Food safety: notice served on city hotel

The Food Safety wing has imposed a fine of Rs.50,000 and served improvement notice on Hotel SP Grand Days in the city, following an investigation into a complaint given by one of the guests at the hotel. Assistant Commissioner of Food Safety, D. Sivakumar, said that a doctor who had visited the hotel’s restaurant on Friday had given a complaint that a worm had been found in the serving of cut fruits that he had ordered.
The complaint was accompanied by photographs showing the worm, following which Food Safety officials inspected the hotel kitchens on Saturday. ”We found the kitchen to be unhygienic and hence a fine of Rs. 50,000 was imposed and an improvement notice was served,” Mr. Sivakumar said.

Lab tests dispel fears of artificial eggs

THIRUVANANTHAPURAM : The reports from different labs in the state have finally cleared the air about the so-called artificial or Chinese eggs--the tests have found that all of them were real ones.
The meat technology unit and the department of livestock product technology under the Kerala Veterinary and Animal Science University in Mannuthy has validated its earlier finding that the rumours on Chinese eggs were false. Similarly, tests conducted at the Centre for Advance Studies in Poultry Science (CASPS) of the College of Veterinary and animal sciences (COVAS) on the `artificial' eggs have also found that there was nothing unusual about them.
The food safety department handed over the reports to health minister K K Shylajaon Saturday .
Most of the eggs were very old but the shells, the air cells (which rests between the outer and inner membranes), the egg white and the yolk were found to be normal, said professor P Anita, head of the CASPS.
The reports about `Chinese eggs' had sparked panic among consumers, some of whom had gone to the extent of targeting trucks carrying eggs from Tamil Nadu. There were similar protests against traders in many parts of the state.
Sources in the food safety department said though the reports were found to be fake, it has taken notice of some un necessary practice in the egg trade such as sale of eggs under the category such as extraordinary . "There was no such category of eggs under the food safety and standards Act. It was a case of misbranding. Action will be taken," an official said.
Sources said that there might be several reasons for the suspected changes in the eggs. "In one of the cases, we learned that the eggs were frozen in the production plants in Namakkal before it was transported to the state in large trucks. Sometimes the eggs were stored for more than desirable time and this lead them to rot."
The former head of meat technology unit and the department of livestock product technology at Mannuthy , George T Oommen said the eggs were stored at 10-12 degree Celsius for short-term storage (2-3 weeks). However, after they are moved to room temperature, condensation or sweating on eggs occurs and they start rotting.
"Almost all egg contents are sterile at the time of production. Microbial contamination on the shell surface comes from dust, faecal material and contaminants from previously used packaging materials. Although the egg shell, the shell membrane and antibacterial components in egg albumen resist bacterial growth, the eggs may get spoiled. Spoilage of eggs is due to penetration of microorganisms through egg shell and membrane," he said.

Food contamination can be checked by turning off lights

Purdue University researchers have engineered a new detection method that would enable them to traces E. coli (bacteria) contamination in food by turning off the lights to see if the bacteria glow in the dark.
The bacteriophage called NanoLuc is a virus that only infects bacteria to produce an enzyme that causes E. coli O157:H7 to emit light if infected.
The process can shave off hours traditional testing methods, which can be critical when stopping the distribution of tainted foods.
Researcher Bruce Applegate said, "It's really practical. They (testing labs) don't have to modify anything they're doing. They just have to add the phage during the enrichment step of the testing protocol."
Adding, "We could detect as few as four bacteria in eight hours, and the process is cheaper than tests being used today."
While many strains of E. coli bacteria are harmless, some can cause severe and potentially fatal illnesses.
Ingesting as few as 10 colony-forming units of E. coli can result in serious illness.
Current detection methods cannot find just a few E. coli cells in a sample, so inspectors do an enrichment process, culturing the bacteria to multiply so they can be detected.
With the bacteriophage added to the sample, scientists can add a reagent and detect E. coli before the enrichment process is even finished, within seven to nine hours.
Paper's first author Dandan Zhang, said: "The current detection methods cannot bypass the enrichment process, but our technology can explore the enrichment phase. That can give us a time advantage over other methods."
The process is also unlikely to create a false positive because the bacteriophage cannot produce the light-emitting protein without encountering E. coli, which is the only bacterium NanoLuc is able to infect.
"The phage is just a virus. It cannot carry out metabolism until it infects bacteria, which in this case is E. coli. They won't create these proteins unless they've found their specific host," Applegate said.
Based on the number of bacteriophage added, the amount of time that has passed and the amount of light emitted, the authors can use an equation to determine approximately how much E. coli is present.
Their tests were done in an enrichment broth made with ground beef.
Zhang said future work would focus on detection of E. coli in lettuce, spinach and other produce.
Other bacteriophages could also be developed to detect other pathogenic bacteria, such as Salmonella, in a similar fashion.

Are your spices adulterated? Check with these simple tests

Take a close look at the spices in your kitchen. Is the clove shrunk and too small? It could be adulterated. Here are easy tests for you to ensure that your spices are pure.
Spices are a must have in every Indian kitchen and no meal is complete without them. You probably end up buying a lot of whole spices and powder from your local baniya. If branded and packaged spices are not available, you tend to buy loosely sold packets. This increases the risk of you consuming adulterated spices. Whole spices are adulterated with similar looking substances like tiny stones, pebbles, grass seeds, etc. Also most spices are sun-dried in the open. which makes them more prone to contamination. Powdered spices, on the other hand, are contaminated with artificial colours, chalk powder, etc., which increases their bulk and also enhances their colour.
Adulterated food is very harmful and food additives like artificial colours, can cause various diseases like skin allergies. But adulterated spices can easily be distinguished from pure ones by performing these simple tests:
Food productAdulterantTest to check adulteration
Whole spicesDust, pebble, straw, weed seeds, damaged grain, insects, rodent excreta, hair, etc.Visual examination can help you distinguish between pure and impure form.
Black pepperPapaya seedsOn visual examination you will find that papaya seeds are shrunken and oval in shape. They are greenish or brownish black in colour.
ClovesExhausted cloves (All the oil is extracted from them.)The small size and shrunken appearance of cloves make them easy to distinguish. Also, the smell is less pungent as compared to true cloves.
Mustard seedsArgemone seedOn close observation they are easy to separate as, mustard seeds have a smooth appearance, whereas argemone seeds have a grainy and rough surface and are black in colour. You can also press the mustard seed. Genuine mustard seeds have a yellow core, whereas argemone seeds have a white core.
Powdered spicesAdded starch (Not applicable to turmeric.)Add a drop of iodine solution (easily available in medical stores or the one from your first-aid box). Formation of blue colour indicates adulteration.
Table saltTasting the spice will help you distinguish between adulterated and pure spices.
Turmeric powderMetanil yellowTake 1/4 tsp of turmeric powder in a test tube, add 3 ml alcohol to it and shake vigorously. Add 10 drops of hydrochloric acid to it. Appearance of pink colour indicates presence of this chemical.
Chalk powder or yellow soap stone powderAdd some dilute hydrochloric acid, if it effervesces; chalk powder or yellow soap stone powder is present.
Turmeric wholeLead chromate (Gives a bright appearance to the spice)Add a piece of whole turmeric to water. If the water turns yellow, it indicates adulteration with lead chromate.
Chilli powderBrick powder, salt powder or talc powderAdd a tsp of chilli powder to a glass of water. If it is artificially coloured, the water will change its colour.
Rub some chilli powder at the bottom of a glass. If any grittiness is felt, it indicates the presence of brick powder/sand.
Artificial coloursSprinkle some chilli powder on a glass of water. Artificial colours will leave a coloured streak.
Asafoetida (Hing)Soap stone or other earthy materialAdd some water to the sample and shake it vigorously. Earthy material or soap stone will settle at the bottom.
StarchAdd a drop of iodine solution (easily available in medical stores or the one from your first-aid box). Formation of blue colour indicates adulteration.
CinnamonCassia barkCinnamon bark is very thin and can be easily rolled around a pencil or a pen and also have a distinct smell. Cassia barks are tougher and thick.
Cumin seedsGrass sees coloured with charcoal dustRub the cumin seeds on your palms. Colouration of your palms indicate adulteration.
SaffronDried tendrils of maize cob (Artificial saffron is prepared by drying tendrils of maize cob and colouring them with food colour)Try breaking a saffron strand. Genuine saffron does not break on pressing but artificial saffron easily crumbles under pressure. Also, try dissolving saffron in water, pure saffron will keep on giving colour until it completely dissolves. These tests are easy to perform and do not require chemicals other than those easily available. But if you find that your product is adulterated you can also get it analysed by a lab analyst at your own expense. For consumer complaints you can reach out to the national consumer helpline at their toll free helpline: 1800-111-4000. You can visit their helpline at www.nationalconsumerhelpline.in. Also, you can contact your local consumer courts or Food and Drug Administration in your city.
There are provisions to seek compensation under the Prevention of Food Adulteration act (PFA), 1954, where you can seek compensation by filing complaints in National Consumer Disputes Redressal Forum (NCDRF), if you seek compensation of Rs. 1 crore and above, State Consumer Disputes Redressal Forum (SCDRF)(Rs. 20 Lakh and above but below Rs. 1 Crore ) and District Consumer Disputes Redressal Forum (DCDRF) (Rs. 20 Lakh or below).
Although while filing a complaint you will also have to inform the vendor against whom you are filing it. You may also like to check if your milk and milk products are adulterated.

Govt approves Rs 490 crore for upgrading food testing labs

Around 40 food testing labs will be set up across the country while special attention in this regard will be given to four northeastern states of Arunachal Pradesh, Manipur, Mizoram and Sikkim.

The government will be spending Rs 490 crore in the next two-three years on upgrading and setting up new food testing laboratories (FTLs) across the country, an official said on Friday vs Food Safety and Standards Authority of India (FSSAI) CEO Pawan Kumar Agarwal said 45 FTLs would be strengthened across the country while special attention in this regard will be given to four northeastern states of Arunachal Pradesh, Manipur, Mizoram and Sikkim.
‘The government has recently approved Rs 490 crore for upgrading and strengthening FTLs across the country. The idea is to upgrade at least two FTLs in larger states and one in smaller states and union territories,’ he said. There are 114 FTLs operating in the country of which 112 are NABL accredited private labs notified under the Food Safety and Standards Act, 2006.
‘Besides setting at least three new FTLs, there is proposal to set up 62 mobile foot testing labs (MFLs). There will be at least one MFL in each of the states and union territories,’ said Agarwal adding that at least 8-10 private labs were under consideration for notification under the FSS Act.
The FTLs have been facing challenges in terms of availability of sophisticated analytical equipments and trained scientific and technical manpower, he said. ‘The target is to standardise the FTL network in the next two-three years,’ he said.

Tests rule out chances of chemical eggs

The preliminary screening of samples of eggs at the Centre of Excellence in Poultry Science of Kerala Veterinary and Animal Sciences University (KVASU), Thrissur, in the wake of reports of sale of chemical or ‘Çhinese’ eggs, did not find any artificial nature in the samples. The samples were collected by the Food Safety and Standards authority from various markets in Ernakulam district.
"All the eggs were natural, but the yolks of the samples were thick,” KVASU sources said. Moreover, the egg membrane was easily identifiable because of its thickness, the sources said.
Scientists who examined the samples said since the shelf life of the eggs was comparatively less, poor storage facilities might have affected their quality and consistency. Deep frozen eggs were found to have similar consistency.
If kept for a long time, eggs may show a periodical change in consistency. Consumers may have mistaken this as Chinese or chemical egg, sources added.
The university will test samples collected from other parts of the State.
“At a time when poultry entrepreneurship is emerging as a sustainable agribusiness venture in the State, apprehensions about the poultry product may affect the industry and the livelihood of thousands of entrepreneurs, said T.P. Sethumadhavan, Director of Entrepreneurship, KVASU.
“Of the total eggs produced in the State, more than 90 per cent are from backyard sources. Though there is huge potential for organic or natural egg in the State, more than 60 per cent of the egg requirement is met from nearby States,” Dr. Sethumadhavan added.
Kerala requires an average of 75 lakh eggs a day for consumption, he said.
Samples collected from markets in Ernakulam tested by poultry science centre of KVASU.

Here's the truth behind artificial Chinese eggs 'sold' in Kerala

The eggs that were said to be artificial and Chinese have been proven as real, but rotten.
Artificial Chinese eggs story turns out to be fake
For a week, people in Kerala have been hearing about the widespread sale of artificial Chinese eggs in the state. Many also came forward with samples that looked like fake eggs. These eggs are said to have a hard shell, yolk, and a plastic-like texture. The testimonials by many people had even created panic among the public.
How believable are these Chinese eggs stories?
According to a lab test conducted by Commissionerate of Food Safety at the Meat and Science Technology Lab at Kerala Veterinary College and Research Institute in Thrissur, the artificial egg story is fake.
As per the report handed over to the Food Safety Commissioner, the samples tested are said to be real eggs, but rotten. It claims that the texture of eggs changes after being exposed to different temperatures. Before sending it to different stores, the eggs are kept in freezers for many days. However, while they are being transported to different places, the temperature varies resulting in its texture change.
Meanwhile, Dr George T Oommen, director of Centre for Advanced Studies in Poultry Science, assures that there aren't any techniques to make perfect eggs artificially as of now and are not being imported from China. The authorities have also decided to conduct a detailed test by collecting samples from different parts of the state.
Artificial Chinese eggs story turns out to be fake
Muralee Thummarukudy about Chinese eggs
In a detailed Facebook post, Muralee Thummarukudy, chief of Disaster Risk Reduction in the UN Environment Programme, explained why the news on Chinese eggs cannot be believed.
"It has been 10 years since the artificial egg news broke in China, later it reached Hong Kong, Singapore, Indonesia, Philippines and finally in India after a decade. It is a good story. A big factory, where Chinese make 1000s of eggs using maida and chemicals. The people who eat them get sick and die. But, the story has a problem. Nobody has seen any artificial eggs in any of these countries [translated from Malayalam]," Muralee writes on his Facebook account.
He also explains that selling eggs is not a hugely profitable business. Since an egg costs Rs 5, the merchant buys it for Rs 4, taking a profit of Rs 1. So, they will be willing to buy artificial eggs from dealers only if its available for a lesser rate. The fake eggs have to be imported after clearing many procedures in China and India.
"It has to be noted that these eggs are perfectly made, though making them artificially is not an easy task. It will cost at least Rs 5,000 to take the 3D print of an egg. As far as I understand, China doesn't have a business model of spending Rs 5,000 for making something and selling it for Rs 5. Not just this, the mass production of artificial eggs will be expensive and such factories need license to operate and professionals to handle the machines," he adds.

FSSAI to opertionalise draft guidelines, launch logo for fortified food products

Fortification means deliberately increasing the content of essential micronutrients such as iron, Vitamin A, Vitamin D, Iodine, etc, in a food product so as to improve its nutritional quality with minimal risk to health.
The Food Safety & Standards Authority of India (FSSAI) will launch the logo for “fortified” food product and operationalise the draft guidelines for food fortification on Monday. Fortification means deliberately increasing the content of essential micronutrients such as iron, Vitamin A, Vitamin D, Iodine, etc, in a food product so as to improve its nutritional quality with minimal risk to health.
The draft guidelines, which were put in public domain on September 4 to invite comments and suggestions, set the minimum levels of micronutrients which could be added to certain products such as rice, salt, wheat flour, milk and edible oil.
“These operationalised draft guidelines, when launched on Monday, will be for the state governments and some companies which want to work on them as soon as possible,” said Pawan Kumar Agarwal, chief executive officer, Food Safety & Standards Authority of India (FSSAI). He added the final guidelines would be issued only once the 60-day time period for receiving the public comments is over.
“We intend to operationalise the standards at the draft stage itself because several state governments want them to be in place so that it can implement them in their schemes quickly. For example, Karnataka is very keen to implement these standards for their mid-day meal schemes,” Agarwal elaborated.
Firms which will fortify its products would be able to use the ‘fortified product’ logo on them. “If someone is using the fortified logo, and if they are not fortifying it as per the prescribed standards, that company would be subjected to same penalty as for manufacturing unsafe or adulterated products. It means there would be consequences for not fortifying it as per standards. If a company is putting the micronutrient in the product, and if it is below the prescribed standard, then it can’t be called fortified at all,” Agarwal said.
If there is any change in the final guidelines, the states would be given a transition time to go from “operationalised” draft guidelines to final guidelines. “It is more than likely that changes, if there are any at the final stage, would be minimal,” said Agarwal.

Govt mulls making food fortification mandatory: FSSAI

In order to address malnutrition, government is considering making food fortification - adding of essential micronutrients - mandatory in wheat flour, rice, salt, edible oils and salt.
At the same time, the Food Safety and Standards Authority of India (FSSAI), which earlier this month issued draft regulation on allowing food fortification, has decided to soon operationalise these standards even before it issues final notification.
FSSAI is organising 2-day summit on fortification of food on October 16-17 in the national capital to draw the roadmap.
"Fortification is a cost effective and quick way to address malnutrition. We have issued a draft regulation on fortification of foods and sought public comments. We will soon operationalise this draft as several states want to start fortification," FSSAI CEO Pawan Agarwal told reporters here .
Fortification means deliberately increasing the content of essential micronutrients in food to improve its quality. In draft standards, the FSSAI has covered five food categories -- wheat flour, rice, milk, edible oil and salt.
The FSSAI has set standards for fortification of salt with iodine and iron; of vegetable oil and milk with Vitamin A & D; wheat flour and rice with iron, folic acid, zinc, vitamin B12, vitamin A and some other micronutrients.
The draft enlists standards to encourage production and consumption of fortified foods. The rules also provide for FSSAI's role in making fortification mandatory.
Agarwal said the regulator will notify final regulations based on comments from stakeholders, who can sent in their views on the issue by the first week of November.
"Option for making food fortification mandatory is being examined," he said, while emphasising on the need for getting supply side ready for this process.
"The government will take a final call," he said, adding that this could be easily implemented in government programmes like PDS, mid-day meal scheme.
Besides operationalising the draft regulations, the FSSAI will also unveil logo for fortified food on Sunday.
"We are setting standards for fortification of foods as our mandate is to provide not only safe but wholesome food. By setting standards, we are prescribing minimum and maximum limit of fortification in the five food categories," he said.

'Food testing labs to be upgraded in next two-three years'

New Delhi, Oct 14 (IANS) The government will be spending Rs 490 crore in the next two-three years on upgrading and setting up new food testing laboratories (FTLs) across the country, an official said on Friday.
Food Safety and Standards Authority of India (FSSAI) CEO Pawan Kumar Agarwal said 45 FTLs would be strengthened across the country while special attention in this regard will be given to four northeastern states of Arunachal Pradesh, Manipur, Mizoram and Sikkim.
"The government has recently approved Rs 490 crore for upgrading and strengthening FTLs across the country. The idea is to upgrade at least two FTLs in larges states and one in smaller states and union territories," he said.
There are 114 FTLs operating in the country of which 112 are NABL accredited private labs notified under the Food Safety and Standards Act, 2006.
"Besides setting at least three new FTLs, there is proposal to set up 62 mobile foot testing labs (MFLs). There will be at least one MFL in each of the states and union territories," said Agarwal adding that at least 8-10 private labs were under consideration for notification under the FSS Act.
The FTLs have been facing challenges in terms of availability of sophisticated analytical equipments and trained scientific and technical manpower, he said. "The target is to standardise the FTL network in the next two-three years," he said.

"We saw several reports about fake eggs. But we are yet to get any proof that such eggs exist. We have contacted Ports department to check whether such eggs were imported to the country . We did not get confirma tion from food safety and standards authority of India either on presence of such eggs," said a senior food safety official.
George T Oommen, director of CEMST, confirmed that the samples alleged to be "Chinese fake eggs" turned out to be real following the tests conducted at their centre.
"The samples collected by food safety department from Thiruvananthapuram and Ernakulam had deformity . The yolks could not maintain consistency in shape once they were frozen. Most of these eggs might be frozen during transportation and hence the change in shape," he said. Referring to media reports of egg membranes getting burned when lighted, he said it is normal.
Oommen said that instead of panicking, people can check by themselves whether the egg is real or fake."Candling - a process of holding the egg above light in a dark room - is one method. We could clearly see the yolk and how it lies suspended in the egg. Boiled eggs too can be inspected. The eggs have special features like an air sack on one end, which gets bigger as it gets older. There will be various layers in an egg, which is impossible to be produced artificially," he said.
Though there were several reports about artificial eggs on Thursday, food safety department was unable to collect samples and co-ordinate activities due to hartal.
"We have been running egg wholesale business for many years and have not come across artificial eggs.We think that the news going the rounds about Chinese eggs is fake," said A Sudheer, owner of Mallissery Egg Store, Nadakkavu, Kozhikode He said that alarmed by news reports, some customers have started enquiring whether the eggs are original.
"I also came across such misguiding posts in social networking sites but I am not convinced about the claims. We bring eggs from farms in Namakkal and we have not received any complaint from the customers so far," he said.
Fake rice scare
Similar to fake eggs, reports of plastic rice being sold at various shops also surfaced in Kerala earlier in 2015. The rice, allegedly made in China, was said to be made of plastic. However, the food and safety department despite numerous inspections could not confirm the same.

Food safety dept receives complaint

PALLAKAD: The food safety department, which received a complaint regarding sale of spurious eggs at Cherpulasseryin Palakkad last month will collect samples at the check posts and different parts of the district and get them tested at the Veterinary College Laboratory in Thrissur.
The deputy commissioner of food safety K M George Varghese said that they received a complaint regarding sale of spurious eggs brought in a vehicle to some roadside shops last month.
Though the department tried to track down the sellers they were not successful. No other complaint has been received from the district in this regard, George Varghese said.
He said that there are no set standards for the storage and marketing of eggs. But tests can be done to determine if hormones were used on chicken.
The chances of artificial eggs being manufactured is very less since it is a sophisticated process, he said. "It will not bring much profit due to the low price of egg and its availability in large quantity, especially in places such as Namakkal inTamil Nadu, from where chicken and eggs are brought to Kerala," George Varghese said.
He said that food safety department will now regularly collect samples of eggs brought to the state and get them tested.

Ruckus over ‘plastic’ eggs

Just as the food safety authorities have got their act together to check the veracity of ‘farm eggs containing plastic’, referred to by a section of the media as ‘Chinese eggs’ by dispatching samples collected from stores in Ernakulam for lab tests, a group of BJP workers created boisterous scenes in front of a hypermarket at Vyttila, claiming that it had been selling ‘factory-made Chinese eggs’.
T. Balachandran, general secretary of the BJP for Thrikkakara constituency, who led the workers to the hypermarket soon after the hartal called by the party was over around 6 p.m., said the eggs supplied by an Edapally-based merchant under two brand names “contained plastic that burnt with a rustle”. One of the workers said the “eggs are manufactured at factories in China and reach Kerala through Namakkal in Tamil Nadu”, referring to some articles suggesting the same in language dailies in Malayalam over the past two days.
However, the food safety authorities said it was impossible to “manufacture eggs in factories”, nor could they be adulterated “by inserting plastic into the shell”. “However, since there was a huge public outcry, we collected samples from various stores in Ernakulam and sent them for testing in our own laboratory as well as at Kerala Agricultural University at Mannuthy.
“We are trying our level best to obtain the test result tomorrow [Friday],” he told The Hindu .
Officials, who did not want to be quoted, said the eggs in question could have been dipped in a wax solution for preservation, and that the thin wrap of what was described by people as plastic could be wax.
The phenomenon of eggs containing ‘plastic’ was first reported in Idukki district.
While K.P. Aravindan, president of Kerala Sasthra Sahithya Parishad, lamented the absence of critical thinking and common sense among a large section of credulous people who bought the factory-made egg story without an iota of doubt.
An article published on Luca , an online science magazine supported by the Parishad on Wednesday had called the doubters’ bluff by questioning the technical feasibility and economic infeasibility of the whole story.
It is impossible to manufacture eggs in factories, nor can they be adulterated by inserting plastic into shell.

Beware of 'Chinese' eggs!

Remember National Egg Coordination Committee's slogan, “Sunday ho ya Monday, roz khao ande (Be it Sunday or Monday, have an egg every day)”? Mind the last word, it is ande (eggs) and not anda (egg), I would argue with my mother as a child, in a bid to convince her to part with at least two eggs as part of my daily ration. Whether I succeeded or not is another story. Sigh.
Now, one would have to think twice before acceding to his or her child's request. For all the proteins that a humble egg packs in itself, having an egg might be a health hazard, if the reports of fake eggs flooding the Kerala markets are anything to go by. A regional TV news channel 'exposed' the fake eggs being sold in the markets in Idukki district, following which there have been reports of raids and confiscation of the fake eggs in other parts of the state, too.
Health Minister K.K. Shylaja has, reportedly, directed the state food safety commissioner to probe the matter.
Though the origin of the 'Chinese eggs', as they are being referred to, are yet to be known, some reports suggest they are coming in from Tamil Nadu.
How to check for 'Chinese eggs'
There is little in terms of appearance to differentiate between a real and a fake egg. The shell of the fake egg is slightly harder and rougher than that of a real one and there is a rubbery lining inside the shell.
On tapping a fake egg lightly, you will hear a less crisper sound than you would hear in case of a real egg.
If you break the egg and keep it for some time, the egg white and the yolk will soon mix with one another, since they are essentially made from the same ingredients.
The fake eggs do not stink even if cooked and kept in the open for days, and do not attract ants or flies.
When you fry a fake egg, the yolk will be spread without being touched unlike a real egg.
How they are made
The fake egg white is made by mixing sodium alginate to warm water, and then adding gelatin, alum and benzoic acid to the mixture.
The same mixture is used to make both the yolk, by adding a yellow colouring agent, and to make the fake egg membrane, by adding calcium chloride to it.
The fake egg shell is made from calcium carbonate, paraffin wax and gypsum powder.
And if you are wondering why take all the trouble to produce artificial eggs, then know this—it is much quicker to make an egg than to wait for a hen to lay one!
