No ‘Ash Content’ in Maggi, Says Nestle India

FMCG major Nestle India, which is facing a penalty over alleged "ash content" in Maggi, said the company does not use it while manufacturing the popular noodles.
"We strongly reiterate that at no stage of the manufacturing process, is ash added to Maggi noodles," Nestle India spokesperson said in a statement.
The development comes after the district administration of Shahjahanpur in Uttar Pradesh slapped fine on Nestle India and its distributors after Maggi allegedly failed to pass the lab test.
The district administration imposed a fine of Rs 45 lakh on Nestle, Rs 15 lakh on three distributors and Rs 11 lakh on two sellers.
While we have not yet received the order passed by the Adjudication Officer, we understand from the information available that the relevant samples are of the year 2015 and the issue pertains to ‘Ash content’
The company said Maggi noodles are compliant with the new rules laid by food safety regulator Food Safety and Standards Authority of India (FSSAI) for instant noodles, pasta and seasoning.
It is a case of applying standards basis an old advisory issued in 2015. Maggi noodles is fully compliant with the standards set by FSSAI. Maggi noodles have always been safe for consumption and will continue to be.
Maggi was banned by FSSAI in June 2015 for allegedly containing lead beyond permissible limits, forcing Nestle India to withdraw the product from the market.
Even in 2015, the Maggi trouble for Nestle had begun in Uttar Pradesh.
Following legal battles, the popular noodles brand was back in the market in November 2015.

SHAHJAHANPUR: The court of additional district magistrate in Shahjahanpur has imposed a total fine of Rs 62 lakh on consumer goods giant Nestle and its distributors and sellers after a laboratory report confirmed presence of ash content higher than the permissible limit in samples of Maggi noodles.
Seven samples were collected and sent for testing at a laboratory in Lucknow in 2015 and the report was received in 2016, following which seven cases were lodged at the ADM's court. Of the total fine, the court has levied Rs 45 lakh on Nestle India, Rs 15 lakh on distributors and Rs 2 lakh each on two sellers. The court order comes after alleged excessive lead content in Maggi created a major controversy in 2015, and the popular noodles brand was banned for five months in the country.
However, a Nestle India spokesperson told TOI, "We strongly reiterate that Maggi noodles are 100% safe for consumption. While we have not received the orders passed by the adjudication officer, we have been informed that the samples are of 2015 and the issue pertains to 'ash content' in Noodles. This appears to be a case of application of incorrect standards, and we will file an appeal urgently once we receive the order. In 2015, Nestle India and other companies had represented to the relevant authorities, via industry associations, to set standards specific to instant noodles to avoid confusion amongst enforcement officers and consumers. The standards have since been introduced and the product complies with these standards. We regret the confusion it may cause to consumers."
The food safety department had collected seven samples of Maggi noodles and pasta in 2015 and the samples were sent to Uttar Pradesh Food Safety and Drug Administration (FSDA), Lucknow, which got them tested at its food analysis lab. The lab test reports found ash content in excess to what was printed on the label of samples of Maggi Masala noodles, Maggi Nutrilicious Pazzta and Maggi Attanoodles. The lab test report was submitted in the court of ADM.

The sample of Maggi Masala noodles from the shop of one Rinku Gupta had 2.54% of ash content, excluding salt in the Tastemaker. Ash percentage of 2.60% was found in the tastemaker of Maggi Atta noodles and Maggi Pazzta samples were found to have ash percentage of 1.2. Four samples of Maggi Masala, two samples of Maggi Pazzta and a sample of Maggi Atta noodles failed the lab test.
"Ash content in Maggi samples exceeded the prescribed limit of 1%. Maggi is consumed mostly by children and playing with the health of people by providing sub-standard products is something that cannot be pardoned under any circumstances," said ADM JK Sharma while levying the fines.

The Uttar Pradesh government has slapped a fine of Rs 45 lakh on Nestle India after its instant noodle brand Maggi failed lab tests which the company disputed saying it is a case of application of incorrect standards. The investor community ignored the latest controversy surrounding Nestle India as its shares ended the day with a gain of more than Rs 5 a share at Rs 7,501.65 on BSE.
In June 2015 Maggi was banned by food safety regulator FSSAI for six months for allegedly containing lead and monosodium glutamate beyond permissible limits. Nestle India had to recall 38,000 tonnes of the noodles from the market. The MSG is used as a flavour enhancer. In 2015, Nestle India and other companies had represented to the Food Safety and Standards Authority of India to set standards specific to instant noodles to avoid confusion among enforcement officers and consumers.
According to a PTI report, the district administration of Shahjahanpur has imposed a fine of Rs 45 lakh on Nestle while another Rs 15 lakh has been slapped on three distributors and Rs 11 lakh on two sellers of Maggi. District authorities had collected the samples last year in November and sent them for lab test. Now, it has been alleged that the sample had ash content above the permissible limits for human consumption. Nestle India said it would file an appeal on receiving the order.
“We strongly reiterate that Maggi noodles are 100 per cent safe for consumption. We have not received the orders passed by the adjudication officer. This appears to be a case of application of incorrect standards, and we will file an appeal urgently once we receive the order,” said a company spokesman.
“We regret the confusion it may cause to consumers,” the Nestle spokesman said.

Food Safety Tribunals Virtually ‘Non-Functional’: POS Write To High Court

“Notwithstanding multiple directions of the court, a lot is required to be done by the concerned department to make the Tribunals functional.”
Srinagar—The J&K High Court on Wednesday took strong note of lack of facilities at food safety tribunals, both at Jammu and Srinagar, and asked government to make available all the paraphernalia for their proper functioning.
The direction by the court followed perusal of a letter by the Presiding Officers of food safety tribunals, Ashok Kumar Koul (Jammu) and Mohammad Yousuf Akhoon (Srinagar), that the tribunals were virtually non-functional. 
“Notwithstanding multiple directions of the court, a lot is required to be done by the concerned department to make the Tribunals functional,” the presiding officers said.
Though computers and a photocopier have been installed in the Tribunals but there is no one to use the Hardware, they said.
“An orderly and a senior assistant have been deputed to the tribunal at Jammu as an interim arrangement but it is not known as to why the sanctioned posts have not been filled so far.” 
They said the government deputed senior Assistant but is not in a position to take dictation nor does he have the knowhow of typing or any administrative skill. “Almost same is the position at Srinagar also. Health and Medical Education department may be content with what they have done so far in compliance of the directions of court but the fact is that (it) has to do much more to ensure that the working of the Tribunals is smooth and hassle free,” they said.
The Registrar(s) of the Tribunal is an officer who has very important functions to discharge and his duties and powers have been defined in Rule3.3.3 of Food Safety and Standards Rules 2011 but the post (s) is/are yet to be filled. They said that their belief, the post (s) was even yet to be sanctioned.
“The process of recruitment of staff of the Tribunals, which is yet to start, may take months together and till then some alternate arrangement is required to be made.”
The Presiding Officer of the tribunal at Srinagar assumed the charge more than six months before but the Tribunal is virtually nonfunctional due to deficiency of staff and infrastructure. “So the ground situation in both the Tribunals is almost identical so far as basic requirements are concerned.”
Health and Medical Education department, they said, appears to be moving at a slow pace to fulfil its statutory obligations in making the tribunals functional. “Though the department is eager to do the needful, the action is yet to be translated into a reality,” they said.
They said that while rules in unambiguously provides that the Presiding Officers of the Tribunal shall be entitled to Staff cars but same have not been provided so far, they said.
“Besides, there are so many issues which the department needs to look in to qua the functioning of the Tribunals at Jammu and Srinagar. A committed introspection is required on the part of the Officers at the helm of affairs so that corrections, where ever needed are made at the earliest in tune with the directions given by Court from time to time,” they said and underlined need for appointing a nodal officer to be nominated by the department for some time to be fastened with the responsibility of looking in to the deficiencies in the infrastructure etc of the tribunals.
“No serious step has been taken by the department so far to seek the transfer of the cases from where ever same are pending to the Appellate Tribunals at Jammu and Srinagar,” they added. 
After perusal of the application, the division bench of the court took serious note of “casual approach” of government and directed it to inform as to what steps have been taken for providing all facilities to presiding officer by next date of hearing in the public interest litigation.
Else, the court directed that commissioner health & medical education department shall remain present on next date of hearing on December 14.
The court also observed that pure food was basic fundamental right to everyone and “the government is making mockery of all this.”

Court fines Rs 40,000 to two microbrewery staffers

A local court has fined a general manager and a brew master of a microbrewery Rs 40,000 for running the business and selling food articles without a licence from Food Safety and Standards Authority of India (FSSAI).
The matter dates back to February 6, 2016, when on the complaint of food safety officer Bharat Kanojia, brewmaster of Brew Estate Manmohan Singh and general manager Narinder Kumar were challaned under Sections 26 (2) (iii), 31(1) of the Food Safety and Standards Act 2006.
It was stated that the food and safety department conducted inspection of Brew Estate, Sector 26, on February 6, 2016, and found it selling food articles like dal, rice, chapati, pasta and pizza without FSSAI licence.
The defence counsel argued that the case had been falsely foisted upon the accused as no raid had taken place. It was also argued that there was exemption from obtaining licence for running food business till August 4, 2016, and the accused had already applied for one with the appropriate authority.
The court order stated, "The convicts are to undergo imprisonment till rising of the court and pay fine of 20,000 each for the offence punishable under Section 63 of the act."

Food Safety and Standards Authority of India urges systematic recall of food products

 
NEW DELHI: The Food Safety and Standards Authority of India (FSSAI) has issued a set of guidelines regarding the recall of unsafe food products from the market, in a bid to ensure that a proper system is in place.
Reports suggest that the food safety regulator stated that the guidelines have been issued to help food business operators frame a proper recall plan and implement them when the situation demands.
Further, the regulatory body has also called for greater scrutiny of food products, so as to avoid frequent situations of recall of their products.
According to FSSAI, food recalls are essential to remove or correct marketed food products and their labelling that violate the laws administered by the regulatory authority, as the circulation of such products can cause health hazards to those that consume it. 
The recovered product, the chamber claims, must be stored in an area which is separated from any other food product. Companies must also maintain records of the amount of recovered product and the batch codes of the product recovered.

FSSAI issues detailed guidelines on recall of food products

Delhi, Nov 28 Food safety regulator FSSAI today asked companies to put in place a proper plan to recall food products from markets if found unsafe and also inform the authority about the same.
The Food Safety and Standards Authority of India (FSSAI) today issued detailed guidelines on recall of food products and said that the purpose is to help food business operators (FBOs) frame a proper recall plan and implement them when the situation demand.
"At the time of recall being carried out, the FBO shall submit their detailed recall plan to the CEO, FSSAI," the regulator said.
According to FSSAI, food recalls are an appropriate method for removing or correcting marketed food products and their labelling that violate the laws administered by the regulatory authority.
Recall can be defined as an action to remove food products from market at any stage of the food chain, including that possessed by consumer, which may pose a threat to the public health or food that violate the Act, or the rules or regulations made thereunder.
As per the guidelines, FSSAI as outlined FBOs to follow 10 steps to carry out entire recall exercise.
The key steps are that FBOs need to set up a recall management team, inform the regulator, identify all products to be recalled, detain and segregate products to be recalled which are in the company's control besides verifying the effectiveness of the recall.
"The recovered product must be stored in an area which is separated from any other food product. Accurate records are to be kept of the amount of recovered product and the batch codes of the product recovered," the FSSAI said.
After recovery, products may be corrected or reprocessed before release to the market if it is fit for human consumption.
"Otherwise the product is to be destroyed. The action to be taken on the recalled product should be approved by the competent Authority," it added.
FSSAI further said the companies, which have produced unsafe products, should take steps so that the need for such recalls do not arise again in future.

The Food Safety and Standards Authority of India (FSSAI) on Tuesday released guidelines for food companies to implement and develop food recall plans and said the primary responsibility of implementing any recall lies with the food companies. It also said if the recall is related to serious defects in the manufacturing process, FSSAI could also review the licence of the food company.
Earlier this year, the food safety regulator had notified a comprehensive regulation for food recall.
Elaborating on its role in the event of a food recall initiated by a company, it said the Authority’s role is to monitor the recall, publicise the recall to inform consumers if required, and make sure the recalled products are destroyed or suitably improved. Stating that the primary responsibility of implementing food recall lies with food companies, FSSAI said they should ensure compliance with recall procedures at various stages, which includes follow-up checks to ensure that the recall is successful and subsequent batches are safe for consumption.
Stating that the purpose of the guidelines is to give an overview on how to develop and implement a recall plan, FSSAI said food companies would need to follow a 10-step plan. This includes assembling a recall management team, giving detailed information on products being recalled to the regulator, informing consumers and others stakeholders within the food chain, distribution chain among others.
The guidelines also state that food companies need to ensure they give regular status updates on the implementation of the recall plans to the FSSAI at least weekly.

Maggi makers Nestle, distributors fined Rs.62 lakh in U.P.

Nestle India was forced to withdraw Maggi from the market and stop production in June after the Food Safety and Standards Authority of India banned the instant noodle brand saying it was ‘unsafe and hazardous’ for consumption.
It “appears to be a case of application of incorrect standards,” says Nestle India spokesperson.
Multinational giant Nestle is under the scanner once again as it has been fined ₹45 lakh after samples of its product Maggi tested as “sub-standard” in a district of Uttar Pradesh.
Apart from the ₹45 lakh fine imposed on Nestle, the Shahjahanpur administration has also imposed a fine of ₹17 lakh on the six distributors of the company, making the total ₹62 lakh.
Shahjahanpur Additional District Magistrate Jitendra Kumar Sharma confirmed the administration's decision to The Hindu. “In total there were seven cases. The samples tested by the Food and Safety department of the district were found to be sub-standard,” Mr. Sharma said.
Responding to the fine, a Nestle India spokesperson said it “appears to be a case of application of incorrect standards.”
The company will file an appeal once it receives the order from the U.P. administration.

Fast food chains should avoid antibiotics in chicken

Director General of Health Services (DGHS) Jagdish Prasad has called for small and big fast food chains in India to stop using antibiotics in chicken and other food products.
Prasad also called for strong guidelines for the fast food chains in India so that the burning issue of health hazards by antimicrobial resistance (AMR) can be tackled.
"All big and small companies should take the initiative against using antibiotics. There is a need for deadline for small and big fast food chains. In US, there is a restriction to big companies such as McDonalds against using antibiotics," said Prasad, while interacting with reporters.
Antimicrobial resistance (AMR) is the ability of a microbe to resist the effects of medication previously used to treat them. The term includes the more specific "antibiotic resistance", which applies only to bacteria becoming resistant to antibiotics.
As part of the government's initiative to tackle AMR, the Health Ministry on November 20 has called for suggestions and observations from all the stakeholders for the amendment to Food Safety and Standards Regulation, 2011.
This notification contains maximum permissible limits of various antibiotics in meat and meat products including chicken.
According to Food Safety Security Authority of India, maximum permissible limits of 37 antibiotics and 67 other veterinary drugs are prescribed for chicken.

Lifestyle diseases up due to pollution,unhealthy food choices:

New Delhi, Nov 27 (PTI) Lifestyle or non-communicable diseases are on the rise in India due to pollution and unhealthy food choices, experts said today.
Delhi is much more polluted today than it was in the 1990s, Sunita Narain of the Centre of Science and Environment (CSE) said at a panel discussion.
The panel discussion was organised at an event to release a report on Body Burden: Lifestyle Diseases".
The panel of doctors, including renowned cardiologist Naresh Trehan, outlined the repercussions of polluting environment and rise in non-communicable or lifestyle diseases in the country.
Trehan laid emphasis on more contribution from the civil society to force the governments to take steps to bring down pollution levels.
"Civil society never really woke up. Nobody raise voice collectively to make the governments take steps to prevent air pollution," he said referring to the recent smog in Delhi.
He also suggested for simple, short-term solutions that can be adopted by people to help fight pollution.
Pawan Agarwal, chief executive officer of the Food Safety and Standards Authority of India (FSSAI), detailed initiatives and measures taken by the body to make food healthier for the people.
"Businesses are now recognising that they have to produce healthy food," he said, referring to the campaign and initiatives of the FSSAI.
"We are now eating less healthier food than we were eating 15 years ago," he said and added that the authority was working on a standard book on heavy metal content of food that will be released soon.
Dr Sanjeev Bagai highlighted the toxins present in air that also pollute soil and water and enter our food chain.
The urban poor are the "worst affected" due to diabetes because of lack of healthy food, said Dr Ambrish Mithal, head of Endocrinology and Diabetes division at Medanta Hospital.
He said that changing eating behaviour is the biggest challenge as far as controlling diabetes is concerned and it should begin from the childhood.
Trehan suggested for regular yoga, along with healthy food and light weight exercise, to develop muscle mass in the body to stay fit in the long run.

Fruit juices, cereals, cereal-based foods, bakery products will soon have fortification standards

NEW DELHI: Fruit juices, cereals, cereal-based foods and bakery products will soon have standards for fortification. Safe foods will have a logo of declaration set by national food regulator, Food Safety and Standards Authority of India (FSSAI), CII National Committee on Nutrition chairperson Vinita Bali told ET. 
The committee, which includes large packaged food companies like Kraft Heinz, Britannia, ITC, Kellogg, Cargill and GSK Consumer, is working with FSSAI to set the standards, Bali, formerly managing director at biscuits maker Britannia, said. “We are looking to strengthen regulatory monitoring to ensure quality and safety of fortified foods and promote a national logo for easy recognition of safe foods,” she said. Bali added that standards are being set for consumer staples including salt, oil and milk.
“We intend to create an enabling environment by issuing fortification standards for multiple foods.” The logo for easy recognition of ‘safe’ foods could be yellow, similar to the existing red and green logos to identify vegetarian and non-vegetarian packaged foods. 
“We are focusing on fortifying staples like wheat flour, milk, rice and oil. This will be followed by packaged food,” said FSSAI chief executive Pawan Kumar Agarwal. FSSAI also plans to work with packaged foods companies on advertising campaigns to increase consumer awareness about fortification, he added “Big players have come on board despite fortification not being mandatory in India. This is unique as most countries had to make it compulsory,” he said. Companies come forward when there is a competitive advantage in doing something. In such a case, there will be competitive disadvantage in not working towards fortification, he added. 
FSSAI has been driving large-scale fortification of consumer staple foods such as wheat flour, rice, milk, oil and salt to combat widespread malnutrition in the country. 
Packaged foods makers across the world are working to supplement foods with healthier ingredients, not only under directives from governments but also to compete in categories with multiple players. Over the last one year, Nestle, PepsiCo and Cargill have announced global initiatives to package their foods such as noodles, seasoning, salty snacks and edible oils with nutrients such as iron, grain and vitamins.

Food poisoning is caused by a myriad of bacteria and viruses. They can take anywhere from 6 hours to five days to cause a reaction. In reality, not all food poisoning causes diarrhea and vomiting. It sometimes manifests itself as a fever first, followed by headaches and joint pain, eye irritation and painful urination before any abdominal issues crop up. These symptoms are different from one individual to another, so don’t rule food poisoning out even though diarrhea and nausea aren’t present.
The cleanliness of your home cooked food depends very much on your handling of the raw ingredients and how they’ve been stored and cooked. It’s definitely not true that you can only catch a bug from eating out. In fact, choosing hygienic and well-regulated eateries won’t get you stomach flu anytime soon.
This well-known misconception can be dangerous, as vegetarians and vegans can get food poisoning too. In fact, about a quarter of all food poisoning cases are caused by fruits and vegetables, especially when they’re eaten raw like in a salad.

  • Avoid eating food from cans that are bloated or dented as this is a sign that there’s gas being released by the abundance of organisms within.
  • Don’t leave meats sitting outside the refrigerator too long as this encourages the growth of microorganisms. Additionally, repeated freezing and defrosting is a bad idea as this accelerates microbial growth. You should take out only the portion of frozen meat you want and defrost it
  • only once.
  • Raw foods like uncooked meats should not be allowed to touch ready to eat foods and they should be kept separate.
  • When eating out, choose hygienic places with a good cleanliness rating from the local authorities.
  • Make sure you reheat leftovers in the fridge thoroughly, especially in a microwave before consuming them. Pay attention to signs of decay and awful smells.
  • Drink pasteurized milk that has been heated to kill germs before being sold.
  • Use a temperature to ensure that meats are cooked through. They should be between 68⁰C to 74⁰C to ensure all germs are killed.
  • Eggs should always be cooked through, but if you’re using raw eggs in a recipe, make sure they come from a regulated source and have not gone past their expiry date.
It’s always good to be careful and take the necessary precautions to avoid being down and out from food poisoning. These steps will help protect your family and loved ones too. Remember that good food safety is partly your own responsibility and effort.

Companies begin fortifying Milk with Vitamin A, D to combat deficiencies

Milk producers were asked to include the micronutrients by the FSSAI, India’s top food regulator

Milk suppliers in India have begun fortifying their product with Vitamin A and D after the country’s food regulator laid down new guidelines to combat common their deficiencies.
Around 70-90% of Indians are estimated to have insufficient or deficient levels of Vitamins A and D, studies have shown, prompting the Food Safety and Standards Authority of India (FSSAI) to ask milk producers to add 770 IU of Vitamin A and 550 IU of Vitamin D per litre of milk.
“Fortification of milk can act as a complementary strategy and help reduce the gap and can act as a vehicle to carry Vitamin A and Vitamin D,” said Pawan Aggarwal, CEO-FSSAI.
The additions are being made across all range of milk sold: skimmed milk, double toned milk, toned milk and standard.
“The fortification will help provide 15-30% of the daily requirement for these vitamins. National-level consultations were conducted to make the industry aware of the standards and were requested to take up the fortification of milk for public good.”
India is today the largest producer of milk at approximately 160 million metric tons per annum.
The per capita availability of milk is approximately 357 ml.
Milk is a complete food and is a good carrier of Vitamin A and Vitamin D.
But, due to the processing needs and the current insufficiency/ deficiency in the population, not enough of these vitamins are delivered through food.
Many of FSSAI’s development partners have taken the initiative forward.
“Like TATA Trusts have supported the states of Jharkhand and Assam to start the fortification of their milk variants. Mother Dairy took the initiative to fortify its complete range and today sells about 25 lac liters per day (LLPD) of fortified milk,” he said.
“Today, including Mother Dairy, 5 more states and a couple of private dairies are already fortifying milk, totalling to 10% of the total 410 LLPD fortifiable milk in the country. Another 5 states are in advance stages to launch the fortified milk in next 2 months which will take the total fortified milk to 20% of the 410 LLPD. With this the fortified milk will reach about 50 million people in the country.”
The plan is to fortify about 50% of the country’s milk by 2019 and 80% by 2021.
“The landscape analysis of the private dairies is being done by Tata Trusts and very soon the campaign will start to include them in this initiative,” Agarwal said.
“Fortification is a complementary strategy to build the nation and provide nutrition security to the population of the country.”

Cap on antibiotic use in milk, egg & animal food

An official said the levels of antibiotic resistance in India has already risen to life-threatening levels in case of patients affected by tuberculosis and urinary.
New Delhi : If the antibiotics don’t work on you falling ill, blame it on milk, eggs, chicken and other food stuff of animal origin. The Government has woken up only now to the menace of growing anti-antibiotic resistance in human beings because of all these products.
The Food Safety and Standards Authority of India (FSSAI) early this week issued a draft gazette notification fixing tolerance limit of antibiotics and pharmacologically active substances in food stuff of the animal origin, inviting comments from the stakeholders within 30 days.
How soon FSSAI is able to enforce this notification is anybody’s guess as it does not have the staff to actually put the limits into practice to save us from the antibiotic resistance phenomenon rising every day.
It acted swiftly on the alarm bells rung by the Delhi-based Centre for Science and Environment (CSE) on how the global fast-food chains like McDonald’s and KFC care hoots to the antibiotic misuse in the Chicken they use even while they have complied with eliminating the antibiotics in the countries like US, Russia, the Europe, Australia and even Brazil.
The CSE did not ask for banning the use of antibiotics, but a stop to their misuse and this is exactly FSSAI is now trying to enforce by capping the maximum level of drugs that can be used for growth promotion of the animals, chickens and fish.
An official of the Health Ministry, under which FSSAI operates, explained that antibiotics and pharmacologically active substances are required for disease control while their residue may appear in milk and food from animals unless controlled and their consumption by humans may develop antibiotic resistance much faster than the pace of new drug developments.
Noting that internationally use of antibiotics and pharmacologically active substances in food stuff of animal origin, including fish and fisheries products, is prohibited, the gazette notification says: “There is ample evidence of development of antibiotic resistance in human pathogen, if these substances continue to come through food.
The FSSAI decided to act on the CSE report that highlighted how chickens are given antibiotic-laced feed to speed up their growth so that they produce meat in a shorter number of days, ready for slaughter in a fewer number of days. The CSE reported rampant misuse of the antiboitics in large quantity in both chicken and fish farming that has brought the life-threatening problem of antibiotic resistance among humans.

நோய் பரப்பும் இறைச்சிக் கூடம்... களத்தில் இறங்கிய ஜூ.வி!

அதிரடி ஆக்‌ஷன் ரிப்போர்ட்
அசைவப் பிரியரா நீங்கள்... ஒரு நிமிஷம்! சென்னை மக்களுக்கு 90 சதவிகித இறைச்சியை அளிக்கும் மாநகராட்சி இறைச்சிக் கூடத்தின் மோசமான சூழ்நிலையைப் பாருங்கள். இங்கிருந்து வரும் இறைச்சிதான் பெரும்பாலான கிச்சன்களுக்குப் போகிறது. 
துர்நாற்றம் படிந்துகிடக்கும் இந்த இடத்துக்குள் மூக்கைப் பிடித்துக்கொண்டு நுழைந்தோம். நுழைவாயில் அருகே சாக்கடையில் கால்நடைகளின் ரத்தக்கழிவுகள் வழிந்தோடின. அருகிலிருக்கும் பஸ் ஸ்டாப்பில் காத்திருந்தவர்களும் கைக்குட்டையை மூக்கில் கட்டியபடியே நின்றிருந்தனர். அங்கும் ரத்தம் தேங்கிக்கிடந்தது. உள்ளே வெட்டப்பட்ட மாடுகளின் தலைகள் குவியலாகக் கிடந்தன. மாட்டின் தோலை விரித்து அதில் இறைச்சியைப் பரப்பி விற்பனை செய்துகொண்டிருந்தனர். 
‘ஆட்டுத்தொட்டி’ என அழைக்கப்படும் இந்த இடம், திரு.வி.க. நகர் தொகுதியில் உள்ள புளியந்தோப்பில் செயல்பட்டுவருகிறது. 1903-ம் ஆண்டு பிரிட்டிஷ் ஆட்சிக்காலத்தில் அமைக்கப் பட்ட ஆட்டுத்தொட்டி, இப்போது ஒட்டுமொத்த வடசென்னைக்கும் தொற்றுநோயைப் பரப்பும் கூடமாகிவிட்டது. அந்தப் பகுதியின் குடியிருப்புவாசிகள், ஜூ.வி. அலுவலகத்துக்கு வந்து புகார் செய்தனர். “கெட்டுப்போன இறைச்சிகளைக் குவியல் குவியலாகப் போட்டு ஒரே துர்நாற்றம் வீசுகிறது’’ எனத் தாங்கள் தினம்தினம் அனுபவித்து வரும் அவஸ்தைகளை வேதனையுடன் சொன்னார்கள்.
சென்னை மாநகராட்சியின் கட்டுப்பாட்டில் செயல்படும் இந்த ஆட்டுத்தொட்டியில் தினமும் 3,500 ஆடுகளும் (ஞாயிறுகளில் 8,000 வரை), 150 மாடுகளும் இறைச்சிக்காக வெட்டப்படுகின்றன. இவை, மருத்துவ சீலுடன் இறைச்சி வியாபாரிகளுக்கு விற்கப்படுகின்றன. மூவாயிரம் பேருக்குமேல் தினமும் இங்கு வந்துபோகிறார்கள். தொழிலாளர் களின் எண்ணிக்கை மூவாயிரத்துக்கும் மேல்! மழைக்காலத்தில் முழங்கால் அளவுக்குத் தண்ணீர் தேங்கியதால் ஓரிரு நாள்கள் இறைச்சி வெட்டுவதைத் தள்ளிவைத்தார்கள். மழைக்குப் பிறகு ஏற்பட்ட சகதி அள்ளப்படாமல் கிடந்தது. 
நாம் வந்த தகவலறிந்து, தொழிலாளர்கள் திரண்டுவந்து தங்கள் நிலையைச் சொன்னார்கள். சென்னை ஆடு இறைச்சி மொத்த வியாபாரிகள் சங்கப் பொருளாளர் ஸ்ரீராமுலு மற்றும் கோவிந்தராஜ் உள்ளிட்டோர், ஆடுகள் அடைக்கப்பட்டிருந்த கொட்டிலைக் காட்டினார்கள். ‘‘திறந்தவெளியில் ஆடுகள் அடைக்கப்பட்டிருக்கும் கொட்டிலையில் மழைக்காலத்தில் சகதியில் சிக்கி, தினமும் பத்து ஆடுகள் வரை இறந்துபோகின்றன. ஆடுகள் குடிக்கத் தண்ணீர் வசதிகூட இல்லை. பாதுகாப்பான கொட்டகை அமைத்துத் தரும்படி, பல வருடங்களாகக் கேட்டுக் கொண்டிருக்கிறோம்” என்றனர். 
சென்னை மாட்டிறைச்சி வியாபாரிகள் சங்க நிர்வாகிகள் சம்பத், அபோய் ஆகியோர் மாடு வெட்டும் இடங்களுக்கு அழைத்துச் சென்றனர். ‘‘மாடுகள் சில சமயங்களில் தொழிலாளர்களை முட்டித் தள்ளிவிடுகின்றன. படுகாயம் அடையும் தொழிலாளர்களை, உடனடியாக சிகிச்சைக்கு அழைத்துப்போக முடியவில்லை. ரிக்‌ஷா தொழிலாளர்கள், இறைச்சி விற்கும் பெண்கள், லாரி மற்றும் வேன் டிரைவர்கள், கிளீனர்கள், இறைச்சி வியாபாரிகள் எனப் பலரும் அதிகாலையில் இங்கே குவிகிறார்கள். அவர்களுக்குக் குடிக்கத் தண்ணீரோ, கழிப்பிட வசதியோ இல்லை. ஆட்டுத்தொட்டியைச் சுற்றிலும் முறையான கழிவுநீர் வாய்க்கால் வசதி இல்லாததுதான், இங்கு நிலவும் சுகாதாரச் சீர்கேட்டுக்குக் காரணம்’’ என்றனர்
ஆட்டுத்தொட்டியை சுற்றி வந்தபோதே, தொகுதி எம்.எல்.ஏ தாயகம் கவியுடன் தொடர்புகொண்டோம். ‘‘அருகில்தான் இருக்கிறேன். நேரில் வருகிறேன்’’ என்றார். சில நிமிடங்களில் வந்துசேர்ந்தார். அப்போது நேரம் காலை 9.30. மாட்டுக்கறி விற்றுக்கொண்டிருந்த ஜானகி என்கிற பெண்மணி, ‘‘அய்யா... இங்க பாருங்க, எப்படி ஈ மொய்க்குதுன்னு! போன வாரம் எலிக்காய்ச்சல் வந்து, படாதபாடு பட்டேன். நாங்க கடைபோட இங்கேயே இடம் ஒதுக்கித் தாருங்கள்’’ என்றார். 
‘‘ஒரு மாதம் முன்பு நான் அதிகாரிகளுடன் இங்கே வந்தேனே. அதன்பிறகு ஏதாவது சரிசெய்தார்களா?’’ எனத் தொழிலாளர்களிடம் கேட்டார் தாயகம் கவி. ‘‘எதுவுமே நடக்கவில்லை’’ எனத் தொழிலாளர்கள் சொல்ல... எம்.எல்.ஏ முகத்தில் கோபம் கொப்பளித்தது. மாடுகளை வெட்டும் கூடத்துக்கு முதலில் சென்றார். மேற்கூரை ஓடுகள் உடைந்து மிகவும் மோசமாக இருந்தது. நம் பக்கம் திரும்பி, ‘‘மாநகராட்சி அதிகாரிகளை நேரில் வரவழைத்து, ‘இடியும் நிலையில் உள்ள இந்தக் கட்டடத்தை உடனே இடித்துவிடுங்கள். இல்லாவிட்டால் தொழிலாளர்களுக்கு ஆபத்து’ எனச் சொன்னேன். ஒரு மாதம் ஆகியும் இடிக்கவில்லை. தொழிலாளர்கள் ஓய்வெடுக்க, அருகில் உள்ள ஓர் அறையை ஒதுக்கித் தரும்படிக் கேட்டேன். அதையும் இதுவரை செய்து தரவில்லை” என்றார். 
‘‘ஆட்டுத்தொட்டியின் ஒரு பகுதியில், பயோ கேஸ் முறையில் இறைச்சிக் கழிவுகளைச் சுத்திகரித்து, தண்ணீரை அருகில் உள்ள மாநகராட்சி பூங்காக்களுக்கு அனுப்பும் திட்டம் எப்படி நடக்கிறது?” என்று கேட்டபடி, அதைப் பார்வையிடச் சென்றார். அங்கிருந்த ஊழியர் ஒருவர், ‘‘டிசம்பரில் இது செயல்பட ஆரம்பிக்கும். தொட்டிகள், இணைக்கும் குழாய்கூட ரெடி. அருகில் அறை கட்ட வேண்டியதுதான் பாக்கி’’ என்றார். சுற்றியிருந்தவர்கள், ‘‘இவரு சொல்றதெல்லாம் நடக்காது’’ என்றனர். அந்த ஊழியர் ஏதேதோ சொல்லிச் சமாளித்தார்.
கழிவுநீர்த் தொட்டி அருகே எம்.எல்.ஏ-வை அழைத்துச்சென்ற சங்க நிர்வாகிகள், சுகாதாரச் சீர்கேடுகளைக் காட்டினார்கள். மாநகராட்சி ஊழியரிடம், ‘‘எப்போது சுத்தம் செய்தீர்கள்?’’ எனக் கேட்டார் எம்.எல்.ஏ. அவர் பதில் சொல்வதற்கு முன்பே, ‘‘எட்டு மாதங்கள் கடந்து விட்டன’’ என்றார்கள் தொழிலாளர்கள்.
ஒரு நிமிடம் யோசித்த எம்.எல்.ஏ, அங்கிருந்தவர்களுடன் இணைந்து ஆட்டுத் தொட்டியின் ஒரு பகுதியில் உட்கார்ந்துவிட்டார். ‘‘பலமுறை பொறுமையாகச் சொன்னேன். நீங்கள் கேட்கவில்லை. இன்று ஒரு முடிவு தெரியாமல் நகர மாட்டேன். இங்கிருக்கற கழிவுகளை அகற்றணும். கழிவுநீர்த் தொட்டியை கிளீன் செய்யணும். அதுவரை இங்கேயே தொழிலாளர்களுடன் உட்கார்ந்திருப்பேன்’’ என்றார். உயர் அதிகாரிகளுக்குத் தகவல் போனது. 
ஆட்டுத்தொட்டியில் வேலைபார்க்கும் பெண்கள், ‘‘ஒரு குடம் தண்ணீர்10 ரூபாய்க்கு வாங்குகிறோம்” என ஆரம்பித்து அவலங்களை எம்.எல்.ஏ-விடம் அடுக்கினார்கள். சங்க நிர்வாகிகளோ, ‘‘மூன்று டேங்குகளை எங்கள் செலவில் அமைத்து இரண்டு வருடங்களாச்சு. மெட்ரோ வாட்டரிடம் பலமுறை சொல்லியும், அவற்றில் தண்ணீர் நிரப்புவதில்லை’’ என்றார்கள்.
சம்பந்தப்பட்ட 72-வது வார்டு மெட்ரோ வாட்டர் அதிகாரியை எம்.எல்.ஏ போனில் அழைத்தபோது, ‘‘அது 70-வது வார்டில் வரும்’’ என்றார். 70-வது வார்டு அதிகாரியோ, ‘‘இல்லை. அது 72-வது வார்டுதான்’’ என்றார். குழப்பமான எம்.எல்.ஏ., இருவரையும் நேரில் வருமாறு அழைத்தார். வார்டு எல்லைப் பிரச்னையைத் தீர்க்க முடியாத நிலையில், உயர் அதிகாரியிடம் விஷயத்தைச் சொல்லி, ‘‘ஆட்டுத்தொட்டி டேங்குகளில் தண்ணீர் நிரப்ப நடவடிக்கை எடுங்கள்’’ எனக் கேட்டுக்கொண்டார். 
‘‘2009-ல், அப்போது உள்ளாட்சித் துறை அமைச்சராகத் தளபதி மு.க.ஸ்டாலினும் மேயராக மா.சுப்பிரமணியனும் இருந்தார்கள். அப்போது பழைய ஆட்டுத்தொட்டியை நவீனமயமாக்க அடிக்கல் நாட்டப்பட்டது. 2011-ம் ஆண்டுவரை பணிகள் நடந்தன. அ.தி.மு.க ஆட்சி வந்ததும், மொத்தத் திட்டத்தையும் முடக்கிவிட்டனர். இதுபற்றி சட்டசபையில் பேசியும் இதுவரை நோ ஆக்‌ஷன். இந்த ஆட்டுத்தொட்டியைச் சீரமைக்க என் தொகுதி மேம்பாட்டு நிதியிலிருந்து 50 லட்சம் ரூபாய் ஒதுக்கித் தர ரெடி. என் வேண்டுகோளை மாநகராட்சி ஏற்றுக்கொள்ளுமா?’’ எனக் கேட்டார்.
மாநகராட்சி கமிஷனர் கார்த்திகேயனிடம் கருத்து கேட்க முயன்றோம். முடியவில்லை. அடுத்து, உள்ளாட்சித் துறை அமைச்சர் வேலுமணியைத் தொடர்புகொள்ள முயன்றும் பேச முடியவில்லை. சுகாதாரத் துறை அமைச்சர் விஜயபாஸ்கரிடம் பேச முடிந்தது. ‘‘ஆட்டுத் தொட்டி, மாநகராட்சி நிர்வாகத்தின்கீழ்தான் வருகிறது. எங்கள் துறையின் கீழ் வராது. நான் மாநகராட்சி கமிஷனரிடம் பேசி, சுகாதாரச் சீர்கேடுகளுக்கு உடனே நடவடிக்கை எடுக்கச்சொல்கிறேன்’’ என்றார்.
இதற்கிடையில், ஆட்டுத்தொட்டியில் எம்.எல்.ஏ-வின் உள்ளிருப்புப் போராட்டத்தைக் கேள்விப்பட்ட மாநகராட்சி அதிகாரிகள், சிறிய ரக புல்டோசரையும், கழிவுநீர் அகற்றும் பணியாளர் களுடன் லாரியையும் அனுப்பிவைத்தனர். மின்னல் வேகத்தில் சுத்திகரிப்புப் பணிகள் நடந்தன. மூன்று மணி நேரத்துக்குப் பிறகு, ஆட்டுத்தொட்டியின் ஒரு பகுதியில் இருந்த கழிவுகள் அப்புறப்படுத்தப்பட்டன. 
‘‘மொத்தக் கழிவுகளையும் அகற்ற வேண்டும்’’ எனச் சொல்லிவிட்டு, போராட்டத்தை முடித்துக்கொண்டு எம்.எல்.ஏ புறப்பட்டார். சங்க நிர்வாகிகளும் குடியிருப்புவாசிகளும் நம்மைச் சூழ்ந்துகொண்டு ஜூ.வி-க்கு நன்றி சொன்னார்கள்.

உணவுப் புரட்சியின் மாயவலை..! துரித உணவுகள் வேண்டாமே

துரித உணவுகள்... இவற்றின் பாதிப்புகளிலிருந்து தப்பிக்க, மேலை நாடுகளே இயற்கையான உணவுகளைத் தேடத் தொடங்கிவிட்டன. நாமோ இன்னமும் ஃப்ரைடு ரைஸ், பர்கர், பீட்ஸா... போன்ற துரித உணவுகளின் மாயவலையில் சிக்கிய மான்களாக அவதிப்படுகிறோம். விரைவில் இந்த மாயவலையைக் கிழித்துக்கொண்டு வெளிவராவிட்டால், நோய்களின் கூடாரமாக மாறிவிடும் நமது உடல்.
வரலாற்றுப் பாதை:
துரித உணவுகளின் வரலாற்றுப் பாதையை உற்று கவனித்தால், அவற்றுக்கும் நமது வரலாற்றுக்கும் எந்தத் தொடர்பும் இருக்காது. வேறு சூழலில் வாழும் மக்களின் உணர்வுடனும் வாழ்வுடனும் தொடர்புகொண்டிருக்குமே தவிர, நமது வாழ்வுக்கும் உணர்வுக்கும் அவற்றோடு எந்தச் சம்பந்தமும் இருக்காது. ஆனால், இப்போது இருக்கும் நிலைமையைப் பார்க்கும்போது, சீராக பயணித்துக்கொண்டிருக்கும் நமது உணவு வரலாற்றுப் பாதை, இனி திசைமாறிவிடுமோ என்ற அச்சம் ஏற்படத்தான் செய்கிறது. நமது பாரம்பர்ய வரலாற்றுப் பாதையில் பயணித்து வரும் உணவுகள், நிச்சயமாக நோய்களை உண்டாக்காது. ஆனால், சமீபத்தில் நுழைந்து உணவுப் புரட்சி ஏற்படுத்திக்கொண்டிருக்கும் துரித உணவுகள் உண்டாக்கும் நோய்களோ எண்ணிலடங்காதவை.
வாலிபருக்கு மாரடைப்பு!
சத்துக்கள் நிறைந்த நமது பாரம்பர்ய உணவுகளை அடித்து விரட்டிவிட்டு, துரித உணவுகளைப் பெருமைப்படுத்துகிறோம். `மினி சைஸ் சீஸ் சாண்ட்விச்’, `மீடியம் சைஸ் பர்கர்’, `லார்ஜ் சைஸ் ஃபேமிலி பீட்ஸா’... என சிறுவர்கள் முதல் பெரியவர்கள் வரை சைஸ் வாரியாகப் பிரித்து உண்கிறோம். நோய்களோ குழந்தைகள், பெரியவர்கள் என்று வயது வித்தியாசமெல்லாம் பார்ப்பதில்லை. எழுபது வயது முதியவர் மாரடைப்பால் மரணம் என்பதற்கும், இருபத்தைந்து வயது வாலிபர் மாரடைப்பால் மரணம் என்பதற்கும் எவ்வளவு வித்தியாசம் இருக்கிறது?! தவறான உணவுப் பழக்கத்தால், இளம் வயதினருக்கும் மாரடைப்பு ஏற்படும் அதிர்ச்சியான செய்திகள் நமது செவிகளில் கேட்கத் தொடங்கிவிட்டன. தவறான உணவுப் பட்டியலில், துரித உணவுகள் முக்கிய பங்கு வகிப்பவை.
உடல்பருமன்:
துரித உணவுகள் நமது சுவை உணர்ச்சிகளுக்கு மகிழ்ச்சியூட்ட மட்டும் தயாரிக்கப்படுபவை. உடல்நலத்தை மேம்படுத்தக்கூடிய எந்தவிதமான ஆரோக்கியக் கூறுகளும் அவற்றில் இருப்பதற்கான வாய்ப்புகள் இல்லை. கலோரிகள் நிறைந்த உணவுகளாக இருப்பதால், உடலை விரைவாக பருக்கச் செய்யும் திறன் வாய்ந்தவை. உடல்பருமன் நோய் அதிகரிப்பதற்கு இவை முக்கியப் பங்காற்றுகின்றன. ஒரு முழு பீட்ஸா உட்கொண்டால், உடலில் சேரும் கலோரிகளைக் கரைக்க பல கிலோமீட்டர் தொலைவு வேகமாக ஓடவேண்டியிருக்கும். நாம் முதலில் சில மீட்டர்களாவது தினமும் நடக்கிறோமா என்பதே கேள்விக்குறி. பின் எப்படித் தேவையில்லாமல் அதிகரித்த கலோரிகளை வெளியேற்றுவது. இந்த கலோரிகள், உடலில் கொழுப்பு சேர்மானத்தை அதிகரிக்கச்செய்து, கடுமையான பாதிப்புகளை உண்டாக்கும்.
சர்க்கரைநோய்... ஊட்டசத்துக் குறைபாடு!
அவசரத்துக்கு ரெடிமேடாகக் கிடைக்கும் துரித உணவுகள், அவசர அவசரமாக நோய்களை உண்டாக்கும். இன்சுலின் சுரப்பதில் பாதிப்பை உண்டாக்கி, சர்க்கரைநோயை துரித உணவுகள் உண்டாக்குவதாக அமெரிக்காவின் `National Institutes of Health (NIH)’ வெளியிட்ட ஆராய்ச்சி முடிவு தெரிவிக்கிறது. பத்து வயது சிறுவனுக்குக்கூட இரண்டாம் வகை சர்க்கரைநோய் (Type – 2 Diabetes) வருவதற்கான வாய்ப்புகள் மிகவும் அதிகம். பிள்ளைகள் தொடர்ந்து துரித உணவுகளைச் சாப்பிடும்போது, உடல் வளர்ச்சிக்குத் தேவையான ஊட்டச்சத்துகள் கிடைக்காமல், ஊளைச்சதை மட்டுமே வளரிளம் பருவத்தில் அதிகரிக்கும். உடல் வளர்ச்சிரீதியில் பல செயல்பாடுகள் பாதிக்கப்படும்.

பள்ளிக்குச் செல்ல அடம்பிடிக்கும் குழந்தைகளை சமாதானப்படுத்த, பள்ளிக்குப் போகும் வழியில் பீட்ஸா, பர்கர்களை வாங்கிக் கொடுக்கும் சில பெற்றோர்கள், தங்கள் வழிமுறையை மாற்றிக்கொள்வது நல்லது. நீங்கள் குழந்தைகளைச் சமாதானப்படுத்துகிறீர்கள் என்று நினைத்துக்கொண்டு, அவர்களுக்கு நோய்களை வாங்கிக் கொடுக்கிறீர்கள் என்று அர்த்தம். பெற்றோர்களே தங்கள் பிள்ளைகளுக்கு எதிரி ஆகலாமா? ’இன்னைக்கு ஸ்கூலுக்கு போயிட்டு வா, ஈவினிங் உனக்கு ஒரு பர்கர் வாங்கித் தரேன்’ என்று பர்கர்களை ஊட்டி வளர்த்தால், பர்கர் போன்ற உருண்டையான தோற்றத்தில் உங்கள் குழந்தைகளை விரைவில் பார்க்கலாம். கண்டிப்புடன் இவை போன்ற உணவுகளுக்கு தடை விதிப்பதில் எந்தப் பாரபட்சமும் பெற்றோர்கள் காட்டக் கூடாது.
உப்பு… வெள்ளை சர்க்கரை…
துரித உணவுகளைத் தொடர்ந்து சாப்பிடும்போது, ரத்தக் குழாய்களில் கொழுப்புத் திட்டுக்கள் படிந்து, அவற்றின் சுற்றளவைக் குறுக்கி, குருதி சுற்றோட்டத்தில் பாதிப்புகளை ஏற்படுத்தி, இதய நோய்களை உண்டாக்கும். இதிலிருக்கும் உப்புகள் காரணமாக உயர் ரத்த அழுத்தம் வருவதற்கான சாத்தியங்கள் அதிகம். மருத்துவர் அறிவுறுத்தலின் பேரில் நேரடியாக உப்பின் பயன்பாட்டைக் குறைத்துக்கொள்ளும் நடுவயது உயர் ரத்த அழுத்த நோயாளிகள், மறைமுகமாக உப்புகள் நிறைந்த துரித உணவுகளை அதிகமாகச் சேர்த்துக்கொள்வது அறியாமை. அளவுக்கு அதிகமாக உப்புகளோடு வெள்ளைச் சர்க்கரையும் கலந்த சுவையூட்டும் உணவுகள், மனதுக்கு களிப்பை உண்டாக்கி, ஆரோக்கியத்துக்கு வேட்டுவைத்துவிடும்.
ஹார்மோன்கள் பாதிப்பு!
ஹார்மோன் சமநிலையைத் தகர்த்து, உடலின் செயல்பாடுகளில் பல்வேறு மாறுதல்களை துரித உணவுகள் உண்டாக்கிவிடுகின்றன. இளம் பெண்களுக்கு சினைப்பைக் கட்டிகள் அதிகரிப்பதற்கு மிக முக்கியக் காரணம் ’ஜங் ஃபுட்ஸ்’ எனப்படும் துரித உணவுகள்தாம். எள்ளுருண்டைகளையும், உளுத்தங்களியையும் அதிகமாகச் சாப்பிட்ட முந்தைய தலைமுறைப் பெண்களுக்கு சினைப்பைக் கட்டிகள் என்றால் என்னவென்றே தெரிய வாய்ப்பில்லை.
பள்ளி நிர்வாகம் செய்யும் தவறுகள்...
முறையான உணவியலை கற்றுக்கொடுக்கவேண்டிய பள்ளிகள், தவறான உணவுகளை அறிமுகப்படுத்துகின்றன. சில பள்ளி கேன்டீன்களில் அதிகம் விற்பனையாகும் சிற்றுண்டி பீட்ஸாவாகத்தான் இருக்கிறது. எண்ணெயில் பொரித்த சிப்ஸ் வகையறாக்களும், பாட்டில்களில் அடைக்கப்பட்ட பன்னாட்டு குளிர்பானங்களும், சீஸ் தடவிய பர்கர், பீட்ஸாக்களும் சில பள்ளிகளின் உணவுப் பட்டியலில் தவறாமல் இடம்பெறுகின்றன. அதுவே மறுபுறம், அரசுப் பள்ளிகளில் இருக்கும் சத்துணவு கேன்டீன்களில் கிடைக்கும் கீரைகளும், காய்களும், முட்டைகளுமே எளிமையான சிறந்த தேர்வு.
உணவியல் கற்றுக்கொடுக்கும் பள்ளிகள் தேவை!

எலி கடித்த உணவுகளைச் சாப்பிடலாமா?

‘சாலையோரத்தில் செயல்படும் தள்ளுவண்டி உணவகங்களில் உணவுகள் தரமாக இருக்காது, சுத்தம் இருக்காது என்பது நம் எண்ணம். அதுமாதிரி கடைகளைப் பரிகாசத்தோடு கடந்து செல்வோம். அதேநேரம், ‘கண்ணாடிகளால் வேயப்பட்ட பெரிய பிராண்டட் ஹோட்டல்கள் என்றால், எல்லாம் சுத்தமாக இருக்கும், தரமாக இருக்கும், உணவுகளைப் பாதுகாப்பாக வைத்துப் பரிமாறுவார்கள்’ என்று நாம் நம்புகிறோம். 
கண்ணாடித் தரைகள், அலங்கார விரிப்புகள், துடைத்து வைத்தாற்போல பளபளக்கும் சுவர்கள், பல வண்ணங்களில் ஜொலிக்கும் விளக்குகள் நமக்கு அப்படி ஒரு நம்பிக்கையை ஏற்படுத்தி விடுகின்றன. கொடுப்பதை சாப்பிட்டு, கேட்கிற பணத்தைக் கொடுத்து விட்டு கிளம்பி விடுகிறோம். 
ஆனால் யதார்த்தம் வேறு மாதிரி இருக்கிறது. 
பிரபல செயின் ரெஸ்டாரன்ட் பேக்கரி ஒன்றில், கண்ணாடித் தடுப்புகளுக்குள் வைக்கப்பட்டிருக்கும் இனிப்புகளை எலி ஒன்று சாவகாசமாக சாப்பிட்டுக்கொண்டிருக்கும் வீடியோ, சமூக ஊடகங்களில் பரவி வைரலாகி வருகிறது. மிகவும் பரபரப்பான ஓசூர் பேருந்துநிலையத்தில் உள்ள பிரபலமான அந்த ரெஸ்டாரன்ட்டில்தான் இந்த விபரீதம். அந்த ரெஸ்டாரன்டுக்கு இப்போது நகராட்சி அதிகாரிகள் தற்காலிகமாக சீல் வைத்திருக்கிறார்கள்.
நாளொன்றுக்குப் பலநூறு பேர் வந்து வணிகம் செய்யும் பேக்கரி அது. வீடியோவைப் பார்த்து மக்கள் மிரண்டு போய்விட்டார்கள். பொதுவாக, நாம் உயர்வாகக் கருதும் பல ரெஸ்டாரன்டுகள், பேக்கரிகளில் வெளித்தோற்றத்துக்கும், உள்ளிருக்கும் நிலைக்கும் சற்றும் தொடர்பு இருக்காது. ஒரு பேக்கரியின் நிலை வெளியில் தெரிந்து விட்டது. பல பேக்கரிகளில் தெரியவில்லை என்கிறார்கள் விவரம் அறிந்தவர்கள். 
‘தள்ளுவண்டிக் கடைகள் முதல் பள்ளி, கல்லூரி விடுதிகள், திரையரங்க கேன்டீன்கள், ரெஸ்டாரன்ட்கள் என உணவு சம்பந்தமான தொழில் புரிவோர், கோவில்களில் அன்னதானம் செய்வோர் அனைவரும் உணவுப் பாதுகாப்பு தர நிர்ணய சட்ட உரிமம் மற்றும் பதிவைக் கண்டிப்பாகப் பெற்றிருக்க வேண்டும். தரமற்ற பொருள்களையோ, தடை செய்யப்பட்ட பொருள்களையோ, தேவையற்ற செயற்கை நிறம் பூசப்பட்ட உணவு பொருள்களையோ விற்பனை செய்யக் கூடாது. சுகாதாரமற்ற உணவுப் பொருள்களை விற்பனை செய்வோர்மீது கடும் நடவடிக்கை எடுக்கலாம்’ என்கிறது உணவுப் பாதுகாப்புச் சட்டம். 
இதைக் கண்காணித்து நடைமுறைப்படுத்த மாவட்ட அளவில் உணவுப் பாதுகாப்பு நியமன அலுவலர்கள் இருக்கிறார்கள். ஆனால் முறைப்படி நடவடிக்கை எடுக்கப்படுகிறதா? 
“உணவுப் பாதுகாப்புத் துறை சார்பில் அமைக்கப்பட்ட குழுவினர் தங்கள் பகுதியில் உள்ள பேக்கரி மற்றும் ஸ்டால்களில் திடீர் ஆய்வு செய்வார்கள். இந்த ஆய்வுகளின்போது, உணவுப்பொருள்களில் அனுமதிக்கப்பட்ட அளவைவிட கூடுதலாக வண்ணம் சேர்க்கப்பட்டிருக்கிறதா, தண்ணீர், எண்ணெய், சர்க்கரை உள்பட உணவுத் தயாரிக்கப்பயன்படும் பொருள்கள் தரமானவையாக இருக்கின்றனவா, ஸ்டாக் ரூம் எப்படிப் பராமரிக்கப்படுகிறது, பூச்சிக்கொல்லி மருந்துகள் பயன்படுத்தி பூச்சிகளைக் கட்டுப்பாட்டில் வைத்திருக்கிறார்களா, சைவ, அசைவ உணவுகளைத் தனித்தனியாகப் பயன்படுத்துகிறார்களா என எல்லாவற்றையும் ஆய்வு செய்வார்கள்.
பெரும்பாலும் அசைவ உணவகங்களில் முதல் நாள் மிச்சமான சிக்கன், மட்டனை எடுத்து ஃப்ரிட்ஜ் வைத்து, அடுத்தநாள் பிரியாணியில் சேர்த்துப் பயன்படுத்துகிறார்கள். அதையும் கண்காணிப்போம். 
உணவுப்பொருள்களில் கலப்படம் செய்தாலோ சுகாதார விதிமுறைகளைச் சரிவர கடைபிடிக்காவிட்டாலோ, அந்த உரிமையாளருக்கு நோட்டீஸ் கொடுத்துப் பொருள்கள் பறிமுதல் செய்யப்படும். உணவுப் பாதுகாப்புச் சட்டத்தின் கீழ் நடவடிக்கையும் எடுக்கப்படும். 
காலாவதியான உணவுப் பொருள்களை விற்பனை செய்வது, உணவுப்பொருள்களில் தரம் குறைவு, பராமரிப்புக் குறைபாடு குறித்து 9444042322 என்ற எண்ணில் மக்கள் புகார் தெரிவிக்கலாம்..” என்கிறார் கிருஷ்ணகிரி மாவட்ட உணவுப் பாதுகாப்பு நியமன அலுவலர் பிருந்தா.
வீடுகளிலும் கூட சில நேரங்களில் தேங்காய் போன்ற பொருள்களை எலிகள் கொறித்துப் போட்டுவிடும். சிலர், எலி கொறித்த இடத்தை மட்டும் வெட்டி வீசிவிட்டு மற்ற பகுதியைப் பயன்படுத்துவார்கள். 
“எலி சாப்பிட்ட உணவுப்பொருட்களைச் சாப்பிடலாமா. அதனால் ஏதும் பாதிப்புகள் ஏற்படுமா?” 
பொதுநல மருத்துவர் அருணாச்சலத்திடம் கேட்டோம். 
"எலி சாப்பிட்ட உணவுகளை சாப்பிட்டால் வாந்தி, பேதியில் தொடங்கி, எலிக்காய்ச்சல்(Leptospirosis) வரை பல பிரச்னைகள் ஏற்பட வாய்ப்புண்டு” என்று பீதி கிளப்புகிறார் அவர். 
“எலியின் சிறுநீரில், லெப்டோஸ்பைரா (Leptospira) என்ற பாக்டீரியா இருக்கிறது. இது, எலியின் சிறுநீர் மற்றும் கழிவுகள் மூலமாகவோ அல்லது கடிப்பதன் மூலமாகவோ பரவுகிறது. ஹோட்டல் உணவுகளையோ, பேக்கரி உணவுகளையோ சாப்பிட்டபின் தொடர் காய்ச்சல், தலைவலி, வாந்தி, வயிற்றுவலி, கண் எரிச்சல், உடல் வலி போன்றவை இருந்தால், உடனே மருத்துவரை அணுக வேண்டும். எலிக்காய்ச்சலுக்கு முறையான சிகிச்சை எடுக்காமல் விடும்போது, மஞ்சள் காமாலை, சிறுநீரகப் பாதிப்பு, கணையப் பாதிப்பு, பித்தப்பை பாதிப்பு போன்ற பிரச்னைகள் ஏற்படக்கூடும்” என்கிறார்.

FSSAI to crack down on misuse of terms like 'fresh', 'natural', 'traditional'

The union health ministry has proposed changes in the law to restrict the use of terms such as 'fresh', 'natural', 'original' and 'traditional' in advertisements for food products.
A draft notification has been prepared by the Food Safety and Security Authority of India (FSSAI), which says among other things that the words 'fresh' or 'freshly' may have no other connotation than the immediacy of the action being described.
For instance, the word 'fresh' can be applied to the products that have not been subjected to any process in any manner, except washed, peeled, chilled, trimmed and put through processing necessary for making it safe for consumption, without altering its basic characteristics.
''We are coming out with this draft notification to stop misleading ads and claims. It had been in the pipeline for some time to ensure people are not fooled in the name of natural and fresh food,'' FSSAI chief executive Pawan Agarwal told The Hindustan Times.
''Our aim is to benefit consumers and promote food that is safe for consumption. There should not be any misleading promotions.''
According to the draft, which has been seen by IANS and other media, a food containing additives or subjected to packaging, storing or any other supply chain processes that control freshness shall not be termed 'freshly stored' or freshly packed'.
It also seeks to restrict the use of the word 'natural' to foods derived from a deemed source like a plant, animal, mineral or micro-organism, to which nothing has been added.
"Compound foods shall not themselves be described directly or by implication as natural but such foods may be described as 'made from natural ingredients'. This will also apply to words such as 'real' and 'genuine', when used in place of 'natural' in such a way as to imply similar benefits. Provided however, claims such as 'natural goodness', 'naturally better' and 'nature's way' shall not be used," says the draft proposal, which is now up for suggestions from stakeholders before it is finalised.
The term 'traditional' can only be used to describe a recipe, fundamental formulation or processing method for a product that has existed for a significant period running over generations.
The term 'original' shall only be used to describe a food which is made to a formulation, the origin of which can be traced and that has remained unchanged over time.
The draft that has five schedules mentioning the restrictions also deals with the health claims of the products. According to the draft the claim that a food has certain nutritional or health attributes shall be scientifically substantiated by validated methods of quantifying the ingredient or substance that is the basis for the claim.
"All disclaimers related to a claim shall appear in the same field of vision. No claim or promotion of sale, supply, use and consumption of articles of foods shall be made using FSSAI logo and license number. Advertisements shall also not undermine the importance of healthy lifestyles," the draft says.

Iron fillings limit in tea is hiked

Food commissioners in all states have now been asked to raise the threshold to 250 mg per kg.
According to the Food Safety and Standards Authority of India (FSSAI), the lack of a reliable method of evaluation is one of the major reasons behind this move.
Hyderabad: The threshold for the permissible amount of iron filings in tea has been increased from 150 mg per kg to 250 mg per kg as the testing and analysis of fillings present in small quantities is a difficult, expensive and a time-consuming process. When the threshold was reduced from 250 mg per kg to 150 mg per kg in 2014, it resulted in several legal cases being filed against wholesalers and retailers, but it became difficult for the authorities to ascertain the exact quantity of iron filings present in tea samples, and so the vendors could not be prosecuted. Food commissioners in all states have now been asked to raise the threshold to 250 mg per kg.
According to the Food Safety and Standards Authority of India (FSSAI), the lack of a reliable method of evaluation is one of the major reasons behind this move. A senior food inspector says, “The upper limit needed to be increased because 150 mg per kg was very difficult to evaluate. 250 mg per kg and above of iron filings can be identified in the laboratory. This will help us conduct inspections at tea factories and wholesale merchants, which is important.”
Nutritionist Dr Janaki Srinath says that iron filings become a reason for concern when consumed in large quantities. “We do not strictly recommend iron tablets for everyone. Those who have iron deficiencies are able to absorb iron from their tea. If the tea is made with milk, the absorption of iron is reduced. “Only those who have too much iron in their bodies need to be careful and reduce their intake of tea. They must not consume too much black tea,” she says.

Excess caffeine may damage your health

Drinking more than five espressos worth of caffeine a day may be damaging to health, according to the European Food Safety Authority.
Heart problems, insomnia and panic attacks were all linked to excess caffeine consumption.
The EFSA said many people were consuming more than the safe level as they were unaware of all the different sources of caffeine.
Safe limits for children and pregnant women are much lower.
Caffeine is often a crutch to help us get through the day.
Tea, coffee, energy drinks, soft drinks and chocolate are all common sources of the drug.
The EFSA was tasked with assessing all the evidence to determine safe consumption levels.
Its report says 400mg a day, in healthy adults, has no health consequences.
This is in line with advice in many countries, including the UK, but the EFSA warns many people drink too much.
Around a third of people in Denmark, 17% in the Netherlands and 14% in Germany consume more than 400mg.
An EFSA spokesman told the BBC: "If you have a bar of dark chocolate at 11:00 and espresso with lunch, a tea at 16:00 and vodka-Red Bull in the evening - that's a lot of caffeine over the day."
Cup of filter coffee - 90mg
Standard energy drink - 80mg
Espresso - 80mg
Cup of tea - 50mg
Can of cola - 40mg
Bar of dark chocolate - 25mg
Bar of milk chocolate - 10mg

The main health issues raised were: increased heart rate, higher blood pressure, irregular heartbeat, tremors, nervousness, insomnia and panic attacks.
The limit is 200mg a day in pregnant women due to the impact on the growing foetus.
The report acknowledged there was a limited amount of data on safe levels for children.
The EFSA is recommending 3mg per day for every kilogram the child weighs.
It also found no extra risk as a result of combining caffeine and alcohol.
