்ப, ஒவ்வொரு பழத்திலும் சத்துக்கள் வித்தியாசப்படுகின்றன.  
 உணவு சாப்பிட்டவுடன் பழங்களைச் சாப்பிடக் கூடாது. சாப்பிட்ட 2 மணி நேரத்துக்குப் பிறகு சாப்பிடுவது நல்லது.
 ஒரே மாதிரியான பழங்களைச் சாப்பிடாமல், தினமும் மூன்று நிறப் பழங்களைச் சாப்பிடுவதன் மூலம், உடலுக்குத் தேவையான சரிவிகித சத்தைப் பெற முடியும்.
 வெவ்வேறு நிறப் பழங்கள் சாப்பிடமுடியாமல் போனால், இனிப்பு, புளிப்பு என இரண்டு வகைப் பழங்களைச் சாப்பிடலாம்.  வயிற்றில் கேன்சர் வராது.  
ரொம்பவும் காயையும், அதிகம் பழுத்ததையும் தவிர்க்கவும்.  கண்ணுக்குத் தெரியாத பூச்சிகள் இருக்கும்.
 நாக்கில் அமிலம் சுரக்கும்போது, பழங்களைக் கடித்து மென்று சாப்பிட்டால்,  ஜீரணிக்க நல்ல சக்தி கிடைக்கும்.  

கீரைகள்
 கீரை வாங்கியதும் பிரித்து, பெரிய பக்கெட்டில் போட்டு நன்றாகச் சுத்தம் செய்து பூச்சி, மண்களை அகற்ற வேண்டும்.  
 கீரையைச் சுத்தமாகக் கழுவிய பிறகு, நறுக்கிவிட்டுத் திரும்பவும் கழுவத் தேவை இல்லை. இதனால் பி காம்ப்ளெக்ஸ் வைட்டமின், தாது உப்புக்கள் போய்விடும்.  
 ஒரு பாத்திரத்தில் தண்ணீர்வைத்துக் கொதித்ததும், அதில் நறுக்கிய கீரையைப் போட்டு வேகவிடுங்கள்.
 மஞ்சள்தூள், உப்பு போட்டு வேகும்போது மூடிபோட்டு அடுப்பை 'சிம்’மில் வைக்க வேண்டும்.  அரைவேக்காடு பரவாயில்லை.  மழைக் காலத்தில் மட்டும் நன்றாக வேகவைக்க வேண்டும்.
 ஆறியதும், எலுமிச்சைச் சாறு பிழிந்துவிட வேண்டும். அப்போதுதான் கீரையில் உள்ள வைட்டமின் சி சத்து உடலில் கிரகிக்கும்.  ஒட்டுமொத்தச் சத்துக்களும் உடலில் சேரும்.

வீட்டிலேயே வளர்க்கலாம்!

 மணத்தக்காளிக் கீரை:
இந்தக் கீரைக்கு நன்றாக வெயில் தேவை.  சூரிய ஒளி படும் இடத்தில் வளர்க்கலாம்.  இதை வளர்க்க செம்மண்ணும் மணலும் கலந்து, கொஞ்சம் சாண உரமும் கலந்து மண் தொட்டி, தகர டப்பாக்கள், பிளாஸ்டிக் வாளிகளில் வளர்க்கலாம். இந்தச் செடிகள் ஓர் அடி உயரம் வளர்ந்ததும் பிடுங்கி உணவுக்காக எடுத்துப் பயன்படுத்தலாம்.
 தக்காளி:
தக்காளிப் பழத்தின் விதையை, தண்ணீர்விட்டு எடுத்து மண் அல்லது சாம்பலுடன் சேர்த்துக் கலந்து காயவைத்தால், தக்காளிச்செடி விதை தயார். செம்மண் நிரம்பிய தொட்டியில் மண்ணை லேசாகக் கிளறிவிட்டு விதைகளைத் தூவி மண் காய்ந்துபோகாத அளவுக்குத் தண்ணீர் ஊற்ற வேண்டும். தொட்டியின் அருகில் ஒரு சிறிய கம்பை நட்டு வைத்துவிட வேண்டும். காய் காய்க்கும்போது, இந்தக் கம்புடன் செடியைக்கட்டிவிட வேண்டும். இது வளர்ந்து  40 வது நாளில் தக்காளிகளைப் பறிக்கலாம்.
 பச்சை மிளகாய்:
ஒரு தொட்டியில் செம்மண்ணைப் போட்டுக் கிளறிவிட்டு, காய்ந்த மிளகாய் விதைகளைத் தூவி தண்ணீர் ஊற்றவும். சாணத்தை உரமாக இதன் மேல் போட்டு, இரண்டு நாட்களுக்கு ஒரு முறை விதையாக இருக்கும்போது நீர் ஊற்ற வேண்டும். 30 நாட்களில் மிளகாய்ச் செடி வளர்ந்துவிடும். 50 நாட்களில் மிளகாய் வளர்ந்து பறித்துக் கொள்ளலாம்.
 கறிவேப்பிலை:

சென்னை, 'இண்டியன் இன்ஸ்டிடியூட் ஆஃப் நியூட்ரிஷனல் சயின்ஸஸ்' நிறுவனத்தின் 'ஊட்டச்சத்து நிபுணர்' டாக்டர்  வர்ஷா, சென்னை, 'தேவி அகாடமி' தலைமை ஆசிரியை மாலதி ஸ்ரீனிவாசன் உள்பட ஐந்துக்கும் மேற்பட்டோர் இடம்பெற்ற இக்குழுவின் ஆய்வு மூலம்... குழந்தைகளின் உணவு விஷயத்தில் பெற்றோரின் கவனக்குறைவு, பள்ளிகளின் பொறுப்பின்மை இரண்டும் வெளிச்சத்துக்கு வந்துள்ளன.
''இன்றைய மாணவர்கள்தான், நாளைய சமுதாயம். எனவே மாணவர்களிடம் ஆரோக்கியமான உணவுப் பழக்கங்களை வளரச் செய்வதற்கும், நொறுக்குத் தீனியின் (ஸ்நாக்ஸ் மற்றும் ஃபாஸ்ட் ஃபுட்ஸ்) தீமைகளை அறியச் செய்வதற்கும், நன்மை அல்லது தீமை தரும் உணவுகளைப் பற்றி எடுத்துச் சொல்வதற்கும், பாதுகாப்பான உணவுகளையே உண்ண வேண்டும் என்பதை வலியுறுத்துவதற்கும்தான் இந்த ஆய்வு.
சிட்னி பல்கலைக்கழக இணைப்பேராசிரியர் தெரேஸா டேவிஸ், 'சென்னையிலிருக்கும் பள்ளிக்கூட மாணவர்களின் மதிய உணவை வைத்து ஆய்வை மேற்கொள்ளலாம்' என்றார். அதற்காக பல பள்ளிகளை அணுகினோம். ஏராளமான பள்ளிகள் சம்மதிக்காத நிலையில், மாநகராட்சி பள்ளிகள், சி.பி.எஸ்.இ பள்ளிகள் மற்றும் இதர ஆங்கில வழிக்கல்வி பள்ளிகள் என மொத்தம் 25 பள்ளிகள் எங்களின் ஆய்வுக்கு உறுதுணையாக இருந்தன. ஒரு பள்ளிக்கூடத்துக்கு 12 மாணவர்கள் (6 மாணவர்கள், 6 மாணவிகள்) வீதம், 6 முதல் 8-ம் வகுப்பு வரை படிக்கும் குழந்தைகள் பங்கேற்ற இந்த ஆய்வை, கடந்த ஆண்டு அக்டோபர் தொடங்கி, டிசம்பர் வரை நடத்தினோம்'' என்று இந்த ஆய்வு பற்றி நம் மிடம் பேசிய இந்திய நுகர்வோர் சங்கத்தின் பொதுச்செயலாளர் ராஜன், இதன் மூலம் கிடைத்த அதிர்ச்சித் தகவல்களை அடுக்கினார்.
லஞ்ச் பாக்ஸில்... ரெஸ்டாரன்ட் உணவு!
''மொத்தம் 300 பள்ளி மாணவ, மாணவிகள் கலந்துகொண்ட இந்த ஆய்வில் 55.7% பேர் பெண்கள். இவர்கள் கொண்டு வந்த மொத்த உணவு வகைகள் 2,941. இவற்றில் 8% மட்டுமே மாமிச உணவு வகையைச் சேர்ந்தவை. பெரும்பான்மையானோர் புளிசாதம், எலுமிச்சைசாதம், தயிர்சாதம் என தென்னிந்திய அரிசி உணவு வகைகளையே கொண்டு வந்தனர். சில மாணவர்கள் வறுவல், பீட்ஸா உள்ளிட்ட நொறுக்குத் தீனிகளையும் மதிய உணவாக கொண்டு வந்தனர். சில குழந்தை கள், கோலா உள்ளிட்ட பானங்களையும் குடிக்கக் கொண்டு வந்திருந்தனர்.
மொத்த மாணவர்களில் 87.7% பேர் வீட்டில் அம்மா செய்து கொடுத்த உணவையும், 7.3% பேர் பாட்டி உள்ளிட்ட மற்றவர்கள் செய்து கொடுத்த உணவையும், மீதமுள்ள 5% குழந்தைகள் ஹோட்டல் உள்ளிட்ட வெளிப்புற உணவையும் கொண்டு வந்திருந்தனர். இதில் வேதனையான ஒரு விஷயம், சில குழந்தைகள் பிரபல சிக்கன் உணவகத்தின் உணவுகளையும், உடலுக்கு கேடு விளைவிக்கக் கூடிய பான வகைகளையும் கொண்டு வந் திருந்தனர். சத்துமிகுந்த பழங்கள், காய்கறி களை, கைவிட்டு எண்ணக்கூடிய குழந்தைகளே எடுத்துவந்தார்கள்.
84.3% குழந்தைகள் தாங்கள் கொண்டு வந்த உணவை விரும்பிச் சாப்பிட்டார்கள். மீதமுள்ள குழந்தைகள் வேண்டா வெறுப்போடு சாப்பிட்டார்கள். சில குழந்தைகள் மதிய உணவைச் சாப்பிடவே விரும்பாதவர்களாக இருந்தார்கள்.
இதில் கவனிக்க வேண்டிய விஷயம்... அதிக சதவிகித குழந்தைகள், சத்தான உணவுகளைக் கொண்டு வராததோடு, கொண்டு வரும் உணவையும் பிளாஸ்டிக் போன்ற ஆபத்து விளைவிக்கக் கூடிய பொருட்களில்தான் எடுத்து வந்தார்கள்'' என்றவர், 'லஞ்ச் பாக்ஸ்’ விஷயத்தில் பெற்றோர், பள்ளி நிர்வாகம் செய்யும் தவறுகளைச் சுட்டிக் காட்டினார்.
நூடுல்ஸ்... பர்கர்!
''பெரும்பாலான குழந்தைகள் பள்ளிக்குக் கொண்டுவரும் உணவுகள், பெற்றோர்களின் விருப்பப்படியே அமைகிறது. அதிகமான பெற்றோர்... காலை நேர பரபரப்பில் கட மையே என்று ஏதாவது ஒரு உணவைத் தயா ரித்து கொடுத்து அனுப்புபவர்களாகவும், அது சத்தானதாக, ஆரோக்கியமானதாக இருக்கிறதா என்பதில் எந்தவித அக்கறையும் இல்லாமல் இருக்கிறார்கள் என்பதும் உண்மை. பெரும்பாலான பள்ளிகள், குழந்தைகளின் மதிய உணவு விஷயத்தில் தலையிடுவதை விரும்பாதவர்களாக இருக்கிறார்கள். இதனால் குழந்தைகளின் உணவுப் பழக்கத்துக்கு வீடு, பள்ளி என இரண்டு இடங்களிலுமே ஒரு கடிவாளம் இல்லை. இதனால் சில குழந்தைகள் பர்கர், பீட்ஸா, நூடுல்ஸ், கோலா என்று அதிக ஆபத்துக்களை விளைவிக்கக்கூடிய உணவுகளை விரும்பிச் சாப்பிடுவதுடன், அதையே மதிய உணவாக பள்ளிக்கும் எடுத்து வருகிறார்கள்.
இப்படி பாதிப்புகளை விளைவிக்கக்கூடிய நொறுக்குத்தீனி வகைகளையும், கொழுப்பு உணவுகளையும், உடல் பருமன் உண்டாக்கக் கூடிய உணவுகளையும், ஊட்டச்சத்து இல் லாத உணவுகளையும், உடல் நலத்தை கெடுக் கக்கூடிய உணவுகளையும் தொடர்ந்து சாப் பிட்டு வருகின்றனர்'' என்ற ராஜன், அதன் விளைவுகளை விளக்கினார்.
மரணத்தை நோக்கி இழுக்கும் நொறுக்குத்தீனி!
''மலேரியா, அம்மை, பிளேக் போன்ற நோய்களின் காலம் மலையேறிவிட்டது. சர்க்கரை, உப்பு, கொழுப்பு, காஃபின், மாவுச்சத்து, அதிக கலோரிகள்... இதுபோன்றவையே, இன்றைக்கு 'தொற்றாத நோய்கள்' எனப்படும் இதயநோய், ரத்த அழுத்தம், சர்க்கரை நோய் போன்றவற்றுக்குக் காரணமாக அமைகின்றன. குழந்தைகள் அருந்தும் பானங்களில் உள்ள சிலவகை அமிலங்கள், பல்லைக்கூட கரைக்கும் தன்மை கொண்டவை. மேலும் குழந்தைகளின் ஆதரவைப் பெற, இதுபோன்ற பொருட்களைத் தயாரிக்கும் நிறுவனங்கள் எக்கச்சக்கமான விளம்பரங்களைச் செய்கின்றன... இலவச பொருட்களையும் அள்ளித் தருகின்றன. அதனால் குழந்தைகள் விரும்பிக் கேட்க, பெற்றோரும் மறுக்காமல் வாங்கித் தருகிறார்கள்... நோய், நொடிகளையும் சேர்த்தே வாங்கித் தருகிறோம் என்கிற பயங்கரம் புரியாதவர்களாக!
இன்னொரு அதிர்ச்சித் தகவல் என்னவென்றால், இப்போது இந்தியாவில் ஆண்டுக்கு 41 ஆயிரம் கோடி ரூபாய் அளவுக்கு நொறுக்குத்தீனி மட்டுமே விற்பனை ஆகிறதாம். இதை அதிகமாக குழந்தைகள்தான் உட்கொள்கிறார்கள். இப்படிப்பட்ட நொறுக்குத்தீனிகளைத் தொடர்ந்து சாப்பிடுவதால், குழந்தைகளின் உடல்பருமன் அதிகரிக்கிறது. விளைவு எதுவரை செல்கிறது என்றால், புகைப்பிடித்தலுக்கு அடுத்தபடியாக இந்த உடல் பருமன்தான் இறப்புக்குக் காரணமாக அமைகிறதாம். 'கடந்த 20 ஆண்டுகளில் மட்டும் குழந்தைகளிடம் உடல் பருமன் மும் மடங்கு அதிகரித்துள்ளது. இதுவே இதய நோய்க்கான மிகமுக்கியக் காரணியாக இருக்கிறது' என்று பல்வேறு ஆய்வுகள் தெரிவிக்கின்றன. 'நொறுக்குத் தீனிகள் மிக விரைவில் உடலில் உள்ள ஈரலையும் பாதிப்படையச் செய்கின்றன' என்றும் மருத்துவர்கள் எச்சரிக்கிறார்கள் என்பதை நாம் மறந்துவிடக் கூடாது.
கோலா பானங்கள், கூடவே கூடாது!
இன்றைக்கு 'சக்தி தரும் பானங்கள்’ என்று அழைக்கப்படும் பலவகை பானங்களை, குழந்தைகள் விரும்பிப் பருகுகிறார்கள். அதில் கபீன், ஜின்ஸெங், டாரின், இனோசிடால் மற்றும் கோடமைன் போன்றவை உள்ளன. நாம் அன்றாடம் குடிக்கும் 250 மில்லி காபியில், 80-150 மில்லி கிராம் கபீனும், 250 மில்லி தேநீரில் 60 மில்லி கிராம் கபீனும், 250 மில்லி கோலா பானங்களில் 300-500 மில்லி கிராம் கபீனும் உள்ளன. இது, மனஅழுத்தம், தூக்கமின்மை, கவலை, தலைவலி ஆகியவற்றை அதிகப்படுத்துவதோடு, மத்திய நரம்பு மண்டலத்தையும் அதிர்வடையச் செய்கிறது. சில பானங்கள் அதிக அளவில் எலும்பு தேய்மானத்தையும், பருமன் அதிகரிக்கவும், இரண்டாம் நிலை நீரழிவு நோய் அதிகரிக்கவும், சிறுநீரக பாதிப்பு ஏற்படவும், பற்சிதைவு மற்றும் பலவித பல் உபாதைகள் ஏற்படவும் காரணமாக இருக்கின்றன. இதிலிருந்தெல்லாம் குழந்தைகளை மீட்பதற்கு ஆரோக்கியமான உணவுகளைத் தரவேண்டும். நொறுக்குத்தீனி, துரித உணவுகள், கோலா பானங்களுக்கு கண்டிப்புடன் 'நோ’ சொல்ல வேண்டும்'' என்று அக்கறை பொங்கச் சொன்னார் ராஜன்.
தலைமையாசிரியை மாலதி ஸ்ரீனிவாசன் பேசும்போது, ''ஒவ்வொரு பள்ளியிலும் 5 நாட்களுக்கு ஆய்வு மேற்கொள்ளப்பட்டது. ஆரம்பத்தில் தயங்கிய மாணவர்கள், இதன் முக்கியத்துவத்தை கொஞ்சம் கொஞ்சமாகப் புரிந்துகொண்டு ஆர்வத்துடன் ஆய்வில் பங்கேற்றனர். உணவு விஷயத்தில் தங்களின் தவறுகளைப் புரிந்துகொண்டு மாற்றிக்கொள்ளவும் தொடங்கினர். 'இனி, இதுபோன்ற உணவு வகைகளை உண்ணவே மாட்டோம்' என்று உறுதிபடச் சொன்ன மாணவர்கள், 'எங்களின் பெற்றோர், நண்பர்கள், உறவினர்கள் உள்ளிட்ட எல்லோரிடமும் இதையெல்லாம் எடுத்துச் சொல்லி, அவர்களுக்கும் புரியவைப்போம்' என்றும் சொன்னார்கள். இதுதான் எங்களுக்குக் கிடைத்த வெற்றி. இந்தக் கட்டுரையைப் படிக்கும் தாய்மார்களும் இத்தகையதொரு உறுதிமொழியை எடுத்துக் கொண்டால், அது நாளைய சமூகத்துக்குக் கிடைத்த வெற்றியாக இருக்கும்!'' என்று வேண்டுகோளாகச் சொன்னார்.
செய்வோமா?!

''காய்கறிகளை சரியான வெப்பநிலையில் சேமித்து பயன்படுத்த வேண்டும். இல்லாவிட்டால், அவற்றிலிருக்கும் வைட்டமின்கள் சேதமாகிவிடும். காய் /  பழங்களில் தோலுக்கு அருகில்தான் வைட்டமின்களும் தாதுக்களும் இருக்கும். எனவே, தோலை மெலிதாக உரிக்க வேண்டும். காய், பழங்களை எப்போதும் கழுவிய பின் நறுக்க வேண்டும், நறுக்கியபின் கழுவினால் ஊட் டச்சத்துக்கள் வெளியேறிவிடும். புரதச்சத்து மிகுந்துள்ள அவரை, பட்டாணி, சோயாபீன்ஸ் மற்றும் பருப்பு வகை களை குழந்தைகளுக்குக் கொடுத்துப் பழக்க வேண்டும். முழு தானியங்கள், கொலஸ்ட்ராலை குறைக்க உதவு கின்றன. அதனால் தானிய வகைகளை முடிந்த அள வுக்கு உணவில் சேர்த்துக்கொள்ள வேண்டும்.
ஒவ்வொரு சீஸனிலும் கிடைக்கும் பழங்கள், காய் கறிகள் உள்ளிட்ட உணவுப் பொருட்களைக் குழந்தை களுக்கு வாங்கித்தர வேண்டும். அவர்களை தினமும் கொஞ்ச நேரமாவது விளையாடவோ, உடல் பயிற்சி மேற்கொள்ளவோ அனுமதிக்க வேண்டும்... ஊக்குவிக்க வேண்டும். உடல் எடையை கட்டுப்பாட்டில் வைத்திருக்க சொல்லித்தர வேண்டும்.''

Food Safety Act not implementable in toto: Hoteliers

Hoteliers say FSSA is unclear on what's their responsibility. 
After the central Food and Drug Administration (FDA) issued a deadline of February 4, 2014, to food business operators for registration under Food Safety and Standards Authority (FSSA) Act, hoteliers have expressed concern over how the law is not wholly implementable.
There are close to 7,000 small- and medium-sized restaurants in Mumbai. Most of them have registered with the state FDA under the FSSA Act regulations. However, they contend that the law is not clear on what falls under the gamut of restaurant’s responsibility and what doesn’t. “We are against specific norms of the act. It has not been taken into consideration that a farmer that grows vegetables and fruits. If a particular fruit or vegetable is pesticide-laden, we, the hotel owners, will be prosecuted under the new law for food poisoning, but the farmer won’t be held liable,” said a hotelier in Lower Parel.
Hotel owners also expressed unhappiness over the fact that under the new law they have to procure raw materials from vendors who are registered under the Act too. “We have no control over individual registrations of vegetable and fruit vendors under the Act. In India, fresh produce is procured from farmers and wholesale vendors. How are we to control supply chain issues and track every supplier to ensure there are no loopholes?” asked a hotelier from Matunga.
“Also, food safety inspectors specify that all food has to be cooked wearing gloves. There are practical difficulties in handling the batter for frying south Indian snacks with gloves on. Some rules are difficult to implement.”
Indian Hotel and Restaurant Association (AHAR) has maintained that it wasn’t against the Act but was arguing on the basis of ambiguity of the central law. Restaurateurs were also concerned that they will face the music from food safety officers for the hawkers’ or vendors’ fault.
According to the rule book, a restaurateur can be penalised up to Rs5 lakh, with imprisonment of up to six months, if proven guilty for maintaining unsanitary conditions leading to illness or death of a person after consuming the unhygienic food.
“A few Iranian cafes around South Mumbai have shut shop due to continual losses. I don’t understand why restaurants are, time and again, reprimanded by food safety officers when crackdown on hawkers who sell unsafe food should be the driving point to ensure safety of consumers,” said Pervez Irani, proprietor, Yazdani Bakery at Fort.

JMC suspended Food Safety Officer.

The Jammu Municipal Corporation today suspended Food Safety Officer, for dereliction of duties in view of complaint received regarding non issuance of licence in favour of the Proprietor of M/S Mahajan Namkeen & Sweet Shop, Canal Road Jammu despite his repeated requests. The Municipal Commissioner took serious note of the complaints and ordered for the detailed enquiry in the matter.
The authorities further ordered that the assignment of suspended Food Safety Officer shall be looked after by Sh. Ashwani Kumar, Food Safety Officer. It is further appealed to all shopkeepers to obtain proper licence from Jammu Municipal Corporation for carrying on their business properly.

Cherry got a kick. What’s next?

In what seems to be midnight crackdown, state machineries pounded hundreds of ‘Cherry’ fish cans imported from Karnataka (Sea Cherry Mackerel worth Rs 17 lakhs impounded, 23rd Aug, 2013, Huieyen Lanpao). However, ban was lifted (perhaps after understand). We always felt that State food safety officers were cosmetic posts but, with this action, they were proved to be really alive. The reasons for banning cherry cans were:
1) Violation of FSSA (Fish and Fish Products) no. 2.6.1 (8) (note II). It said that the can in question contained yeast and mold which are unsafe for human consumption.
2) Violation of FSSA clause no 2.2.1 (general requirements of labelling). Lot/ batch no are not printed.
What is FSSA? Food safety and Standards Act, FSSA in short, is an integrated law passed in 2006 and came into force in 2011. FSSA is implemented by FSSAI (Food Safety and Standards Authority of India) which is under Ministry of Health and Family Welfare. Why is it so unique? In India there were multitude of laws related to food. For example, Fruits Products order, Meat Products Orders, Vegetable Oil Products (Control) Order, Essential Commodities Act, Solvent Extracted Oil, De-oiled Meal and Edible Flour, Prevention of Food Adulteration Act, etc. With the advent of FSSA, all laws related to food have been integrated/consolidated into one act. As a result of this, instead of control emphasis is given more on preventive measures. It also covers more areas of food related business which was earlier not covered by earlier laws.
The above episode opens a can of worms. Regarding the question of batch number printing, is it a unique case? Most of the local manufacturers never print lot batch number and even manufacture date. If that is the case, should local foods that violate general requirements of labelling not be banned? I feel that even batch numbering is not enough, it also need to be reciprocated with the production system. For instance, a batch number may be printed for the sake of legality but if it does not have a system that links with production and quality control systems, number doesn’t make any sense. Whatsoever the case, State authority can’t choose ‘pick up selectively’ policy if they are really concerned about food safety.
There are many issues which need to be addressed with a great sense of urgency. Some of which are:
Imported food products from Myanmar: Food products from Burma are flooding the market. All their products are total violation of FSSA. They have no batch no, manufacture date, ingredients, nutritional information. Surprisingly, our authorities are blind. May be Burmese products are too many in contrary to cherry can which is easy to pin down. However, the magnitude of business of Burmese products are massive and potential threat it may cause is enormous. Therefore, we cannot be mute or blind. Since the trade is international in nature, it is bit complex and the two countries should need a serious dialogue.
Mid-day meal: Recently in Bihar many students have been died due to the consumption of ‘poisonous’ food (7 months after Bihar deaths, school meal panel to meet, 21st Jan, 2014 TOI),While we discuss a lot on privately operated food business, we completely missed mid day meal kitchen and other socially important eateries and food serving places. Have our food inspectors ever inspected Govindhajee temple/ Ramji Prabhu/ ...? Though the kitchen may be small if we pick up singularly, their cumulative effect is enormous. Therefore the stake of unsafe food is gigantic.
Ima keithel have been serving Manipuri communities since long ago and many vendors serve food. When food safety officers are knocking at every door to comply with licence norms, they can’t simply remain aloof to Ima Keithel. Food doesn’t discriminate as far as safety is concerned.
Water bottling plants
If I am not wrong, water bottling plants works on per hour basis, minimum of 500 (L) bottles per hour. This means that in a day its production is at least 4 T if they work for only for 8 hr. If we see from ‘installed capacity’ angle, its magnitude is much larger. This means that it comes under the central licensing. Under the current laws, water bottling plants must comply with two acts/ regulation wrt food safety. Most plants complied with BIS standards but FSSA is grossly neglected/ ignored. Instead of central licensing, state licence was given. We don’t know if that was given intentionally or out of ignorance. What is the difference between central and state licencing? Central licensing process is bit lengthier than state licencing; more fee, online, and above, all, a food safety management system (FSMS) should be in place. In my recent discussion with one of the largest water plants, this issue was carefully highlighted and my complaint was well noted. I hope my voice wil be heard by the concerned food safety aurhority.
Is registration/ licencing enough to bring food safety? Yes, if it is done in its true spirit. However more unfortunate is the fact that ‘registration and licencing as of now is a cosmetic activity. It might bring govt large sum of money but it doesn’t bring any change as far as food safety is concerned. If licensing is measured quantita- tively, it would be a betrayal to the state and nation. Food manufacturers and vendors should be instructed to follow safety norms as per guidelines of FSSA. Let us hope State Food Safety Authority takes a step ahead in feed our people safety and healthy food.

Taking heavy metals lightly is dangerous

From toys and paints to sweets and cosmetics, our exposure to dangerous heavy metals in everyday life is growing but our regulatory system is still to catch up, opines the writer Dinesh C Sharma
The expose by the Delhi-based environmental action group, Centre for Science and Environment, about presence of heavy metals in fairness creams, lipsticks and other cosmetics has once again brought into focus the growing danger of heavy metal exposure in India. While metals like copper, zinc and iron are essential for human health in appropriate quantities, ingestion of heavy metals like lead, chromium, mercury, cadmium, arsenic and nickel could pose dangers to our health. Overexposure to these metals could cause a range of problems – from disorders of the central nervous system, brain, kidney as well as cancers.
We are constantly exposed to heavy metal through air, water and food. The problem of arsenic in groundwater in West Bengal and parts of Bihar is now well documented. It is a major health hazard for millions of people who are forced to consume arsenic-contaminated water. Lead is another common cause of heavy metal exposure in India. Automobile exhaust is one of the major sources of lead pollution in the country. The introduction of lead-free fuel in some cities has addressed this to some extent but availability of this fuel is yet to be universal. Commonly used leaded paints are another major source of lead exposure. Some companies claim to have introduced lead-free paints but the transition is very slow. Cheaply available paints still contain high amounts of lead. Several studies in India have found elevated lead levels in blood of children which can manifest in various health problems particularly those relating to neurological development of children.
Mercury pollution is also not uncommon in India. The presence of mercury in food chain – through fish – has been noted in several coastal and inland areas in the country, particularly those abutting chloralkali, cement and chemical industries, as well as thermal power plants. The thermometer factory of Hindustan Lever in Kodaikanal had to be shut down because of widespread mercury pollution. Health effects of mercury pollution still continue to unfold there. The use of mercury in thermometers and blood pressure equipment has been phased out but environmental mercury is still a problem. Besides, fish and even vegetables, mercury has been found in groundwater as well as surface water sources in several cities across the country. Dyes used to colour food items, particularly sweets such as jalebi and namkeens commonly sold across the country have been found to contain excessive quantities of contain heavy metals like lead and cadmium. The so-called silver foil used to decorate sweets is nothing but toxic derivative of lead. Even food-grade colours – if used in excess – can be dangerous. These colours are used in bakery products like cakes, pastries and cookies.
Most operators in the unorganised sector use aromatic dyes which are meant to colour wool or textiles and they contain toxic heavy metals like lead and cadmium, according to studies done by the Bangalore-based National Referral Centre for Lead Poisoning in India. The latest study on cosmetics shows that fairness creams, lipsticks and other lotions – even those being sold under top brands – contain mercury, nickel, lead and chromium. This finding is frightening given the fact that cosmetics are widely used even by children and those in low-income groups. Similarly, hair dyes are known to contain dangerous toxic metals. Food and consumer industry often argues that people get exposed to heavy metals is very tiny amounts which may not cause any harm. Only sustained exposure beyond permissible limits can cause any disease or affect the health. Exposure to heavy metals per se is not dangerous, it is contended. Theoretically, this argument holds. But in practice, the situation is totally different. First of all, India does not have a stringent regulatory framework when it comes to heavy metal exposure. Wherever permissible limits have been set, they are very liberal and there is no effective mechanism to monitor.
For instance, the Food Safety and Standards Authority of India (FSSAI) permits use of eight synthetic colours in specified food commodities at a uniform level of 100 mg per kg or per litre. While a sweet maker may be using permitted food colour, there is nothing that prevents him from using any amount as per his will. This limit fixed by the food regulator is unscientific because internationally approved Acceptable Daily Intake (ADI) of food colours varies from 0.1 to 25 mg per kg body weight per day. In the case of cosmetics too, manufacturers may be using permitted colours but there is no regulation on quantities they use. Also, how will a consumer know what’s the safe quantity of a fairness cream or lipstick so that his or her heavy metal intake remains within permissible limits? What do you do in case of heavy metal intake from multiple sources? It’s time our drug, food and other regulatory authorities wake up to this mounting challenge.

FDA bans India manufactured Ranbaxy drugs from US market

In a setback to Indian pharmaceutical giant Ranbaxy, the US has prohibited the company from producing and distributing drugs for the American market from its Toansa facility in Punjab.
In an order, the Food and Drug Administration yesterday prohibited Ranbaxy from distributing in the US the drugs manufactured using Active Pharmaceutical Ingredients (API) in Toansa, including drugs made by Ranbaxy's Ohm Laboratories facility in New Jersey. Ranbaxy has also been prohibited from manufacturing API at its Toansa facility for FDA-regulated drug products; exporting API from Toansa to the US for any purpose; and providing API from Toansa to other companies, including other Ranbaxy facilities, making products for American consumers. 
"We are taking swift action to prevent substandard quality products from reaching US consumers," said Carol Bennett, acting director of the Office of Compliance in the FDA's Center for Drug Evaluation and Research. 
"The FDA is committed to ensuring that the drugs American consumers receive, no matter where they are produced, meet quality standards and are safe and effective," he added.
In a statement, FDA said it exercised its authority under a provision in the consent decree which permits the agency to extend the decree's terms to any Ranbaxy-owned or operated facility if an FDA inspection finds the facility in violation of the Federal Food, Drug and Cosmetics Act or FDA regulations, including CGMP requirements. CGMP requirements serve as the primary regulatory safeguard over drug manufacturing and must be followed by companies to ensure manufacturing quality.
The FDA also acted under a separate provision in the decree which permits the agency to order additional corrective actions that FDA determines are necessary to achieve compliance with the law or the decree, it said. 

The caramel color in your cola may kill you, Consumer Reports warns

If you love drinking cola, beware. A potentially carcinogenic chemical called 4-methylimidazole (4-MeI) is found in some types of the artificial coloring used in sodas, Consumer Reports has warned. The FDA is also probing how dangerous it can be.
The chemical that gives sodas their distinct golden-brown color can possibly cause cancer, the Consumer Reports warned, adding that a potentially carcinogenic chemical called 4-methylimidazole (4-MeI) is found in some types of the artificial coloring.
"Caramel color, added to many soft drinks and some foods to turn them brown, may sound harmless, even appetizing. But in no way does it resemble real caramel," the group said. "Some types of this artificial coloring contain a potentially carcinogenic chemical called 4-methylimidazole (4-MeI)."
Consumer Reports isn't the only one saying the chemical, which appears as "caramel coloring" in food products,is dangerous to health. The World Health Organization's International Agency for Research on Cancer and the state of California also said that the chemical can potentially cause cancer. A 2007 federal government study has likewise found that the chemical caused cancer in mice.
California even has a law that says any food or beverage product sold in the state that gives consumers 29 micrograms of 4-MeI exposure a day must carry a health warning label: "WARNING: This product contains a chemical known to the State of California to cause cancer."
Experts at the Consumer Reports though think 29 micrograms is still too high. "Even if your choice of soft drink contains half that amount, many people have more than one can per day," said Urvashi Rangan, toxicologist and executive director of Consumer Reports' Food Safety & Sustainability Center. "Given that coloring is deliberately added to foods, the amount of 4-MeI in them should pose a negligible risk, which is defined as no more than one excess cancer case in 1 million people."
In its report Thursday, Consumer Reports also said that lab analyses showed Pepsi One and Malta Goya exceeded what California considered as safe level of 4-MeI. "While our study was not large enough to recommend one brand over another, both rounds of testing found that the level of 4-MeI in the samples of Pepsi One and Malta Goya purchased in both locations exceeded 29 micrograms per can or bottle. The products we purchased in California did not have a cancer-risk warning label," it said.
In response to the report, the Food and Drug Administration (FDA) said it will review the safety of the artificial coloring. "These efforts will inform the FDA's safety analysis and will help the agency determine what, if any, regulatory action needs to be taken," FDA spokeswoman Juli Putnam to The Associated Press.

Follow hygiene rules or face the music: FDA to roadside vendors in Mumbai

Come February 4, the Food and Drug Administration will crack the whip on all those food business operators, including roadside vendors and hawkers, who have not registered with the regulatory authority under the central government’s Food Safety and Standards Act (FSSA). 
The move comes two years after the Food Standards and Safety Authority of India made it mandatory for all food business operators (FBOs) to obtain a licence or register with the state FDA. Under the FSSA, any person or establishment, where food is being handled, processed, manufactured, stored and distributed should conform to basic sanitary and hygienic requirement. 
So far, FDA in Maharashtra has registered or licensed 5,73,840 FBOs of which 63,654 operators are in Mumbai alone. There are an estimated 15 lakh FBOs in the state, while Mumbai has over one lakh food business set-ups. These range from top-end restaurants to roadside vendors as also manufacturers of packaged food product or raw material, including dealers of milk, dairy products, meat and oil. 
State FDA Commissioner Mahesh Zagade told dna, “February 4 is the last date set by the central government to obtain licences or registration by the FBOs, failing which they will be prosecuted under the law.” 
Zagade said that Maharashtra has registered the maximum number of FBOs as compared to any other state in India. “Across India, there are 5.5 crore FBOs of which 18 lakh have registered under FSSA till date. Of these 18 lakh, over five lakh FBOs have registered from Maharashtra alone. With nearly 30 per cent registrations done from Maharashtra alone, we are leading in enforcing the law.” 
In the past 20 days, food safety officers have been conducting camps to persuade FBOs to obtain FDA licences or get registered with the regulatory body. “On average, we are conducting forty to fifty camps in a day in the city with an aim to reach out to vendors in concentrated areas of vegetable and fish markets as well as hawkers to make them aware of the importance of maintaining hygiene and sanitation while handling raw or cooked food items,” said Suresh Annapure, joint commissioner (food), FDA.

NGT’s directive to FSSAI

The National Green Tribunal (NGT), Southern Bench, on Thursday directed the Food Safety and Standards Authority of India (FSSAI) to consider the applications of flavoured water manufacturing units for the grant of licenses to them within a month.
Last March the tribunal took suo motu cognisance of a news report highlighting violations of certain norms by packaged water drinking units. Pursuant to a direction of the tribunal, all flavoured units were closed by the Tamil Nadu Pollution Control Board for want of license from the FSSAI. Hence, International Herbal Water Foundation and others filed appeals challenging the closure orders.
In an earlier hearing, the TNPCB said the units should get the licences from the FSSAI before obtaining consent from the TNPCB. Hence, the tribunal directed the FSSAI to consider the applications for licences within two weeks. When the matter came up for hearing before the Bench comprising Justice M. Chockalingam and Prof. R. Nagendran on Thursday, the counsel for FSSAI sought time to process applications.

Registration of food businesses a must

KOHIMA: All food business operators (FBOs) in Nagaland, irrespective of whether they are based in urban or rural areas, have been directed to obtain licenses and register their businesses under the Food Safety and Standards Act, 2006, before February 4, 2014.
Neiphi Kire, principal director and additional food safety commissioner, directorate of health and family welfare, Nagaland, said, "Operating a food business without a license or registration will attract penalty up to Rs 5 lakh and imprisonment up to six months under Section 63 of the Food Safety and Standards Act, 2006."
According to the Act, all FBOs should be registered with the Food Safety and Standards Authority of India (FSSAI) and obtain licenses. FBOs includes hotels, permanent and temporary stall owners, hawkers, home-based canteens, dhabawalas, food manufacturers, processors, re-packers, food stall arrangements in religious gatherings, slaughterhouses, storage houses, retail and wholesale traders, hostels, packaged drinking water units and so on.
Kire further said that all food businesses dealing in sales, storage and distribution of local food products and homemade food have been directed to properly seal the products in food grade plastic containers or polyethylene. The product seal should carry the following information on the label: name of food; date of manufacturing or packing; ingredients; net weight, volume; lot number, batch number, code number; best before date; use by date and expiry date.
"Non-compliance to this directive would be an offence punishable under the said Act and rules," Kire said in the press release. The measure will help the FSSAI protect and promote public health through regulation and supervision of food safety.

Adulterated Products Can Cause Stomach, Kidney Ailments
Aman added a drop of a yellow liquid into a jar of milk. The pure white liquid turned blue. It wasn’t a trick at a magic show but a demonstration at the adulterated food testing counter at the Youth Health Mela at Valluvar Kottam. 
The exhibition, organised by Adyar Cancer Institute, aims to educate people about noncommunicable diseases and ways to prevent them. As part of the event, MBA students of Hindustan University have a stall where they demonstrate simple tests to determine whether a food item is adulterated. 
Food products, ranging from milk and vegetables to ice cream, are adulterated, say health experts. “In order to add colour, texture and bulk to food products, manufacturers mix all kinds of additives, most of which cause severe illnesses,” said Saravana Kumar, a professor at the university, who is in charge of the stall. “We can scrub our vessels squeaky clean, wash the veggies several times and sanitize our hands repeatedly but the food we consume continues to be unsafe.” 
To prove his point, Kumar dissolved some jaggery bought from a grocer in water and added a drop of cleaning acid. Immediately, it precipitates and rises. “Detergent is mixed with jaggery to provide bulk. This could cause serious stomach disorders,” he said. 
Doctors say adulterated food is a menace but cannot be curtailed as people are dependent on packaged food products sold in stores. “Additives, artificial colours and products that enhance texture and flavour will cause damage to the body in the long run. exacerbate the problem,” said Dr. N Kathiresan from Cancer Institute. “From increased blood pressure to cancer, a range of health problems can be traced to adulterated food,” he said. 
Even vegetables contain harmful chemicals in excess of the permissible limits prescribed by the Food Safety and Standards Act, he said and suggested that people go organic. 
“People should have gardens at home and grow their own vegetables. It can not only be a relaxing hobby but also save time and money and ensure good health,” he said. 

Food Business Operators (FBOs) in Nagaland directed to register their business

Kohima: It is informed that all food business operators (FBOs) in Nagaland have been directed to obtain licenses and register their businesses under the Food Safety and Standards Act, 2006, before February 4th, 2014. Neiphi Kire, principal director and additional food safety commissioner, directorate of health and family welfare, Nagaland, said, “Operating a food business without a license or registration will attract penalty up to Rs 5 lakh and imprisonment up to six months under Section 63 of the Food Safety and Standards Act, 2006.”
According to the Act, all FBOs should be registered with the Food Safety and Standards Authority of India (FSSAI) and obtain licenses. FBOs includes hotels, permanent and temporary stall owners, hawkers, home-based canteens, dhabawalas, food manufacturers, processors, re-packers, food stall arrangements in religious gatherings, slaughterhouses, storage houses, retail and wholesale traders, hostels, packaged drinking water units and so on. “Non-compliance to this directive would be an offence punishable under the said Act and rules,” Kire said.

The High Court on Thursday ordered issue of notice to the Food Safety and Standards Authority of India, New Delhi, in connection with a petition filed by the Karnataka Pradesh Hotel and Restaurants Association.
The association has questioned the regulations and some of the provisions of the Food Safety and Standards Act, 2006, which were enforced from August 2012, replacing the Prevention of Food Adulteration Act, 1954.
The High Court, in July 2013, issued an interim order staying the regulations and the provisions. Justice A.N. Venugopala Gowda ordered issue of notice to the authority as the Union government pointed out that the authority was a necessary respondent for adjudicating the plea. Meanwhile, the court extended the interim order until next date of hearing.

The high court has ordered notice to Food Safety and Standards Authority of India, New Delhi, in connection with a petition filed by Karnataka Pradesh Hotel and Restaurants Association.
Justice AN Venugopala Gowda also extended the stay till the next date of hearing with regard to certain guidelines under Food Safety and Standards Regulations, which are under challenge.
The petitioner has challenged regulations related to licencing, packaging, labelling and registration. It claims a hotelier cannot be expected to test around 150 insecticide residues in the hundreds of items prepared. It also states the Rs 12-lakh ceiling imposed on petty food manufacturers is unrealistic.

Action against FBOs failing to convert licences by Feb 4: Chandramouli


Speaking on the sidelines of a conference held at the National Institute of Food Technology, Entrepreneurship and Management, K Chandramouli, chairman, Food Safety and Standards Authority of India (FSSAI), said the apex food regulator would take action against food business operators (FBO) failing to convert their licences, as prescribed by the Food Safety and Standards (Licensing and Registration of Food Businesses) Regulations, 2011, by February 4, 2014.
However, he said he was hopeful that the work pertaining to conversion would be completed by the prescribed date. “The deadline of February 4, 2014 is not for new licences. It is for conversions only. We expect that the conversions would be complete by the deadline. If not, we will take action. As far as new licences are concerned, it is a continual process,” he informed.
It must be mentioned here that the deadline for FBOs to obtain licences and get registered under the new set of rules is approaching, and reports suggest that the process has been sluggish in many parts of the country. While Maharashtra and Gujarat are leading, Delhi is at the bottom.
However, industry sources felt that it was highly unlikely that the conversion would be complete by the deadline. Most of them said they expected FSSAI to extend the date given the slow process of licensing and registration and the huge backlog which remained to be cleared.
When quizzed about the database for packaged drinking water, the FSSAI chairman stated that it was also a continuous process, and actually was an enforcement issue, which had to be checked constantly. Chandramouli said, “Wherever we find shortcomings, we will take action.”
When asked if there was a proposal from FSSAI regarding ban on junk food in schools, Chandramouli said that the matter had come up in the court. Only after the court’s direction would the apex regulator implement it.

Corpn plans checks to ensure safe meat

Chennai: Meat eaters may breathe a bit easy if the city corporation keeps its promise. On Tuesday, the civic body assured the National Green Tribunal (NGT) that it would regularly raid meat stalls across the city and clamp down on illegal slaughterhouses. 
In October, People for Cattle in India trustee G Arun Prasanna had petitioned the NGT pointing out unlawful slaughtering of animals in around 70 places in the city. The corporation submitted reports on November 29 and December 6, but the tribunal was not satisfied with them. When the matter came up for the third hearing on Wednesday, the corporation said in all the zones, a team comprising a health officer, a veterinary assistant surgeon, a sanitary officer and sanitary inspectors would conduct a weekly inspections at slaughterhouses and meat stalls. 
But the tribunal pulled up the civic body for discrepancies in its report. Tribunal chairman Justice Chockalingam said while the corporation had listed 850 illegal stalls at the last hearing, the number had now been reduced to 387. “How can 500 stalls disappear in 45 days?” said the chairman, adding the two reports would show the officials were “determined to either not take action or not file a report with actual facts.” The case has been adjourned to February 18 for further hearing. 
The corporation said there were 1,183 meat stalls in the city, of which 387 were either illegal or working in unhygienic conditions. Notices have been issued to them following which, 34 took license, 69 rectified the conditions, and 12 closed down. Steps have been taken to prosecute the rest. Also, the corporation removed 34 stalls which had opened shop under thatched roofs.During raids in 2012-2013, 10,324kg of rotting meat was seized and destroyed,saidthecivicbody. 
However the corporation said it could not inspect slaughter houses at St Thomas Mount, Perungalathur, Athipet, Pallavaram, Medavakkam, Tambaram, Semabakkam and Ayapkkam as they were not within its ‘limits.’ At Sholinganallur, it found illegal slaughtering of animals on Sundays near the roadside, and stopped the practice. A shop selling meat not cleared by the health department at Anna Nagar was closed, said the civic body.

Conflict of interest assumes great significance when it comes to statutory regulatory bodies that deal with public health and food safety issues. Vested interests are always working to get rules or standards that work in their favour. This is what happened when the Food Safety and Standards Authority of India (FSSAI) was set up to act as an ‘independent’ food safety regulator five years ago. 
Industry representatives were nominated to scientific committees to set standards for a number of parameters ranging from pesticide content to food labelling. The membership of these panels read like Who’s Who of food industry – Nestle, Pepsi, Coca Cola, Britannia, Marico, ITC, GSK, Hindustan Lever and so on. It was only after being exposed in the press that the Supreme Court took note of it and directed FSSAI to purge its panels. Till then the Authority did not even have a rudimentary conflict of interest policy in place. 
Like the Environment Ministry, the FSSAI too has not learnt any institutional lessons. Industry consultants and scientists working on industry projects continue as members of its scientific panels. The same is the case with the regulatory process for genetically modified food crops. 
Scientific panels are infested with scientists working on seed industry projects or enjoying their grants and at the same time regulating projects of the same sponsors. In one case, a scientist in the regulatory body approved a research project proposed by his wife. Another recent case is of the expert panel that the health ministry set up to decide follow-up action after a damning parliamentary report on human clinical trials. The Ministry chose an expert who is head of clinical trials division of a corporate hospital!
