New study shows that groundnut immunity to aflatoxin could be within reach thanks to a double-defence approach

Aflatoxin is a hidden burden. It is spread by a deadly pathogen affecting five billion people across the world, but rarely making headlines. It is not carried by birds or mosquitoes, but hidden in staple foods like maize and groundnut. Common moulds, Aspergillus fungi growing naturally on food crops, can produce poisons called aflatoxins, which have serious effects on health, suppressing immune systems, hindering child growth and even causing liver cancer. Taming this fungal threat with a biotechnological double-defence line offers hope to controlling this toxin.
Using innovative biotechnology approaches, researchers have developed groundnuts free from aflatoxins thanks to a double-defence line. By producing small proteins called defensins, these groundnuts can stop the deadly fungus from propagating and infecting. At the same time, the groundnut seeds also emit gene-silencing RNA molecules to help shut down the synthesis of aflatoxin by the fungus. When exposed to the aflatoxin-producing moulds Aspergillus flavus and A. parasiticus over three days, the double defence groundnut seeds remain untouched, unlike the green and mouldy petri plates of other tested groundnut varieties.
This breakthrough research from the International Crops Research Institute for the Semi-Arid Tropics (ICRISAT), part of the CGIAR, and their US partners (US Department of Agriculture, Louisiana State University and Donald Danforth Plant Science Center) has just been published in Plant Biotechnology Journal (doi.org/10.1111/pbi.12846). In the coming years, this could lead to significant reduction of aflatoxin contamination in farmers’ fields. This revolutionary approach applies not only to groundnut but also for other important crops like maize, cotton seed, chilli, almond, pistachio etc.
This will radically improve food safety and security especially in Africa and Asia, and avoid thousands of tons of fungi-affected crops being discarded every year or being consumed with unacceptable levels of the toxin.
Aflatoxin impacts the health and livelihoods of billions
Aflatoxin is a very acute public health issue, with five billion people exposed to this toxin across the world. The toxin-producing moulds thrive in poor soils, droughts and damp storage conditions, which means many communities in the drylands are at high risk.
When food contaminated by aflatoxins is ingested in large quantities, it can lead to deadly poisoning with dramatic cases reported in the last 50 years, affecting both humans and livestock. For instance, in Kenya in 2004, a drought year, more than one hundred people died after consuming toxic homegrown maize.
The exact annual death toll due to aflatoxins is however largely underestimated as they have a more insidious long-term impact on health and nutrition. Small amounts ingested daily cause chronic poisoning. Aflatoxin reduces immunity and stunts child growth. High levels of aflatoxin ingestion could lead to numerous cancers, including the deadly liver cirrhosis which is on the rise and kills over 600,000 people every year. Public health experts say that one liver cancer out of four could be due to aflatoxin exposure. A WHO study on estimated disability adjusted life year (DALY) losses from major foodborne illnesses put aflatoxin as top threat, with a societal cost six times higher than peanut allergy [food allergies in the US cost over $20 billion a year].
Developed markets like the USA or Europe have set up stringent food safety norms. In USA, food containing more than 20 parts per billion (ppb) of aflatoxin cannot be sold or exported. For the EU market, it is ten times lesser (2 ppb). This has had tremendous impact on trade, with traditional groundnut-exporting countries like Senegal or Malawi being shut out, resulting in millions of smallholder farmers losing their livelihoods.
Unfortunately, peanuts rejected for export find their way into the less-regulated local markets in Africa and Asia, exposing local populations to acute contamination. A recent study, conducted over three years, on aflatoxin levels in peanut butter sold in Zambia, found that 50-80% brands were highly contaminated, way over the US limit, reaching up to 10,740 µg/kg.
Aflatoxin is a very serious concern in India too. An ICRISAT study recently revealed that in southern India, aflatoxin levels in peanuts may be 40 times higher than allowed by Indian food safety limits. The Central Food Technology Research Institute, Mysore, also found that all samples of UHT packaged milk tested were contaminated with aflatoxin, with 38% having levels above the food safety limit. This shows that the poison finds its way through the food chain, for instance, if dairy cattle are fed with contaminated feed.
Where to start to prevent aflatoxin contamination
The fungi Aspergillus flavus and A. parasiticus, can stay dormant in the soil for years and infect many important food crops in the fields, such as maize and groundnuts, especially during drought and heat stresses and insect damage. Contamination also happens post-harvest when the grain is stored in unsuitable conditions (hot, humid and not well aired) that encourage fungi to produce the toxin.
Farmers and scientists have tried to reduce aflatoxins in many ways, trying to develop aflatoxin-resistant varieties, improve quality control and post-harvest handling or biocontrol applications with harmless Aspergillus strains to compete with toxic ones in the soil. But these strategies have had very limited success in poor countries, especially for groundnut.
ICRISAT researchers suggest that ideally, the fungal infection should be halted right at the field.
Dr. Pooja Bhatnagar-Mathur, lead author and ICRISAT senior scientist, explains, “We have analysed the way the fungus propagates through the pods in groundnut. By looking at what exists in nature, we then devised biotechnology tools to develop groundnuts that are immune to pre-harvest Aspergillus infection, and are also able to block aflatoxin production in the field as well as under post-harvest storage. ”
Dr. Kiran Sharma, Principal Scientist and co-author of the publication says, “I have been working on aflatoxin mitigation for years and could not see much progress until now. Recent advances in biotechnologies like RNAi technology and genetic transformation offer great potential in developing crops that can resist the infection and growth of the aflatoxin-producing fungus in the field and stop the production of aflatoxin itself.”
The co-author Dr. Deepak Bhatnagar, Director of the USDA South Regional Research Center and a renowned aflatoxin biosynthesis codebreaker fifteen years ago adds, “The strength of this research has been to tap into previous research to create a double-defence line against aflatoxin: first to stop seeds being infected by the fungus and then prevent the fungus from producing aflatoxins.”
Proof of concept to develop aflatoxin-immune groundnut
To boost the groundnut’s immunity against the fungus, researchers developed peanut lines able to produce small peptides known as defensins, that are often produced as immune responses to pathogens by some plants (but not usually groundnut), animals and humans (our eyes produce such immunity molecules). Working together with Dr. Dilip Shah from Donald Danforth Plant Science Center, defensin genes from alfalfa (a protein-rich fodder legume) and the Mediterranean clover were transferred into the DNA of an Aspergillus-susceptible peanut variety (named JL24) widely grown in India and Africa. These new groundnut lines could then have a robust innate immune response against different strains of Aspergillus flavus.
The second approach, called Host-Induced Gene Silencing or HIGS, uses a naturally occurring biological mechanism where plants and pathogens often exchange small nucleic acid molecules, RNAi, during the infection process. It is somewhat like a vaccine where we inject bits of the pathogen in our body to later initiate a strong immune response. In collaboration with researchers from the USDA’s Food and Feed Safety Research Unit and Louisiana State University, ICRISAT researchers were able to transfer into the groundnut, specific small RNA molecules from Aspergillus fungus that are involved in the aflatoxin biosynthetic pathway, so that the groundnut seeds produce these RNA molecules during fungus attacks. This would inactivate the target genes in the fungus that are responsible for aflatoxin synthesis.
Both approaches show great heritability (tested for over three generations) and remarkable levels of aflatoxin resistance. Using a highly sensitive detection tool (High-Performance Liquid Chromatography), researchers could detect hardly any trace of aflatoxin (below 1 ppb) after three days of fungus inoculation, compared to the control seeds that accumulated over 3000 ppb.
This study shows that groundnut lines infected with the fungus, in conditions well above the field reality, were able to suppress toxin levels to below detectable limits. In a near future, ICRISAT researchers plan some extensive field tests with partners from Asian and African breeding programmes to cross these very promising aflatoxin-resistant lines and validate their agronomic performance according to biosafety regulations.
The innovative research demonstrates a very tangible proof of concept to incorporate high aflatoxin resistance within groundnut breeding programmes. Further study of these aflatoxin-free lines will also help better understand the molecular mechanisms involved, which can be transferred to other crops. This creates a clear roadmap to tame these very harmful food contaminants at their source.

Hard selling of fad diets and vegetable juice: Why are we replacing the fun and happiness in food with fear?

The release of a video called ‘What the Health’ and the general panic in its wake about how we are all eating ourselves into cancer, diabetes and early death has gone viral. It has also spawned a few dietary cousins including one that compels you to drink only vegetable juice and all this effort will make your insides squeaky clean.
What’s bad for you? Everything. We are told that bread (the staff of life), salt (of the earth and worth it), sugar (hi honey) and milk (of human kindness) are foisted upon us by a gigantic conspiracy of the pharmaceutical industry, the egg and dairy industry and the meat and poultry mafias in conjunction with government connivance so that it is a win-win for all … except the consumer who is designated to keel over and become a statistic.
We are all going to die. Right. There is no running away from that solitary reaper. And food is a happy element in our lives. But we are being so easily robbed of that joy.
We are not stupid. Just as we know that smoking is bad for us we also know that processed meats cannot be good. We also know through sheer logic that taking in marbled red meats and oil soaked fast foods will supersize us. Nothing surprising there. If we overdo fried foods and alcohol and eat cream in its many wondrous forms it will clog our arteries.
The scaremongers have based their findings, though, on American portions. The rest of the world eats sparingly in comparison. You know how much you need so if you ignore that simple factor there will be a price to pay. The mountain of French fries, the dozen bacon rashers, salami, pastrami, etc in one serving are about the same as what we would consume as mere mortals in a week. Ergo, the 18% risk is whittled down to a little over 2%.
By the same token it is impossible to scientifically evaluate how a single food damages the human body. No one has done any authoritative study with a dedicated group of volunteers eating only, shall we say, cheese and figured out how it affects them as compared to a group being given placebos. Therefore the premise itself is flawed.
The 2% risk factor is further reduced by the difference between a daily rational intake and an infrequent devouring of any of these dining table adversaries. If i eat a few rashers on a holiday morning or fry an egg or two on toast to go with them, the skies will not fall. The odds would fall to half which is 1%.
There is no gainsaying the fact that spurious foodstuffs and lack of a common yardstick for quality and safety contribute to the illnesses listed in these current denouncements. If you stop eating plump chickens which are hormonally enhanced that makes sense. If you scratch off dyed fruits and vegetable or animal products treated with antibiotics to be made meatier and go organic no one would accuse you of being a ‘fraidy’ cat.
The same measure can be applied to anything that is suspect. Add to this protective decision an up in hygiene so that your cast-iron stomach is not tested because you are avoiding contaminated roadside foods, stale edibles and post sell-by products and you reduce your risk to 0.5%. Add to that an awareness of spurious colourings, injected fruits and other imaginative food adulterations and the risk dwindles even more.
Add to the fraction of the percentage the grimness and joylessness of life without your culinary delights and what is left to enjoy. For years fad diets wrecked happiness and tossed us on this sea of misery. Now, it is being fine tuned with very little scientific fact to make us wallow in calorific guilt. The stress of denial is tangible.
In ‘What the Health’ the visuals compare eggs to smoking five cigarettes and milk and dairy to pure poison. The trick lies not in scare stories and clever manipulations of the mind but in moderate and judicious consumption.
You will live longer and be happier for it.

As per the orders of Designated Officer, Food Safety Administration, a joint team of Food Safety Officers was constituted for conducting special raid in the area of Daria and Sector 30 of UT, Chandigarh. In view of the reports of illegal and unauthorized sweets shops mushroomed due to the coming festive season, a special drive was conducted in the said area. The team inspected various shops in Daria and Sector 30 of UT Chandigarh and five samples of sweets consisting of three samples of Khoya Burfi, one of Kalakand and one sample of Gurpara sweet were lifted for analysis & examination. In addition to this about 5 quintals of sweets were destroyed under Epidemic Act as they were being prepared under highly unhygienic and unsanitary conditions and were using prohibited food colours. Along with this three challans were issued to the vendors who were operating without having food licence and were working in un-hygienic conditions. The Food Business Operators were also instructed to keep hygiene and quality standards as per Food Safety & Standards Act, 2006 and were advised not to use any prohibited colours in preparation of sweets and keep the food articles covered.

Private lens on Diwali mithai- Tupudana lab wins food police badge


Here's some great news to sweeten your Diwali.
A private laboratory in suburban Ranchi has been granted accreditation by the Food Safety and Standards Authority of India (FSSAI), which will allow it to put all those festive mithaiunder the adulteration scanner, besides testing routine agricultural produce.
Sun-Tech Laboratory in Tupudana, around 15km from the heart of the capital, will offer the authorities, individuals and organisations an alternative platform to screen the quality of edible items. It is arguably the only private lab in the state to earn the FSSAI tag and is expected to unburden the lone state-owned facility in Namkum.
On Mahashtami last month, civil contractor Rahul Kumar had found worms in a packet of figpedas bought from a prominent confectionery shop, Rajasthan Kalewalaya, in Kutchery. The sweets were priced at Rs 1,000 a kilo.
The district administration acted after Kumar complained to deputy commissioner Manoj Kumar. Food inspector K.P. Singh on Thursday collected samples for testing.
The report is expected in a few days.
Now, with Diwali round the corner, adulterated sweets and other food items in the market cannot be ruled out. Unfortunately, the decade-old state lab is mired in problems, including inadequate infrastructure and acute manpower crunch. This is where Sun-Tech hopes to step in.
Preeti Varma, quality manager and in-charge of the Tupudana-based lab, said they were recognised by the National Accreditation Board for Testing and Calibration Laboratories (NABL) since 2008 and also the Bureau of Indian Standards (BIS), but an FSSAI tag was a matter of pride.
"The gazette of our accreditation was published by FSSAI on September 14. However, we received an intimation on email only in last week of last month. The accreditation has to be renewed every two years," she said, adding that Sun-Tech would be the first private lab in the state to conduct food testing.
So long, the Tupudana facility had been screening building and road construction materials, and minerals in water and soil, among other things.
"Earlier, even if we tested food, the report wouldn't have had legal sanctity. Now, that problem is over. If someone is launching a new edible product, our report can be used for quality labelling. We shall further be able to test samples of food for suspected adulteration," Varma said.
The quality manager informed that they currently had six food analysts on board and testing charges would depend on the nature of profiling one required.
"An adulteration test can start at Rs 500 and go up to over Rs 10,000 if the range of verification includes bio-profiling, component test, nutrition test, label claim, shelf life, inorganic contaminants, animal tissue content and so on," Varma said, stressing that they were empanelled to conduct quality check on all products being sold through the military canteen stores department.
Namkum food lab analyst Chaturbhuj Meena confirmed that Sun-Tech had indeed won FSSAI accreditation, but couldn't say if it was a first in the state.
"We are yet to understand all the parameters under which the private agency is empowered to conduct tests," Meena said when asked if the accreditation would lessen the burden on the state lab.

Things to keep in mind while buying fresh meat

Meat is a rich source of proteins. Apart from proteins, it also contains an abundant amount of Vitamin B-complex (Vitamin B1 to B12), Vitamin C, iron, calcium, phosphorous and Omega 3 fatty acids that are required to maintain the nutrition balance in our body.
Here are tips to help you buy the right stuff:
Check the colour:
  • The colour of the meat says a lot about its freshness.
  • Poultry meat must be white or light pink.
  • Check that the meat does not have a green tinge, especially under the wings.
  • There should not be any bruises or blood clots on the surface.
  • In the case of red meat, it must be bright red in appearance.
  • If the meat is vacuum packed, it may appear slightly brown.
  • This is also good quality meat and will last longer in the refrigerator.
Check the odour:
  • Poultry meat is generally odour-free but may have a slightly meaty odour on rare occasions.
  • The smell of red meat is very specific to the type of meat and there should not be any variance from the typical smell of a goat or lamb.
  • One should make sure there is no foul or pungent odour to any kind of fresh meat being purchased.
Check the texture:
  • For poultry, the texture should be firm and the muscle fibres must be clearly visible.
  • Furthermore, the meat must not be slimy and if you touch it, the fingers should be dry rather than sticky.
  • The meat should not appear translucent and watery when it is cut.
  • In addition,in the case of red meat, it should not fall off easily when it is being cut.
  • The fat should not be yellow in colour, as it indicates that the meat is not fresh.
Prefer skinless:
  • The skin of the meat has saturated fatty acids, which are high on calories and can potentially increase the risk of cardiac ailments.
  • Hence, it is always recommended that meat is consumed after removing the skin.
Ensure food safety standards:
  • It is absolutely essential that every packaged meat product has a Food Safety and Standards Authority of India (FSSAI) certified label on it to ensure that all food safety standards are met.
  • This is also the primary reason why you should avoid buying meat from a butcher shop, since there is no guarantee of food safety.

Adulteration of food: Three dists named as sensitive

Jaipur: Alwar, Bharatpur and Dholpur have been identified as sensitive areas in terms of sale of adulterated food. The health authorities will conduct strict surveillance in the three districts for preventing sale of adulteration food ahead of Diwali.
In an order issued by the health department, health director Dr VK Mathur mentioned that the three districts need more intense monitoring for preventing sale of adulterated food such as mawa and other milk products.
Besides, this Diwali, the health authorities will take help of the police to intercept vehicles coming towards Jaipur suspected to be carrying adulterated mawa, milk and other food items.
Health department issued directions to food safety authorities and officers to ensure strict surveillance on roads and highways.
During festive season, the city witnesses increased demand of mawa and other milk products. Since, the city has limited supply of such milk items, the traders bring it from nearby areas of the city. But, it is suspected that adulterated mawa and other food products also been supplied to the city to meet the increased demand. Aiming to check influx of adulterated milk products to the city, the health department has directed its officials in the city to conduct strict surveillance of such vehicles coming to city.
In an order issued by health department, Dr Mathur mentioned that the officials take help of the police to intercept such vehicles.
The health department has launched a campaign against adulterated food which will continue till October 18.
Besides, focus will also be on cleanliness of sweet shops, restaurants and also on the employees working in such shops and hotels. Health department's officials will inspect sweet shops and restaurants for cleanliness. The officials ask owners for maintaining basic hygiene practices in sweet shops and restaurants.
Every year, health department launch a campaign against adulterated food. Under the campaign, the health authorities collected samples of food items and send it for test in government-run laboratories. If samples fail quality test, they present the case before local court against the accused trader.

Your cream biscuit is a sugar & fat bowl

The sugar content in the cream biscuits that you and your child often relish may have more than the recommended quantity. Similar could be the case of the fat content as well, revealed an in-house study by city-based consumer body, Çonsumer Education and Research Centre (CERC).
The content details on biscuit packets were also found inaccurate.
Experts say despite a rule that the content in food products should be standardised, national food regulator, the Food Safety and Standards Authority of India (FSSAI), has not come up with any such norms so far.
CERC tested samples of 10 brands of cream biscuits that were filled and/or coated. In filled biscuits, cream, jam or chocolate is sandwiched. Coated ones may be covered with chocolate or caramel.
In six of the 10 brands tested, the fat content was above 20g per 100g of biscuit. The National Institute of Nutrition (NIN), Indian Council of Medical Research, has recommended desirable visible fat intake per day of 20g for both men and women. Similarly, all the 10 brands contained more than 25g sugar per 100g biscuit.
It was also found that the actual fat content in at least three brands of biscuits was significantly higher than what their labels claimed. Another fact that came to the fore was that higher price did not ensure better quality — the two least expensive brands fared the best on the health parameters of the rating, according to the study.

ADULTERATION : HC directs govt to appoint Food Safety Commissioner in 6 weeks

The state counsel further told the court that there are seven mobile labs- three for Kashmir, three for Jammu and one for Leh. The court however sought a fresh status report on functioning of these labs.
The High Court on Friday directed the government that Food Safety Commissioner should be in place within six weeks.
Hearing a Public Interest Litigation against food-adulteration, a division bench of Chief Justice Badar Durrez Ahmed and Justice Alok Aradhe held that the whole affairs of the commissioner’s post shall be completed within six weeks.
The direction came after Amicus curie, Bashir Ahmed Bashir submitted that in keeping with earlier court order, the government couldn’t create a post in 37 days.“ What kind of mockery is this? How are they working?,” he said.
Additional Advocate General MI Dar stated that the proposal for the creation of post has been cleared by Finance Department but the department has not cleared the proposal of additional staff.
The court directed Finance Department to clear the proposal of additional staff within a week. Expressing its dismay as to why the Food Safety Commissioner was not appointed yet, the court said: “How the government is working without its staff. “The proposal be placed before cabinet for final approval and be processed immediately,” it said.
The state counsel informed the court that before an application could be made for accreditation under National Accreditation Board for Testing and Calibration Laboratories (NABL) for state’s two food testing labs, imparting of training to food analysts was a must.
He said application for accreditation was sent to the board and two food analysts were deputed for training, one for Kashmir and another for Jammu. He also said that for checking the labeling of the products, special drives have been undertaken in accordance with Food Safety and Standard Act.

Beware! Fortified foods not for all

Nutritionist Sujatha Stephen says, “Fortification is recommended because medical supplementation has low compliance levels."
Hyderabad: The Food Safety and Standards Authority of India (FSSAI) plans to introduce doubly fortified wheat flour and salt. 
Such fortified foods are not intended to be consumed by everyone; they are meant only for those who suffer from deficiencies of iron and calcium. Fortified foods are recommended to individuals whose deficiency is not managed by dietary supplementation due to the insufficient absorption of minerals. 
The food industry, however, is resisting the FSSAI’s latest move because companies will have to appoint specialised personnel and procure additional raw materials and standardised chemicals for the fortification process. According to an internal audit conducted by FSSAI officials, the response received from the food industry is not encouraging. 
Nutritionist Sujatha Stephen says, “Fortification is recommended because medical supplementation has low compliance levels. 50 percent of pregnant women are anaemic and highly deficient in vitamin D, and so the government is keen on fortification.” She says that fortified foods are not meant for people who have a balanced diet consisting of vegetables, whole grains, legumes, green leafy vegetables, lean meat, fish and dairy products. “Fortified foods are only meant for those who have been diagnosed with deficiencies, and whose deficiencies have not been controlled despite supplementation by natural foods.” 
Fortification is carried out by adding chemicals to food products. Some nutritionists believe that fortification does not provide any real benefit. A senior nutritionist, on condition of anonymity, says, “Chemicals are used for fortification. It has yet to be studied whether the iron and other minerals are absorbed by the body. These foods have side-effects such as weight gain and an increase in the content of minerals which are already adequate in the diet. It is important to restrict the distribution of fortified foods to only those who have deficiencies.”
At present, there is much confusion, even among government officials, whether double fortification will be implemented or not. A senior official from Telangana says, “Government orders have been issued but it is not clear how they are to be implemented and which categories of food actually require fortification. There is a lot of confusion regarding the people who need fortified foods. Identification will require coordination between healthcare workers and the food industry.”

Your Diwali sweets may land you in hospital

Mohali: Beware! Those mouth-watering Diwali sweets you are about to savour could be adulterated. A health team on Wednesday raided factories manufacturing sweets ahead of the festival of lights and found chemicals or artificial colours being used to give a rich golden colour to 'ladoos'. The team also found cockroaches roaming in dough being prepared to bake items.
Synthetic chemical colour is a non-food grade item, said sub-divisional magistrate R P Singh, who led the team along with district health officer Rajbir Singh Kang and food safety officer Sangeeta. Baked cake was seen covered with scrap newspaper instead of food grade butter paper.
Mohali additional deputy commissioner (DC) Charandev Singh Mann said, "Following the orders of the DC, the team has been asked to conduct surprise checks at sweets shops and units across Mohali."
The team raided three units — two in Sector 82 and one in Industrial Area, Phase IX.
The team found that synthetic chemical colours were suspected to have been used in 'ladoos'. This was found at Goyal Sweets in Sector 82. The teams sealed the samples and colours being used.
R P Singh said, "All these are non-edible industrial colours being used in ladoos. We also observed that sweets were being prepared under unhygienic conditions and cleanliness was not proper. Workers were not wearing gloves although they had covered their heads. In one of the factories, curd kept in utensils was covered with a filthy jute bag cloth and no fly traps were installed."
Kang said, "We also found cockroaches roaming in the dough prepared for baking biscuits, cakes and patties. We have shot videos and taken samples. All such samples will be sent for testing. Further action will be taken once the reports are received." Till then, Kang said, notices have been issued to these manufacturers.
The other unit which was raided was Uttam Sweets in Industrial Area, Phase IX, having its outlets in sectors 34 and 46, Chandigarh. The owner, Balwinder Singh, was also present on the premises during the raid. He said he was ignorant of the fact of not using newspaper for baking cakes and assured to correct the preparation ways.
The more attractive sweet looks, more are the chances of its being prepared with adulterated material. Sources said local traders and sweet makers could use substandard products to make huge profit margins, leaving consumers vulnerable to ailments like vomiting, food poisoning, stomach aches and infections

Health officer Rajbir Kang said industrial colours are used primarily to make sweets look attractive with bright colours. They are toxic and cause internal damage. He also added that dry fruits being used in such factories are not of good quality. "Almonds and pista used to garnish such sweets are of low quality. We found maggots in many such dry fruits during our raids," said Kang.

KFC to train street food vendors in city

Chennai, Oct 4 () KFC will train 500 street food vendors in the city under the 'Clean Street Food' campaign of Food Safety and Standards Authority of India and be the first quick service restaurant to take up the initiative.
"..this initiative is aimed at capability building among the unorganised sector which will disseminate content of FSSAI's Clean Street Food campaign..", a company statement said.
In the first phase, KFC would train about 500 street food vendors in city during the next five months.
"We consider food safety as a shared responsibility among food regulators and industry players. Through this initiative, we hope to contribute to the larger objective of ensuring health, hygiene and safety standards for consumers," KFC IndiaManaging Director, Rahul Shinde said.
"..we are looking at training 500 street vendors in Chennai over the next five months", he said.
Shinde said the company would consider expanding the programme to other States based on the response from Tamil Nadu.
On the initiative taken by KFC, FSSAI CEO Pawan Agarwal said, "I am happy to see several responsible businesses are coming on-board to support FSSAI's larger set of capability building priorities".
The training would focus on key aspects of hygiene, food handling, waste disposal and pest control to help street food vendors adopt food safety practices while serving safe food to consumers.Upon completion of the training, the food vendors would receive a certification of completion of FoSTaC (Food Safety Training and Certification) training, the release added.

Safety, hygiene go off track

Ambala: Ambala Cantonment Railway Station, one of the busiest stations in the region, may never see a stampede-like situation as the one happened on a foot overbridge in Mumbai, which claimed 23 lives, as a very few passengers prefer to use overbridges to reach other platforms. They instead walk across the tracks, putting their lives at risk.
With a footfall of 25,000 passengers and 350 trains passing through it on a daily basis, the Ambala Cantonment Railway Station is also among the top revenue-generating stations across the country.
Importantly, the authorities have been lenient with trespassers or those crossing the railway tracks instead of using overbridges. Dinesh Kumar, divisional railway manager (DRM) of Ambala division, said, "Only a few people use the overbridges. We do not book the violators as no mishap has even happened at the railway station."
Besides the safety factor, the railway station also stands low on several parameters.
Cleanliness, hygiene in a mess
The Ambala Cantonment railway station was placed 73rd out of 75 category A-1 railway stations of the country in a recent survey on cleanliness released by the Union railway ministry. Since the last decade, there have been talks and promises to give the railway station a facelift and help reach "international standards." The then railway minister Mamata Banerjee had announced a facelift for the station in 2009. Even Ambala MP Rattan Lal Kataria repeated the promise ahead of 2014 Lok Sabha elections. However, such promises are yet to be fulfilled, say local residents and passengers.
A woman passenger said, "The toilets are in a terrible condition. It does not seem that these are cleaned at regular intervals. Even sanitary napkins often are found lying outside the overflowing bins." She said her parents had asked her not to use the public loos at the Ambala Cantonment Railway Station it might lead to diseases.

FOOD SAFETY: 7 mobile food testing labs without a single trained technician

Rs 2.4 cr equipment defunct; Govt ignores manpower requirements
Announced as a milestone in food safety arena of Kashmir, the five mobile food testing labs procured at a cost of Rs 1.75 crore are defunct for want of trained technical staff, while food department has put up a “show” using “health department technicians.”
Seven months since five mobile food testing vans were flagged off by Minister of Health and Medical Education Bali Bhagat, no manpower has been hired to run these mobile laboratories meant to ensure safety and improve quality of food items available in the market. Resultantly, in a bid to “show” that the mobile labs are “functional”, the DFCO has “engaged” one technician from health department for the two mobile labs in Kashmir, a source in Drug and Food Control Organisation (DFCO) said.
The source said that DFCO’s attempts to get “anybody and everybody” as “stop gap arrangement” in crucial food testing business was proving detrimental to the entire set-up. “A health department technician has no training and exposure to food safety and standards. He is trained to test sputum and blood samples,” he said adding that the current arrangement was a “mockery of the food safety laws”.
In addition to the five labs procured with Rs 1.75 crore funding allocated by state government in 2016 Budget, J&K has also been provided two additional mobile lab units by Food Safety and Standard Association of India (FSSAI), each costing over Rs 30 lakhs. These two high tech mobile labs are also lying unused due to the unavailability of technicians.
Another official of DFCO, who wished not to be named, expressed anguish over the fact that the department in spite of “acquiring state-of-art equipment for the labs”, as well as mobile labs, was unable to improve food testing in state.
“What is the use of high-end machines if we have no technicians to run tests on these?” he asked. He said that although the proposal for improving food safety and standards submitted to government had projected manpower requirement; that seemed to have been ignored. “Requirement for manpower was projected alongside the requirement for equipment. But somehow, equipment always gets the priority in acquisitions,” he said.
Another official in the department said that the proposal for manpower creation for the mobile testing labs was submitted to government over six months ago, but the file was gathering dust. “It (manpower creation for mobile labs) should have started the moment tenders were floated for procurement of these labs. But, even now, about one and a half year later, no posts for these labs have been created,” he said.
Currently, of the five vans procured with state government funding, two have been deputed to Kashmir division, two for Jammu division and one for Ladakh. One each of the two mobile labs donated by FSSAI is stationed at Jammu and Srinagar.
The mobile vans, as per FSSAI, are meant to strengthen the country’s food testing infrastructure and “enhance surveillance activities and outreach even in far-flung areas”. The initiative was taken to launch “food safety on wheels.”
Controller DFCO, Lotika Khajuria refused to comment over the lack of trained manpower for these labs and said she was "busy in a meeting."

India's antibiotic use in animals to increase 82% by 2030

A study published in journal Science has ranked India as the fourth largest user of antibiotics in animal feed

The use of antibiotics in animal feed, which is known to contribute to growing antibiotic resistance in the environment, will increase by 82 per cent in India by 2030, a new study published in the journal Science has found.
The report by the non-profit Centre for Disease Dynamics, Economics & policy said that over 130,000 tonnes of antibiotics are used globally, and the figure is projected to cross 200,000 tonnes by 2030. In a decreasing order, China, United States, Brazil, India and Spain have the highest rate for antibiotic usage.
Antibiotic powders and tablets are fed to animals for increasing livestock production and its the nutritional level. Regular use of antibiotics in animal feed promotes growth, giving them higher value, but this practice is contributing to building drug resistance in bacteria and affects the health of the end-consumer.
The authors of the paper, for their research, collected information on the sales of veterinary antimicrobials from government sources and scientific publications from 38 countries. The data was then extrapolated using statistical methods for four categories—poultry farm (all birds, chicken, duck), cattle rearing farms, piggery farm and small ruminates (sheep and goats).
“It was found that penicillins, tetracyclines and quinolones are some of the most widely used antibiotics. The use of this antibiotic was higher in countries with meat-heavy diets,” says Ramanan Laxminarayan, the author of the research.
"India is the fourth largest consumer of antibiotics in animal food production globally and is on an increasingly dangerous path," says Laxminarayan. "The country has a huge unregulated livestock sector that freely uses these drugs which are easily accessible. Two-thirds of poultry farms in Punjab, for example, still use antibiotics for growth promotion. Such farms also reported high levels of multidrug resistant bacteria which can easily escape into the environment. We are losing medically important antibiotics at a very fast pace," he adds.
A similar study by Delhi-based non-profit Centre for Science and Environment (CSE) research in Uttar Pradesh, Rajasthan, Haryana and Punjab found that the extensive use of antibiotic supplements in the animal feed, and untreated litter has given rise to the growth of drug resistant bacteria. It said that antimicrobial resistant bacteria are spreading out of the farms because of poor hygiene practices and improper waste management.
A United Nations general assembly meeting in September 2015 set an agenda to reduce the use of antibiotics in animal feed. The CDDEP study suggest three interventions to reduce antibiotic use: limiting sale of antibiotics in countries, reducing meat consumption per person per day, and imposing user fee of up to 50 per cent on the purchase of antibiotics, which will also generate revenues, as per the report.

FSSAI to test sports supplements in labs

Sports nutrition manufacturers, who flout WADA's anti-doping rules, will be prosecuted under the food safety law as Food Safety and Standard Authority of India (FSSAI) has taken the onus of testing food supplements in the country.
In a first, the agency that has been testing all food products other than sports nutrition so far, will be testing sports supplements in their labs to curb any involvement of banned substances in them.
FSSAI has also signed a memorandum of understanding (MoU) with National Anti-Doping Agency (NADA), to curb the availability of contaminated nutritional food in Indian market.
"There are many substances that are prohibited by the WADA, but around 10-15 substances are commonly found in sports nutrition available to the athletes. Our aim would be to test the supplements either randomly or by enforcement. If found guilty, the manufacturer will be prosecuted under the food safety laws that are present in the country," said FSSAI CEO Pawan Agarwal.
Agarwal said since the procedure will be new to his office, FSSAI will seek NADA lab personnel's help.
"We have been testing food products since many years, but testing sports nutrition is a new thing for us. Our lab technicians are undergoing a training to learn more about this field and we will also seek NADA technicians' help to test the products," he added.
Athletes who have doubts over the standard of a particular product can go send the product to FSSAI labs and get it tested, which wasn't possible earlier. "We have five labs in the country and anybody who wants to get a product tested can send it to any of these five labs," he added.
Director General of NADA, Navin Agarwal said the tie-up will help athletes in making the right choice. "Earlier athletes used to get confused about their choice of health supplements or sports nutrition. They now can be sure of the authenticity of the product and form a choice," the NADA chief said.

Admn yet to check vendors using newspapers to serve food

Indore: Despite an advisory from the Food Safety and Standard Authority of India (FSSAI), local authorities are yet to ensure a ban on the use of newspapers to pack and serve food — a practice usually adopted by small street vendors — since it is a health hazard.
Manish Swami, the food safety officer in the Food and Drug Department said, "The administration has been conducting regular searches at food outlets to check if they comply by FSSAI norms. However a special drive is needed to raise awareness among people and penalties will be levied to discourage the practice."
He added that vendors found resorting to the practice will be fined up to Rs 25,000. For restaurants, hotels and other big players of the food industry, the penalty can be increased up to Rs 2 lakh.
"We plan to start a special drive to create awareness and enforce FSSAI's directives by adopting various measures," Swami said.
Since Indore is now officially the cleanest city, Indore Municipal Corporation (IMC) has enforced a complete ban on sale of drinking water in plastic sachets since the packaging material is of substandard quality and accumulates into huge amounts of garbage.
"As newspapers are cheaper than disposable plates, roadside vendors prefer to use it to pack and serve food items to save money. Residents' participation is also needed to ban the practice," IMC food safety officer Lakhan Chasane told TOI.
FSSAI's instructions comes after it was found that people's health was being affected due to the consumption of food items laced with newspaper ink. The advisory read that older people, teenagers, children and people with compromised vital organs and immune systems are at a greater risk of acquiring cancer-related health complications if they consume food packed in newspapers.
"Newspapers used to pack, serve or absorb excess oil from fried food is also a common practice in many homes," the nutrition consultant, Anita Joshi told TOI.
According to FSSAI, printing ink may contain bioactive material, harmful colours, pigments, binders, additives, preservatives, chemical contaminants and even pathogenic microorganisms that may pose potential risks to human health.

Answer: The kind of material used in making newspapers combined with different chemicals from the ink leave toxic components on foods, thus making it very harmful for health, especially for people with low immunity.

Answer: It can damage the digestive system, lead to defective births, disturb the growth of the foetus and adversely impact the unborn child's IQ level. Pregnant women need to take extra care and avoid using newspapers to wrap and serve food.
Q: What are alternates to this practice?
Answer: To absorb oil from fried food, one should use kitchen tissue paper instead of newspaper. Avoid drinking hot beverages in thin plastic cups. Carry containers to get something from a restaurant and use butter paper to wrap cut fruits.
Q: How can the health department ensure a ban on this practice?
Answer: To spread public awareness, we will have to work on a plan with the authorities.

As an alternative to newspapers, vendors can use aluminum foil and paper/thermocol bowls but due to its cost effective nature, roadside vendors prefer the first.
"An 18-metre pack of aluminum foil costs around Rs 100 and a bundle of 50 pieces of paper/thermocol bowls is Rs 20/40 while it costs hardly Rs 10 to buy that amount of old newspapers. To pocket some money, roadside vendors use newspapers," a roadside street vendor, Ganesh Vishwakarma told TOI.
He added that customers never complain about this practice but if vendors increase the price of food items as to use aluminum foil or paper/thermocol bowls, he may lose business.


Some roadside vendors claimed they never receive any instructions from the food department regarding a ban on the use of newspapers to pack/serve the foods.

Two fined for ‘substandard’food items

Panaji: Durgaprasad Kukalkar, owner of Decent Fast Food, Sakhali, and vendor Iam Bahadur B K have been fined Rs 25,000 each by district magistrate North Goa Nila Mohanan for allegedly selling substandard chicken pakodas. Both have been directed to pay the penalty within 30 days of the date of order.
"Samples of the chicken pakodas show presence of synthetic colour which is not permitted as per Section 3.1.2.6 of the Food Safety and Standards (Food Products and Standards and Food Additives) Regulation, 2011," the district magistrate stated in her order. Failure to pay the penalty will necessitate action as deemed fit under the Food Safety and Standards Act, 2006, Rules 2011 and Regulations 2011, Mohanan said.

Activists decry ‘inhumane’ chicken-rearing practices

PUNE: Highlighting the cruel practices adopted in chicken production, Animal Equality, a Pune-based animal protection organization, has said that the practices violate the most basic animal welfare and food safety standards.
Animal Equality studied several chicken farms in Maharashtra, Delhi and Haryana between December 2016 and June 2017, and recently published the findings. The study covered the entire chicken production cycle — right from the day chicks are hatched, till the meat is processed.
Amruta Ubale, the executive director of Animal Equality, said, "Day-old chicks are roughly handled, stuffed into boxes and their beaks are mutilated with hot blades without anaesthesia. Their journey to the farms lasts hours, and sometimes days. All this without food or water. The weaker chicks are discarded, and left to die a slow agonizing death."
Hens are also put through "forced molting."
"Though this practice is illegal as per the Prevention of Cruelty to Animals Act, 1960, and the orders of the Animal Welfare Board of India (AWBI), it is practised. It deprives egg-laying hens of food to stimulate additional cycles of egg production. Food could be withheld for up to 14 days, and they are also deprived of water for 1-2 days," she said.
According to the report, many chicks and hens fall ill and die of starvation, others die of heart attacks or respiratory infections. "Once they reach their maximum weight, they are crammed into transport trucks in large numbers. They are sent on rigorous journeys without food or water. At the meat market, their throats are slit and hens are thrown into drain bins, where they languish in pain for several minutes before they die," said Ubale.
The Prevention of Cruelty to Animals (Slaughter House) Rules, 2001, states that animals have to be stunned before slaughter. However, this is never practised.
