உங்கள் உணவும் குடிநீரும் பாதுகாப்புதானா? ஃபுட் பாய்சன் பயங்கரம்


அலை அலையாகத் திரண்டு வந்துவிட்டுப் போயிருக்கிறது வெள்ளம். ஆனால், குடிக்க சுகாதாரமான குடிநீர் இல்லை. உண்ணும் உணவுக்குத் தட்டுப்பாடு ஏற்பட்டதால், கிடைப்பதைச் சாப்பிட வேண்டிய சூழல். இதுவே, `ஃபுட் பாய்சன்’ எனப்படும் உணவு வழியே பரவும் நோய்கள் ஏற்பட முக்கியக் காரணமாக இருக்கிறது.
சமீபத்தில், ஒரு அம்மா தாங்க முடியாத வயிற்று வலி, வயிற்றுப்போக்கு, வாந்தி காரணமாக மருத்துவமனையில் அனுமதிக்கப்பட்டிருந்தார். என்ன பிரச்னை என்று பார்த்தால், அவர் சாப்பிட்ட உணவு கெட்டுப்போயிருந்தது.

உணவு நஞ்சாதல் (ஃபுட் பாய்சன்)
உணவை நீண்ட நேரம் வெளியே வைக்கக் கூடாது. அப்படிவைத்தால், பாக்டீரியா, வைரஸ் போன்ற தொற்றுகள் காரணமாக உணவு கெட்டுப்போய்விடும். இ்ப்படி கெட்டுப்போன உணவுகளை உட்கொள்ளும்போது, உடலுக்குள் செல்லும் கிருமிகள் பாதிப்பை ஏற்படுத்தும். குமட்டல், வாந்தி, வயிற்றுப்போக்காகப் பாதிப்பு வெளிப்படும். இதைத்தான் `ஃபுட் பாய்சன்’ அல்லது `உணவு நஞ்சாதல்’ என்கிறோம். மழைக்காலத்தில் மட்டும் அல்ல, கோடையிலும் ஃபுட் பாய்சன் உண்டாக வாய்ப்பு அதிகம்.



எந்த வகையில் ஃபுட் பாய்சன் வரலாம்?
பாக்டீரியா, ஒட்டுண்ணி, வைரஸ் மூன்றும்தான் உணவு நஞ்சாக முக்கியக் காரணிகள். நாம் சாப்பிடும் எந்த உணவுப் பொருளை எடுத்தாலும், அதில் மிகமிகக் குறைந்த அளவாவது நுண்ணுயிரிகள் இருக்கும். சமைக்கும்போது, அதிகப்படியான வெப்பம் காரணமாக இந்தக் கிருமிகள் அழிக்கப்படுகின்றன. இப்படி அழிக்கப்பட்ட கிருமிகளுடன்தான் நம் தட்டில் உணவு பரிமாறப்படுகிறது.

`சாதாரண வயிற்றுப்போக்குதானே!’ என்று அலட்சியப்படுத்தினால், அடுத்தகட்டமாக வாந்தி, மலத்துடன் ரத்தம் கலந்து வருதல், காய்ச்சல், அதீத வயிற்றுப்போக்கு, பார்வைத் திறன் மங்குதல், வயிற்று எரிச்சல், வயிற்றுப் பொருமல், கல்லீரல் பாதிப்பு, சிறுநீரகப் பாதிப்பு, வலிப்பு ஏற்படலாம். நிலைமை மோசமானால் உயிரிழப்பு ஏற்படுவதற்கான வாய்ப்பும் உள்ளது.
மேலே சொன்ன அறிகுறிகள் எல்லாம் ஏற்படும் என்று இல்லை. ஒவ்வொருவருக்கும் தனித்தனி அறிகுறிகள் ஏற்படலாம்.

நோரோ வைரஸ் (Norovirus) - மழைக்காலக் கிருமி, வாந்தியை உருவாக்கும் கிருமி. சுகாதாரமற்ற நீர், கடல் உணவுகள், வேகவைக்காத காய்கறிகள் போன்றவற்றில் காணப்படலாம்.
சால்மொனெல்லா (Salmonella) - பாக்டீரியா கிருமி. கோடை மற்றும் மழைக்காலங்களில் அதிகமாகப் பரவக்கூடியது. வயிற்றுப்போக்கை ஏற்படுத்தும். செல்லப் பிராணிகளின் மலக்கழிவு, சுகாதாரமற்ற நீர், இறைச்சி, கோழித் தீவனம், பால், முட்டை போன்ற உணவுகளில் அதிகமாகக் காணப்படும்.
ஈ கோலி (E.coli (Escherichia coli)) - விலங்குகள் மற்றும் மனிதனின் செரிமானப் பாதையில் வாழக் கூடியது. பால், கீரைகள், சுகாதாரமற்ற நீர், மலக்கழிவு, கடைகளில் விற்கும் தோசை மாவு போன்றவற்றில் காணப்படலாம். வயிற்றுப்போக்கு, வாந்தி ஏற்படலாம்.

‘Dangerous’ khesari dal? 10 things you need to know before you eat it

The government has lifted a 55-year ban on khesari dal, once considered harmful. Here's all you need to know about it.
After fifty five long years, the Indian Council for Medical Research has decided to lift a ban on khesari dal, banned in the year 1961 for what scientists and medical experts had then said could cause lathyrism a condition which could lead to paralysis of the lower body and even cause numbness in the limbs and spine.
However, Shantilal Kothari, a 73-year-old microbiologist and nutrition expert based in Nagpur, made it his mission to get the nation-wide ban on Khesari dal revoked.
Over the last 30 years, Kothari has been campaigning against the ban seeking its revocation. He claims that if farmers are allowed to cultivate Khesari dal, farmer suicides will reduce in the country.
Now that the ICMR has lifted the ban, will it be a game-changer of sorts for farmers as well as for domestic households in the country, which have been staring at sky-rocketing prices over the last few months?
Here’s a quick guide to khesari dal, which, for now, has a new lease of life:
* Khesari dal was so popular in India, that it was accepted as a form of payment in areas where it formed a significant part of the agricultural economy, an August 1984 report in the magazine New Scientist, claims.
* Interestingly, in 1907, following a severe drought, the Maharaja of Rewa banned the cultivation of Kesari dal.
* Also known as lakholi dal, it was earlier used as fodder, but that stopped after its harmful effects were made known by government agencies, forcing farmers to stop cultivation.
* In 1961, all state governments banned the dal, except West Bengal. Chhattisgarh, which gained statehood in 2000, did not ban it.
* In the 1970s, farmers growing khesari faced stringent action such as burning of standing crops by government officials and also seizure of pairs of bullocks.
* According to medical research, consumption of the dal could lead to lathyrism – paralysis of the lower body as well as numbness in the spine. This, because it contains di-amino-pro-pionic acid.
* However, despite the ban, the dal is still readily available across markets, and is used to adulterate other pulses.
* With the price of arhar dal shooting up to Rs 200/kg, retailers have started mixing khesari dal as it looks similar. This also ensured reduction in the price, thereby making it accessible to the economically weaker sections of society.
* In 2008, after Kothari went on a fast, the Maharashtra government lifted the ban on production, consumption and sale of the dal.
* But Kothari was not one to give up, and continued to petition the government, seeking a nation-wide revocation of the ban. After the government’s decision to revoke the ban was communicated to Kothari in December last year, he called a meeting of farmers, the first of which was held in Kuhi area of Nagpur district on January 15. The meeting saw a turnout of over 15,000 farmers.
While the Food Safety and Standards Authority of India’s Scientific Panel and Scientific Committee will now put the dal under intense scrutiny, before it will be allowed to hit the market legally, the production of khesari dal will continue to be watched closely. Will it be a game-changer? Only time can tell.

Will 'dangerous' Khesari dal be back on your plate?

New Delhi: Amid the debate over safety of two-minute noodles Maggi, Indian authorities have cleared a pulses' variety which was deemed unfit for consumption till now.
The government had banned the 'khesari dal' way back in 1961 after it was established that its consumption could cause a neurological disorder called lathyrism (paralysis in the legs).
Fifty-five years later, a research panel which included scientists from the Indian Council of Medical Research (ICMR) has cleared 'khesari dal' for consumption, which is considered the poor man’s dal as it is economical to buy.
As per The Indian Express, the Indian Council of Agricultural Research (ICAR) has stated that the Food Safety and Standards Authority of India (FSSAI) has been communicated about the lifting of the ban.
FSSAI CEO Pawan Kumar Agarwal, however, has said that the dal would undergo rigorous tests as it was banned for decades on the grounds of safety.
Khesari dal, also known as lakholi dal, will now be scrutinised by the FSSAI’s Scientific Panel and Scientific Committee.
Meanwhile, Ahmed Patel, senior Congress leader and political secretary to Sonia Gandhi, today expressed concern on the news that khesari dal has been cleared for consumption.

Safe Protocol for Artificial Ripening of Fruits

Abstract
Ripening is a process in fruits that causes them to become edible. The fruit becomes sweeter, less green and softer. During the process of fruit ripening, changes in texture, colour, flavour and aroma occur in addition to alteration in levels of vitamins and antioxidants taking place. Setting up suitable parameters to ripen any fruit is critical. The major elements that are vital to any ripening programme are maturity, age of fruit, storage temperature, time of ripening process, airflow, ethylene supply and control of CO2 and O2. In general, the fruits are being ripened by various traditional or artificial methods using calcium carbide, smoking, ethrel dipping, diluted ethylene glycol spray and ethylene generators. Among these methods, usage of ethylene by ethylene generator for fruit ripening is safe and falls within the category of food substances that, when used for the purposes indicated, in accordance with good manufacturing practice.
Introduction
India’s diverse climate ensures availability of all varieties of fruits and vegetables. India is the second-largest producer of fruits after China, with a production of 44.04 million tonne of fruits from an area of 3.72 million hectare. The major fruits grown in India are mango, banana, citrus, guava, grape, pineapple and apple. Apart from these, fruits like papaya, sapota, annona, phalsa, jackfruit, ber, pomegranate in tropical and sub-tropical group and peach, pear, almond, walnut, apricot and strawberry in the temperate group are also grown in a sizeable area. Plants provide minerals and vitamins which humans cannot produce including non-essential micronutrients that have been linked to the promotion of good health (Ali.Z.M, Lasan.H., 2004; Payasi et al., 2005 and Rahman et al., 2008).
Ripening is a term which is used to encompass many processes which can occur simultaneously or can be associated or independent of each other (Alley E. Watada, 1986). In this process, fruits become more palatable by making them sweeter, less green, and soft, physiologically and commercially. They are the most significant phase in their life. Fruits are being ripened by various traditional or artificial methods of fruit ripening, it has been observed, mostly to meet consumers’ demand and other economic factors. However, in the recent years, artificial fruit ripening has been considered a matter of concern and the effect of artificial ripening has become questionable because of various health related issues (Fattah, and Ali,2010; Siddiqui et al., 2010; and Mehnaz et al., 2013). The need for artificial fruit ripening is often encountered when fruit-sellers offer fruits to customers before due season. In order to avoid economic loss, fruit sellers sometimes prefer collecting fruits before they are fully ripe, and artificially ripen fruits before selling to the consumers. (Vila, 2003).
Though the demands of the consumers are met to a great extent with the help of these ripening agents, it is important to investigate any possible health hazards that are associated with them. Most of the ripening agents are toxic and their consumption can cause serious health problems, such as heart disease, skin disease, lung failure and kidney failure (Hakim, 2012; Chace, 1934). Scientists have also reported that regular consumption of artificially-ripened fruits may cause dizziness, weakness, skin ulcer and heart related diseases (Nagel, 1989). In addition, these ripening agents may contain different chemicals as impurities which are also toxic for human health. To address the increasing health related concerns, different countries have issued and implemented different acts and laws to control or to prohibit the production, sale and distribution of artificial fruit ripening (PFAAR, 1955). The purpose of the study is to address the safe protocol for quick ripening, health related issues associated with artificial ripening, and report current research findings of the food value assessment of artificially ripened fruits.
Chemical Agents Used for Artificial Ripening
The process of fruit ripening is chiefly regulated by a gaseous plant hormone called ethylene (Thompson.A.K et al., 1987). It is produced naturally within the fruits which initiates the process of ripening. There are multifarious uses of many ripening agents to release ethylene in order to speed up the ripening process. Chemicals like ethanol, methanol, ethylene glycol, Ethephon, calcium carbide are used to ripen fruits and vegetables artificially (Goonatilake, 2008). There ripening process is given below:
Calcium Carbide
Calcium carbide is the chemical which is colourless when pure, but black to greyish-white in colour otherwise with slight garlic like odour. It is used for the production of acetylene gas. But now a days this process is widely used by Indian farmers or fruit vendors for ripening fruits like mango, banana, papaya, plums, chiku, apples, avocados, melons, peaches, and pears.
The moisture in the air reacts with the calcium carbide to release the gas acetylene, an analogue of ethylene, which acts as an artificial ripening agent.

It is said to have the same effect as ethylene. However, acetylene is not nearly as effective for ripening as is ethylene, and acetylene is not a natural plant hormone like ethylene. It is found that acetylene liberated from calcium carbide has been found to initiate ripening and improve colour development of Dashehari mangoes (Lustre.A.O et al., 1976). The fruits ripened with this method are overly soft and less tasty. All the calcium carbide used in India is of industrial grade and acetylene, when generated from calcium carbide can contain toxic impurities such as traces of arsenic and phosphorous, which can be quite harmful for the health and can lead to various ailments (Saraswathy et al., 2007; Rahman, 2008 and Koning, 1994 ).
Smoking
One of the traditional methods followed for centuries for ripening in many parts of the country is smoking. It appears to accelerate the process of ripening of green and raw banana due to presence of acetylene and ethylene in smoke. In practice, fruits are placed inside a large copper vessel and few incense sticks are lighted inside and then vessel is covered with lid for 24 hours. The fruits ripened by this method have less consumer preference due to cuts, bruises, microbial infection and poor appearance (Sarananda et al., 1990).
Diluted Ethylene Glycol
Ethylene glycol (C6H6 O2) is a colourless, odourless and sweet tasting liquid, which is used in the present day as coolant, antifreeze and so on. Ethylene glycol’s chemical structure contains the gas ethylene. Ethylene reacts with hydrogen peroxide to produce the agent ethylene glycol. A quite a serious problem in usage of ethylene glycol when it is swallowed, there is evidence to support that it is poisonous and can cause kidney failure. Hence ethylene glycol can be diluted with water and skimpily applied to the peel of the fruit only and not injected in liberal amounts to the inside of the fruit. The treated mangoes using 20% ethylene glycol and 80% water were manipulated ripened on the seventh day (Ruchitha Goonatilake, 2008).
Ethrel/Ethephon
Ethrel is the commercial name for Ethephon (2- choloroethanephosphonic acid). It is used for enhancing postharvest ripening. Ethephon is often considered better than calcium carbide because pineapple, banana and tomato treated with 1,000 ppm of ethephon required less time for ripening (48, 32 and 50 h, respectively) than other treated fruits as well as compared with the nontreated fruits. The fruits ripened with ethephone have more acceptable colour than naturally ripened fruits (Rahman et al., 2008) and have longer shelf life than fruits ripened with CaC2 (Medlicott et al., 1987). Ethephon is decomposed into ethylene, bi-phosphate ion and chloride ion in aqueous solution (Singal et al., 2011)]. The released ethylene further fastens up the ripening process. It has major disadvantage that it is applied to the fruits by spraying or dipping in its solution (Pendharkar et al., 2011). It only increases a step in handling and can cause danger of microbial spoilage (IbtissamAbdalla Mohamed-Nour et al., 2010; Madamba, 1977). There is another method of using ethrel. It is really strongly acidic when in solution with water its pH is made to rise above 5 the ethephon molecule spontaneously hydrolyses, liberating ethylene (Saraswathyet al., 2007).
Ethylene generators
Ethylene is Generally Recognised as Safe (GRAS) by the United States Food and Drug Administration (FDA) and falls within the category of food substances that, when used for the purposes indicated, in accordance with good manufacturing practice. Ethylene can be produced commercially but it is not safe to use ethylene filled cylinders due to its explosive nature at high concentration (27,000ppm). Thus safer method to produce ethylene should be used.
Catalytic generators are used to produce ethylene gas, simply and safely. In ethylene generators liquid produces ethylene when heated in the presence of a catalyst. These generators are now widely used for supplying ethylene in ripening room. The liquid, a proprietary product, comprises ethanol and agents that assist in catalysing its dehydration (Saraswathy et al. 2008). Ethylene sensors can be used to precisely control the amount of gas. It is also possible to precisely control RH and CO2, and even gas the fruit without the ripener being onsite.

Suggested Practices for Ripening Process of Selected Fruits
Banana
Ripening rooms are very important for proper and efficient banana ripening. The room must be air tight, and properly insulated, with adequate refrigeration capacity, heating equipment and air circulation system. Bananas are very sensitive to temperatures. The chilling effect will occur, if fruit is subjected to below 13oC. It causes the peel to have a smoky, dull gray appearance. Cooked bananas result from excessively high temperatures; avoid temperatures above 18°C. The peel will have a brown to orange appearance. The fruit may be soft and have a short shelf life. For best ripening results, humidity should be 85 to 95%. For safe ripening of banana raise pulp temperatures to at least 14°C. Apply 100 - 150 ppm ethylene for a minimum of 24 hours during the initial phase of the ripening cycle. Fruit that is less mature may take an additional 24 hours of ethylene application (Kader Adel and Beth Mitcham, 2015).
Mainly colour changes in banana ripening are based on peel colour rather than pulp colour (Fig 1). Hence colour of banana peel has been used in assessment of banana ripening stages. Commercial standard colour charts are available in which 7 stages of peel colour were reproduced and translated to a numerical scale where Stage 1=all green, 2= green with trace of yellow, 3= more green than yellow, 4= more yellow than green, 5= yellow with trace of green, 6= full yellow, 7= full yellow with brown spots.
According to colour chart, in terms of peel colour slight difference occurs among the advanced stages of maturity i.e. stage 5, 6 and 7 as compared to initial stages (Tapre et al., 2012).
There are other factors that cause poor ripening, like inadequate humidity, immature fruit, ethylene levels and release of carbon dioxide. Carbon dioxide concentrations above 1% will retard ripening, delay the effects of ethylene and cause quality problems. Therefore, it is recommended to vent rooms by opening the doors for 20 minutes every 12 hours, after the first 24 hours of ripening. In commercial scale, the venting methods are either by automatic fan or "flow-though" (constant) ventilation.
Citrus
At harvest, the peel colour of citrus fruits is sometimes greener than desired. Although eating quality is not improved, all types of citrus, including lemons, grapefruit, oranges, and tangerines, can be degreened by exposure to 1-10 ppm ethylene for 1-5 days. This process stimulates removal of chlorophyll and exposure of yellow or orange pigments. The temperature in which degreening should occur is typically in the range of 20 to 30°C. In general, the exact temperature, ethylene level and exposure time that should be used for each type of citrus and cultivar varies according to maturity, variety and properties (http://postharvest.ucdavis.edu/).
Mango
Mango is the most important fruit covering about 35 per cent of area and accounting for 22 per cent total production of fruits in the country. Early season mangoes may take longer to ripen. Store and ship mature green mangoes at temperatures of about 13°C. Before ripening begins, the fruit pulp temperatures should be raised to 20 to 22°C. Once the fruit pulp temperature stabilises, apply 100 ppm ethylene for a minimum of 24 hours. Actual time of exposure to ethylene is determined by the maturity of the fruit; a slight change in fruit colour indicates that the mangoes are producing ethylene and the external ethylene source is no longer needed. Humidity is very important and it should be maintained at 90-95%.
Carbon dioxide will build up during ripening. If no automatic ventilation system is in place, then be sure to vent the room approximately every 12 hours by opening the doors for 20 minutes even while applying ethylene. The actual CO2 level must be kept below 1% for proper ripening.
After ethylene application, keep pulp temperature at 18 to 22°C until desired level of ripeness is attained (typically 5 – 9 days). Then store ripened mangoes at 10 to 13°C in a high humidity environment for up to one week (Kader and Mitcham, 2015).
Papaya
The degree of maturity will indicate whether papayas should be exposed to ethylene. Papayas which are fully mature at harvest should not be ripened with ethylene if they are to be stored for an extended period of time. Papayas of minimum commercial maturity will benefit from a treatment of ethylene with an improvement in texture and colour. Depending upon desired shipping time, bring the pulp temperature to the range of 20 to 25°C. Apply 100 ppm ethylene for 24-48 hours (actual time of exposure to ethylene is determined by the maturity of the fruit; a yellowing of fruit colour indicates that the papayas are producing ethylene and the generator is no longer needed). Maintain humidity at 90-95% to prevent shrinkage during ripening. Vent the rooms by automatic ventilation or by opening the doors for 20 minutes every 12 hours to flush out carbon dioxide and bring in oxygen. Once the desired level of ripeness is attained, reduced the temperature to 10°C for partially-ripe papayas or to 7°C for ripe.
Plum
Plums, if harvested at a mature stage, will ripen properly without exogenous ethylene application. Ethylene application to fruit harvested at a lower, minimum maturity will help to ripen the fruit more uniformly without speeding up the rate of ripening. However, for the slow ripening plum cultivars, exogenous application of ethylene (100 ppm for 1-3 days at 20°C) is needed for even ripening. Actual time of exposure to ethylene is determined by the maturity of the fruit; a decrease in fruit firmness indicates that the plums are producing ethylene and the external application of ethylene is no longer needed (Crisosto et al., 2014).
Tomato
For ripening of tomato maintain 100-150 ppm of ethylene until a “breaker” or Stage #2+ is reached, usually 24-48 hours will take depending on temperature and maturity. The temperature and relative humidity ranges for ripening were 18° to 21°C and 85 - 95%. Sufficient air circulation is needed to provide even pulp temperatures (Fig. 2) throughout the ripening room and continuously vent Carbon Dioxide from the ripening room (lib.store.yahoo.net/).
Mature green tomatoes will ripen by this method. The external source of ethylene in the ripening room that triggers the fruit to release its own ethylene. However, immature tomatoes will erratically respond to external ethylene and possibly result in poor quality or delayed ripening. On an average, fruit ripened at 17.8° to21.1°C to a breaker stage can then be stored for more than two weeks at 12.5°C until a full red (stage #6) colour is reached. The fan size required for aircirculation is calculated as

Conclusion
Once fruits are ripened by safe ethylene treatment they require quick marketing and careful handling to minimise bruising. If delays cannot be avoided, the ripe fruits should be cooled to their minimum safe temperature and kept at that temperature until ready for retail display. Removal of ethylene and decreasing oxygen concentration to the 3-5% range can be useful supplements to maintaining the optimum temperature and relative humidity for delaying further ripening and deterioration of partially ripe fruits. Sometimes fruits are treated with CaC2 to get uniform yellow colour. Consumption of CaC2 treated fruits causes harm to consumers. Hence awareness on ripening process, storage practices and safety is important for successful marketing.

Squads to Keep Eye on Eateries

Special squads have been formed in the city to carry out inspections at restaurants and eateries in the city in view of the State Youth Festival, Food Safety Commissioner T V Anupama said on Sunday.
The squads have bee instructed to take stern action against eateries that prepare food in unclean surroundings and are using banned chemicals and artificial colours, she said.
Large numbers of students along with their parents and teachers will arrive in the city this week for the 59th State Youth Fest which begins on Tuesday. “They will have to depend on hotels, restaurants, bakeries and other eateries. Such establishments should follow all the safety norms,” the commissioner said.
The food safety wing has also published mobile phone numbers so that the public can alert it regarding violations. The food safety wing, which is going all out to prevent problems, has also directed hotels and restaurants to obtain the mandatory registration or licence for operating eateries in the state. The licence or registration should be displayed prominently.
Failure to do so can invite action including imprisonment upto six months and a fine of Rs 5 lakh.

All food business operators, including manufacturers and those selling food, have been asked to ensure that they possess the valid FSSA licence or registration. These licences should be displayed prominently inside their shop or on their premises.

FDI may rise 25% as FSSAI eases product approval norms: Badal

New Delhi, Jan 17 (PTI) Foreign direct investment in the food processing sector is likely to go up by at least 25 per cent as FSSAI streamlines regulations to ease product approvals, Union Minister Harsimrat Kaur Badal has said.
The Food Safety and Standards Authority of India (FSSAI) had laid down quality standards for only 370 products. The regulators approval was a must for all other products.
Now that the approval process has been relaxed, products with ingredients that are approved by the regulator may not require any approval, which will lead to more innovation and product launches and promote traditional food, Badal told PTI.
"Our contention has all along been that proprietary food products, for which standards are not defined in the Food Safety and Standards regulations, but have approved and standardised additives should not require product-by-product approval. This approach espoused by the Food Processing Ministry has now found favour with the regulator," Badal added.
Proprietary food means an article of food that has not been standardised under the food safety and standards regulations.
FSSAI has also issued a notice for operationalisation of standards for proprietary food, under which the definition has been changed.
The proprietary food has now been defined as an article of food that has not been standardised under the regulations but which contains approved ingredients and additives. From now on, such products may not require regulatory approval.
However, the notice mentions that proprietary food does not include dietary supplements, nutraceuticals and genetically modified food products, among others. And the onus for the safety of food products will be on food business operators.
The regulator has also uploaded a list of more than 8,000 permitted food additives, the food items in which they can be used and the recommended maximum level.
"With these new regulations in place, the industrys concerns regarding product approvals will be addressed to a large extent. And I am optimistic that in coming months, there will be an increase of 25 per cent FDI in the food processing sector," Badal said.
She added that the Food Processing Ministry has been repeatedly taking up all these issues with FSSAI to find a solution to the problems being faced by the industry.
"I myself had also met Health Minister J P Nadda a few times on these issues," she said.
The minister had also written a letter to the Prime Minister in this regard.
The minister also mentioned that clarity on import of the products and introduction of risk-based inspection system is a noteworthy step, which would remove clutter for importers and others.
"Now, our efforts have yielded results. This will ease the process of doing and expanding business in the food processing sector," the minister added.

Khesari dal could be answer to arhar crisis, says activist who fought ban for 3 decades

In 2008, Kothari’s efforts had led to the Maharashtra government lifting the ban on production, consumption and sale of the khesari dal, also known as lakholi dal. It was at the end of a hunger strike over 80 days.
When the Indian Council for Medical Research lifted a ban on khesari dal after 55 years, few would have been as delighted as Dr Shantilal Kothari. For over three decades, Kothari, now 73, a microbiologist and nutrition expert in Nagpur, had made it his singular pursuit to get the ban lifted.
“I stand vindicated at last with the ICMR upholding my contention that khesari dal is absolutely safe for consumption and that the impression that it causes lathyrism (a paralysis of the legs) is scientifically misplaced,” a beaming Kothari told The Indian Express.
In 2008, Kothari’s efforts had led to the Maharashtra government lifting the ban on production, consumption and sale of the khesari dal, also known as lakholi dal. It was at the end of a hunger strike over 80 days.
Last year, he was fasting again, this time against the ban nationwide. “I explained the issue to Union minister Nitin Gadkari, who met me during my 56-day hunger strike last November and promised to look into the issue positively,” Kothari said. “I thank him for whatever he has done.”
He had begun his campaign in 1985 after touring villages in eastern Vidarbha’s paddy-growing districts that have traditionally grown khesari. The provocation was an acute shortage of pulses in the country then and he thought khesari could be the ideal alternative. “I travelled to several villages with Bapusaheb Lakhnikar, a prominent personality from Bhandara district, and spoke to people, only to find the impression of lathyrism was wrong. These villages have been eating the dal for decades,” Kothari said.
“What has been found is that when khesari is consumed as the only staple diet, about three per cent get affected. But if consumed in small quantities, it is found to have a salutary effect insofar as cardiovascular functions are concerned,” Kothari added, citing a research by former Osmania University professor S L N Rao.
What followed was several agitations and hunger strikes.
Kothari had left his job as assistant professor in G B Pant Agricultural University in present-day Uttarakhand in 1973, following a dispute with officials on the process of manufacturing soya milk from soyabean. In Nagpur he set up a soyamilk plant, which manufactures about 300 litres per day. Since then, he has pursued the khesari ban issue.
Khesari was banned by all states in 1961, except West Bengal. Chhattisgarh, which became a state later, didn’t ban it. “Farmers growing khesari faced stringent action such as burning of standing crops by government officials and also seizure of pairs of bullocks in the 1970s. It had become a source of corruption for officials as farmers continued to grow the pulse on the sly,” Kothari said.
Kothari doesn’t have a definite figure of the pulse’s production, but says, “It is grown along with rice and is very easy to grow —farmers just have to randomly throw the seeds on paddy fields. After harvesting paddy, the ban had their fields empty but earlier they used to have khesari as a second crop.” Another advantage of the pulse, he says, is it costs Rs 40-50 per kg and promises 20 per cent more production than paddy.
Kothari believes if promoted as a regular crop, about 240 lakh quintals khesari can be produced in the country and it can be a potential game-changer in situations like today’s arhar crunch. “Khesari has the potential to improve not only the biological health but also the financial health of farmers and consumers, thereby becoming a potential tool to prevent farmers’ suicide,” he said.
Kothari says Food Safety and Standards Authority of India conveyed him to him on December 28 that the ban has been lifted. He has set about encouraging farmers to grow khesari. The first meeting of farmers in Kuhi of Nagpur district on January 15 saw a turnout of over 15,000 farmers.

ICMR panel clears ‘unsafe’ khesari dal banned in 1961



The dal was banned in 1961, after its consumption was linked to a neurological disorder called lathyrism (paralysis in the legs).

FIFTY-FIVE years after it was banned, a research panel headed by the Indian Council of Medical Research (ICMR) has cleared the consumption of khesari dal — considered the poor man’s dal due to its low cost.

Responding to an RTI application filed by The Indian Express, the Indian Council of Agricultural Research (ICAR) has confirmed that the proposal to lift the ban has been communicated to the Food Safety and Standards Authority of India (FSSAI). The RTI reply added that the ICMR’s recommendation is under consideration of the FSSAI, and the food regulator’s Scientific Panel and Scientific Committee discussed the issue on November 6 last year.
When contacted, FSSAI CEO Pawan Kumar Agarwal confirmed that he had received the recommendation from the ICMR. “I cannot comment on the exact findings of the ICMR right now. Besides, something which has been banned for several decades on the ground of safety will have to go through rigorous tests before it is cleared by us,” he said.
Agarwal added that irrespective of the ICMR’s recommendations, there will be an independent scrutiny by the FSSAI’s Scientific Panel and Scientific Committee.
But, according to documents accessed by The Indian Express, the ICMR’s proposal was approved by the FSSAI at its November 6 meeting, although the Scientific Panel and Scientific Committee did not give any conclusive recommendation on lifting the ban.
Consider this:
1. On March 10, 2015, the Scientific Panel — citing a report by the Indian Institute of Toxicological Research which held that lifting the ban on khesari dal would be “improper” since its consumption is “not safe” — had called for more scientific efforts to make it safe.
2. On September 21, 2015, the Scientific Committee observed that incidences of lathyrism were reported from drought prone areas where khesari dal was consumed. While recording that three low toxic varieties of
the dal — mahateora, ratan and prateek — were developed recently, the committee asked for a conclusive study on the lowest safe limit.
3. Further, a study conducted by the National Institute of Nutrition, Hyderabad, on goats, also recorded abnormal effect on the animals which were given the toxin reportedly produced by khesari grains.
However, the FSSAI has gone solely by the ICMR’s latest recommendation on lifting the ban on sale and storage of khesari dal in view of its high protein content and water use efficiency.
Khesari (Lathyrus odoratus) is a hardy pulse crop that can grow in both drought as well as waterlogged conditions. The grain is known produce a toxin called BAPN or beta-amino-propio-nitrile, which, when ingested, causes limb paralysis and bone deformity — the result of a neurological disorder called lathyrism.
In 2010, the Planning Commission had asked the ICMR to conduct an epidemiological study of the dal in Chhattisgarh, where its cultivation is the highest.
The procedure to lift the ban will envisage an amendment in the FSSAI regulations of 2011, whereby it was prohibited to sell, have in possession for sale, or for use as an ingredient in the preparation of any article of food, khesari dal or its mixture with any other dal or flour.
“The fact that it gives 10-12 quintals per hectare yields even in the harshest environment and can mature within 125 days is a big advantage, though there are issues with BAPN accumulations,” said N P Singh, director of the Indian Institute of Pulses Research at Kanpur.

Case registered against supermarket chain for selling goods post expiry date

COIMBATORE: The food safety department has registered a case against a leading supermarket chain for selling goods which had passed the expiry date. A complaint was filed by a social worker on Thursday.
A retired police officer, who is also a member of the anti-corruption movement in Coimbatore, Velu in his complaint says he bought a box of Sakthi curd at the supermarket chain's store in Nanjundapuram on Wednesday evening. He found that it was manufactured on November 14 last year. It was placed in the saleable items section.
The food safety officials inspected the store on Thursday immediately after receiving the complaint, only to find that they had nine such boxes of curd packaged in November. "We have collected samples from the boxes and send it to our laboratory for testing. Once the results are obtained on Monday, cases will be registered based on what is found in the samples," said designated food safety officer, Dr R Kathiravan. "We have accepted the official complaint though and have begun investigations," he said.
The Food safety office has issued many notices and directions to supermarket stores warning them not to sell products that have crossed their expiry date. "Many dairy-based and ghee-based products start spoiling after a certain point of time even if they are refrigerated," said the officer. "They either spoil or fungus starts forming," he said.
They also advised people to always check the date of manufacturing, expiry or best before details before buying a product. "Though a majority of the stores agree to exchange a product bought after its expiry date, many people consume them absent mindedly trusting the store, which in turn ends up affecting their health," said Dr Kathiravan.

Chandigarh health department raids road side Parantha vendors

Chandigarh: According to the directions of the Director Health & Family Welfare, a joint team under the supervision of Dr Rajinder K Sharma, Designated Officer I/c Food Safety Administration, Chandigarh Health Department, Chandigarh consisting of Drug Control Officer Sunil Chaudhary, Drug Control Officer Jasbir Singh, Surinder Pal Singh, Food Safety Officer and Bhaljinder Singh, Food Safety Officer inspected the various vendors selling paranthas in the area of Sector 11, Sector 10, Sector 15 and Sector 16 of Chandigarh.
All the vendors in the said area were inspected and a total of eleven (11) quality control samples and two legal samples were lifted for the purpose of analysis & examination. Also two improvement notices were issued to the vendors who were found not upto the standards. The raids will continue till further orders.

Safe Kerala campaign brings steady change among those engaged in food business

KOZHIKODE: What the numerous awareness drives by health officials couldn't deliver through the campaign held over last year was achieved successfully by the intensive inspection drive carried out by the officials in the first fortnight of the current year.
The regular inspections by the officials to check hygienic quality of food being served at food outlets under the Safe Kerala campaign of the health department have succeeded in bringing steady and positive change among people engaged in food business about the importance of maintaining cleanliness at the time of preparing and selling food items.
The data with the health department shows a decline in the number of violations detected in the shops after the launch of Safe Kerala campaign in 2015. The officials have started crackdown of eatery outlets in 2016 which are found selling unhygienic food items to curb the spreading of communicable diseases.
The officials have served notices to only 44 shops and closed down the six shops engaged in food business during the first round of raid conducted in January 2016. The number in the corresponding period in 2015 was more than 100 soon after the launch of Safe Kerala campaign.
The officials have also levied a sum of Rs 3800 under the prohibition of public smoking so far this year. The team further detected that of the 262 migrant workers employed at various eatery outlets, only 47 of them having health card. The officials have slapped notices under the Madras Public Health Act, 1939, against the shops for preparing the food in the most unhygienic condition and for non-disposal of generated waste which created a safe environment for mosquito breeding.
The health department had carried out the simultaneous inspections through 74 squads to curb the spreading of the communicable diseases. The two district level teams conducted raids in the corporation and Vadakara municipality.
According to the health department, the officials covered 877 eatery outlets which includes 347 hotels, 217 cool bars, 171 bakeries, nine catering centres, five ice factories, nine soda manufacturing units and 119 other types of stalls during the drive heled from January 1 to 15, 2016. In 2015, the health officials here had issued notices to more than three hundred shops, houses and estates for keeping the surrounding unhygienic. The 27,273 inspections held in three rounds in 2015 had covered 25,767 houses, 197 estates and 1309 institutions and shops during the three rounds of site inspections held in 2015.
Junior Health Inspector P G Arunlal who is one among the health squad conducted raids in the corporation limit said that there is a positive change among shop owners. `` We have succeeded in changing the attitude as shop owners are now well aware about the importance of maintaining cleanliness at the time of preparing and storing food,'' he said.
Meanwhile, additional district medical officer Dr Piyush Namboodiri said that the change in attitude is seen very much in the approach of shop owners. `` The number of notices which crossed more than 100 in 2015 during the first round of inspection has now reduced to below fifty which is a positive sign,'' he said adding that the department wish to achieve zero violations through the Safe Kerala campaign. ``The next phase will cover the remaining food outlets that have not been covered in the first phaseday,'' he said.

Food safety priority at Kalolsav

Department has deployed five squads to check adulteration in restaurants, bakeries.
THIRUVANANTHAPURAM: With around 10,000 students and thousands of parents expected to throng the city for Kalolsavam, the food and safety authority is gearing up for checking adulteration at eateries that are supposed to be unusually crowded.
The department has deployed five squads and summoned assistant commissioners from five districts to hold special checks at restaurants and bakeries in Thiruvananthapuram from January 15.
On January 18, cereals and grocery for making food at Kalolsavam will arrive at the venues. The food safety officials have to test the quality before it goes into the plates of contestants.
“The ongoing drive in Thiruvananthapuram city gives special emphasis on eateries around venues. We will now have to issue the license to around seven food stalls inside venues. There will be flying squads to shuttle between venues,” said food safety commissioner T. V. Anupama.
Horticorp will provide fresh vegetables to the venues. Plastic and paper plates will be discouraged at the venues and steel plates by Kudumbashree will be brought to serve food.
“All the restaurants have been asked to serve only boiled water. When more people come, there is a possibility of them adding more water into the curry. Apart from the quality of food, the charging of exorbitant prices can also be reported to us,” an official said.

‘Food adulteration a major cause of increasing prevalence of cancer’

NAGPUR: The increased incidence of lifestyle diseases like cancer can directly be ascribed to consumption of adulterated food, according to experts. The good news is that in case of several foodstuffs, the adulteration can be caught by simple methods.
Marking the National Dietetics Week, city branch of Indian Dietetic Association (IDA) organized a talk on Lifestyle Modification and Food Safety for Better Health on Tuesday at Care Hospital. The next day saw officials from AGMARK giving live demonstration of food adulteration at Women's Technical Education and Research Centre, LAD College, Seminary Hills. These were attended by students of dietetics, nurses and practising dieticians. IDA also organised a Nutri Mela wherein healthy snacks were made available by members for students and members.
"The use of more food colours and pesticides is leading to more cancer cases these days. If it is possible, the best way to ensure your food is unadulterated and hygienic is to grow it yourself. Even when eating out, one must be careful not to choose foodstuffs with colours that are too bright," said IDA Nagpur president Rita Bhargava while delivering the lecture. She also gave the audience several tips to ensure their food was safe and hygienic.
Dr Sharma, Mr Rana and Mr Gurmeet from AGMARK demonstrated how one could detect adulteration. Some examples they gave were using a magnet to separate iron dust from tea leaves, melting ghee and adding some hydrochloric acid and same quantity of sugar (if it turns pink, it has been adulterated with vanaspati) and removal of essential oils from elaichi by soaking in organic solvent
President Rita Bhargava, secretary Kavita Bakshi, treasurer Minal Gujarathi , executive members Kavita Gupta, Chanchal Sahni, Nilima Joshi, Vinita Mehta, Aditi Barve and Sakina Raghib worked hard for the success of the programme.

Make sure food from garden is safe to eat

Experts offer advice to prevent spread of food-borne illness
Gardening delivers produce that is tastier, cheaper and safer than store-bought, right? Well, not necessarily safer.
“There’s always the potential from contamination, whether you grow your own food or buy it at the market,” said Marisa Bunning, an extension food safety specialist at Colorado State University.
“You know more about (food safety) and have more control over it with a home garden, but animals have more access to your yard than with specialty crops grown on farms,” she said. “Not only wildlife, but pets.”
Most food-borne illnesses are infections caused by bacteria, viruses and parasites, according to the Minnesota Department of Health. There’s also a danger from toxins or chemical contaminants. “Many food-borne pathogens also can be acquired through recreational or drinking water, through contact with animals or their environment, or through person-to-person spread,” the agency says.
E. coli and salmonella are the most frequently reported food-borne illnesses. Symptoms include diarrhea and vomiting, abdominal cramps, fever and joint pain. Severity depends upon an individual’s health, but children and the elderly comprise the highest risk groups, according to the Centers for Disease Control and Prevention.
Food safety specialists recommend guarding against contamination from field to fork. That means minimizing hazards in the garden and being careful when handling food in the kitchen.
Some guidelines:
• Choose the right garden location, especially in cities, Bunning said. “Avoid areas near septic tanks or runoff and aerosols from contaminated irrigation systems,” she said. “Septic tanks or reservoirs could be leaking.”
• Use only potable water for your produce. Groundwater from wells (the deeper the better) is generally safer than water from streams or ponds. Drip systems are better than sprinklers for avoiding direct water contact with edibles like leafy greens growing above the soil.
• Manage manure and compost properly. Age it from 2 to 4 months so beneficial bacteria can kill out the harmful types. Mix compost frequently, and ensure that it reaches temperatures of 140 degrees or more for prolonged periods to reduce or eliminate E. coli contamination.
• Clean tools and yourself after gardening. “Keep pets out of the garden, use a high-quality water source, ensure that people in the garden are not sick, and that there’s no human waste on your hands or person,” said Kurt Nolte, an agriculture agent with the School of Plant Sciences at the University of Arizona.
• Wash all fruits and vegetables before eating them, especially if serving them raw. Washing removes dirt and bacteria as well as residual pesticides. Cooking kills many pathogens, and promptly refrigerating leftovers will slow the growth of harmful bacteria.

FSSAI issues new norms for food product imports

"..No food article shall be allowed to be cleared from the custom unless it has 60% shelf life at the time of its clearance from the customs.."
Food items which have at least 60% shelf life or more will only be allowed to import, the food safety watchdog FSSAI said in its new guidelines, a move aimed at checking dumping of products.
The Food Safety Standards Authority of India (FSSAI) also said that no one can import any food product without having an import licence from the central licensing authority and at the same the importer should also be registered with the Director-General of Foreign Trade (DGFT).
"..No food article shall be allowed to be cleared from the custom unless it has 60% shelf life at the time of its clearance from the customs..," the food safety regulator said in its notification.
Shelf life means the period between the date of manufacture and the best before or expiry date whichever is earlier as printed on the label.
FSSAI also said that if any food importer attempts to import unsafe and prohibited food or food from prohibited sources, directly or indirectly, including re-channelling, re- packing etc, his or her licence could be cancelled.
All India Food Processors Association President Amit Dhanuka said this brings more clarity and transparency in the regulations.
"We welcome this move now there is more clarity for importing the packaged food products. Besides, this move will also stop bringing expired products to the country and try to make it a dumping ground," Dhanuka told PTI.
In addition to respective directions, the regulator also eased the import clearance process by introducing risk-based criteria for clearance rather than sampling of consignments.
FSSAI also further clarified the labelling norms and has permitted importers to affix logos as prescribed by the food safety norms on arrival of the food products at the custom bonded warehouses.

FSSAI lists guidelines to stop sub-standard products from entering the country
New Delhi, January 14:
The Food Safety and Standards Authority of India (FSSAI) has listed stricter norms for licensing, documentation, packaging, labelling as well as suspension or cancellation of food importers’ licences, to stop sub-standard products entering the country.
The FSSAI, on Thursday, came out with a notice for operationalisation of the Food Safety and Standards (Food Import) Regulations, 2016 for food importers.
Among the various documents that the food importers will need to submit along with the application for clearance, include recall plan and declaration of regulatory status of food in the county of origin.
The documents must also include submission of declaration that the food is permitted for human consumption from the country of origin as well as the status of regulation of the product in the location of the parent company (if the parent company is located in another location from country of manufacture).
Food importers will also have to submit the list of transit countries through which the imported food product has transited before reaching India as well as the temperature profile report in case the food item is required to be shipped in cold chain conditions.
Storage conditions
In addition, if food items require special storage conditions, the authorised officer will verify the true storage conditions before clearance from air cargo operator or shipping operator and if those special storage facilities were available in the storage facilities.
Besides, outlining labelling norms, the regulations also offer a review process for aggrieved food importers.
The guidelines for clearance of imported food by the food authority include that the food importer will need to be present at the customs area to facilitate inspection and drawing samples.
“In the event of the food importer or his Custom House Agent not being present to facilitate the inspection and sampling in spite of two opportunities having been granted, the Authorized Officer shall refuse to grant further opportunity for inspection and sampling of the food consignment. Any further appointment in this behalf may be granted by the CEO or his Authorized representative after levy of suitable penalty on the Food Importer as may be prescribed by the Authority from time to time,” the regulations states.

Study says food MNCs' standards inconsistent

Global food and beverage biggies seem to be applying lower or no standards, and less responsible practices in unregulated markets, like India, and may not be following consistent standards across all markets of operation. This could explain the recent run-ins which food companies, particularly Nestle, had with regulatory agencies in the country with regard to labelling requirements last year with its best-selling brand, Maggi instant noodles.
Also, top food and beverage companies are doing far too little to tackle under-nutrition, and handling the scourge of obesity through diet-related strategies does not figure on their agenda. These are some of the worrying findings by the Netherlands-based independent non-profit organization, Access to Nutrition Foundation, which ranked world's 22 largest food and beverage manufacturers, including Unilever, Nestle, Danone, Coca-Cola and PepsiCo.
The rankings were done on nutrition policies, practices and disclosure including responsible advertising, claims and labelling requirements. The index is funded by the Bill & Melinda Gates Foundation, Wellcome Trust and Children's Investment Fund Foundation.
The 'Access to Nutrition Index 2016' is led by Unilever, followed by Nestle and Danone, with no company scoring over 6.4 out of a total score of 10. The research rates food and beverage companies with respect to policies and practices followed globally, including India, but does not give specific ratings for countries or regions.
Explaining the significance of the research, Inge Kauer, executive director of Access to Nutrition Foundation that develops and publishes the index, told TOI, "Not only does the benchmarking help industry, nutrition experts and civil society to measure companies' contributions to improved nutrition against best practices standards, investors in F&B companies are increasingly taking into consideration the access to nutrition index (ATNI) rankings, while it also enables the industry to improve policies so as to help consumers around the globe eat better food."
"Nestle India products conform to international quality standards. While Nestle India has already pioneered the Nutritional Compass on its product packs, it has also started displaying GDA (guideline daily amount) labellings on some of the products and will include more and more products with GDA labelling in due course," a company spokesperson said.
The 2016 index says while some companies have taken positive steps since the last index in 2013, the industry as a whole is moving far too slowly.
"Certain companies, particularly those headquartered in the US (including General Mills, Kraft, Heinz, Kellogg's and ConAgra), seem systematically to apply lower or no-standards and less responsible practices in unregulated markets or those with low levels of regulation. This is a cause for concern. Companies should help to tackle global nutrition challenges not because they are forced to by regulators (or the threat of regulatory action) but because they can make a substantial contribution to public health," the report says.
In a pilot study done earlier, the organization had studied companies including Coca-Cola, Nestle, Unilever, PepsiCo, Britannia, Mother Dairy, ITC, and Parle.
"By 2030, half of world population would be overweight and bulk of that would be in developing countries... it is something that is getting attention now. Our hope is that the companies really start to focus on this more, as it is not only in their social responsibility but also in their financial interest, as consumers worldwide are increasingly demanding healthier foods," she added.
With reference to MNCs, in India, Kauer said it is essential they offer healthy and affordable products but also have strong labelling so that consumers can make responsible choices. It is important to have responsible marketing for adults, and children, and list down information in the label which is correct and clear, and their nutrition claims are correct and if there's any misunderstanding and complaints, companies need to address it immediately.
Given their global reach, food and beverage companies have a powerful role to play alongside governments and international organizations in helping to tackle this crisis, and should forge innovative partnerships.

Jaggery cauldrons fired up for a sweet Pongal

Jaggery May Have Lost Its Place To Refined Sugar in Tamil Nadu, But Pongal Serves As A Reminder Of This Health Food Tradition Pongal, old-timers say, gets sweeter by the day. Going by the scale of jaggery preparation in various districts, the adage seems to be on the dot. An integral part of Pongal celebrations is the preparation of sweet pongal or ‘Sakkarai Pongal’ on Pongal day, along with rice and jaggery cooked in a new pot.
As the demand is expected to surge in the final days of Pongal, jaggery-makers in south and central districts are preparing the item from crushed sugarcane juice by boiling it in huge cauldrons.
Production units function with a team comprising labourers involved in cutting sugarcane from the fields to those toiling near the cauldrons.
A N Shantharam, a jaggerymaker of Madurai, says Pongal and jaggery are intertwined.
“Sakkarai Pongal’s taste depends on the amount of jaggery we add to the rice. For every kg of rice, a kg-and-half of jaggery should be added,” he says.
M Saravanan, a sugarcane farmer and unit owner at Kottaimedu village, near Alanganallur, says jaggery production commences by January and continues till March. The preparatory works commence in December. The price of jaggery is but steadily falling, he says.
Last year, 10-kg bags were sold at `550-600. But the prices are presently between `400–450.
Finding farm hands is a real challenge at jaggery units, Saravanan adds. His team is from Udumalaipet.
“Once upon a time, jaggery was an important sweetener.
Sadly, it has shrunk to be a commodity thought of only during Pongal,” says K A Kamaraj, joint secretary, Tamil Nadu Jaggery Merchants Association. Kamaraj says jaggery is a healthier option compared to refined sugar. M Durga Devi, Assistant Professor of Food Products at the Indian Institute of Crop Processing Technology stated that jaggery is unrefined sugar containing sucrose and minerals like iron and potassium. Sugar is immediately absorbed in the blood whereas jaggery, having long chains of sucrose, undergoes delayed metabolism.
“So, diabetics are advised to take jaggery and not refined sugar,” she said.
The adulteration of jaggery, using sugar and dangerous chemicals, is becoming a concern. Jaggery-makers use refined sugar with sugarcane juice to increase colour. Adulteration of palm jaggery with sugar syrup has been reported in Tiruneveli and Tuticorin districts. During jaggery preparation, lime (calcium hydroxide) is added to clean the sugarcane juice. Of late, baking soda (sodium bicarbonate) or sulphur dioxide is used. However, adulterants such as super phosphate and chemical dyes are being used widely. The jaggery made in southern districts like Madurai, Theni, and Virudhunagar is relatively pure as they mostly make ‘Malayala Urundai’ (pure jaggery) for the Kerala market, Kamaraj says.

Supreme Court asks govt lab: Is Maggi noodles safe for consumption

The court said the entire exercise has to be carried out within eight weeks and posted the matter for April 5.
The Supreme Court on Wednesday sought a conclusive report from government laboratory in Mysore on whether Maggi noodles is safe for consumption and if lead and glutamic acid in it are within permissible limits.
Underlining that Maggi is consumed mostly by youngsters, a bench led by Justice Dipak Misra asked for clarifications from Mysore lab regarding content of the instant noodles to adjudicate the appeal made by the Food Safety and Standards Authority of India (FSSAI) against an order lifting the ban.
“We have perused the test reports. We would like Central Food Technological Research Institute, Mysore to apprise this court on two aspects, whether the test report relating to lead and glutamic acid are within the permissible parameters and to clarify that those are within parameters prescribed under the Food Safety Act,” it said.
The order was passed after the court went through two communications received from the Mysore lab, which had carried out the test about the monosodium glutamate (MSG) content in the samples.
While Nestle India claimed that the lead content was within the permissible limit prescribed under the Food Safety Act, the Centre said there was a need for comprehensive findings of all other parameters.
Making it clear that it was not passing any interim order, the bench said there was a need for the clarification. It added the institute in Mysore shall also give clarification on the test relating to glutamic acid. The bench said additionally if the institute feels more samples were necessary, it can requisition the same from the authority concerned.

Level of lead in Maggi within permissible limit: Mysore lab to SC

The Central Food Technological Research Institute in Mysore, which examined Maggi samples, told the Supreme Court on Wednesday that the level of lead in the instant noodles was within permissible limit and sought more samples to give its findings on monosodium glutamate (MSG).
A bench of Justice Dipak Misra and Justice N V Ramana perused the report which said the level of lead in Maggi samples was found to be at 2.5, which Nestle's counsel Harish Salve claimed to be within permissible limits.
The Centre, however, pointed out that the laboratory had not conducted comprehensive tests and directed it to file report on MSG within eight weeks.
“We know that it is being consumed mostly by the young generation and we are also concerned about their health. But we have to trust the lab. Let the lab clarify on the issue,“ the bench said.
The lab said it could not conduct other tests as the quantity of samples was insufficient. The court asked the lab to approach the Joint Registrar of National Consumer Disputes Redressal Commission (NCDRC), who was appointed as Commissioner by NCDRC, to get more samples.
The court, which had on December 16 stayed class action suit proceedings initiated against Nestle, posted the case for hearing on April 5. The Centre has filed a class action suit before the Commission against Nestle for alleged unfair trade practices and misleading advertisements. It has sought Rs 640 crore in compensation. The NCDRC on December 9 ordered tests on 16 additional samples of Maggi noodles by a lab in Chennai. The Supreme Court, however, modified the NCDRC order and entrusted the task of examining the samples to the Mysore lab

Fresh food might be less healthy than you think - and it's bad news for Chipotle

While your fresh salad is probably packed with nutrients, it may also contain some elements that are far less safe.
Most people assume inexpensive, poorly-prepared meat is responsible for most food poisoning cases. However, fresh produce accounts for about half of the 48 million illnesses in the US per year that can be traced to contaminated foods, reports CNNMoney in a recent series called Raw Ingredients.
In widespread outbreaks, produce is typically contaminated in the fields - either through contact with animal feces or human feces from workers relieving themselves, as in a recent case of a contaminated cilantro. However, contamination can occur if someone at any level on the production chain handles produce with contaminated hands.
Washing the produce is the obvious and essential way to eliminate bacteria, leading to the rise of "triple-washed" items. However, unlike most processed food, fresh produce is not always microwaved or cooked - two of the most foolproof methods for killing bacteria.
The issue is complicated by the fact that importing foreign produce is extremely common. Nearly 50% of fresh fruit and 20% of fresh vegetables are imported from other countries, some with standard food safety practices that differ from those of the US.


The Food Safety Modernization Act, passed in 2011, helped introduce new preventative food safety measures, especially as they relate to foreign suppliers.
However, many believe the FDA lacks the resources to effectively enforce safety measures like the Modernization Act. Food safety expert and chief executive of IEH Laboratories Dr. Mansour Samadpour told CNNMoney that the FDA required a "minimum [of] 10 times more resources" than what it currently had to do its job correctly. The FDA itself told CNNMoney it needed a budgetary increase of $170 million.
All these factors can combine to make eating "healthy" a sometimes risky proposition in the US.
This counterintuitive fact - that uncooked fruits and vegetables are some of the most likely foods to make you ill - is something that has made the recent Chipotle E. coli outbreak so hard for customers to swallow.

Chipotle is rolling out new safety measures, such as preparing ingredients in a central kitchen and taking extra steps to kill germs, such as dipping onions in boiling water and adding cilantro to rice when it is steaming hot to kill some of the microbes on the cilantro. However, because the food is prepared fresh and most produce is uncooked, there's no silver bullet that can definitively kill germs across all stages of production.
In many ways, Chipotle's recent outbreak isn't as surprising as it first seems. Eating fresh carries greater risks than chowing down on fries from McDonald's - at least when it comes to food poisoning.
